1 1/4 lbs chicken tenderloins, trimmed of any fat
1 teaspoon extra virgin olive oil
kosher salt, to taste
freshly cracked black pepper, to taste
12 cups spring greens
2 large vine ripe tomatoes, thickly sliced
1 pint grape tomatoes
1/3 cup apple cider vinegar
1/3 cup red wine vinegar
1/3 cup balsamic vinegar
3 tablespoons fresh orange juice
2 tablespoons Dijon mustard
1 tablespoon honey
2 garlic cloves, finely minced
1 shallot, finely diced
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon celery seed
3 tablespoons extra virgin olive oil
1/3 cup apple cider vinegar
2 large English cucumbers, thickly sliced
1 sweet onion, thickly sliced (Vidalia, Walla Walla, or Maui)
8 ears sweet corn, cut off cob or 2 (10 ounce) packages frozen corn, thawed
1 (4 ounce) jar pimientos, drained
1 cup chow chow relish
1/4 cup apple cider vinegar
3 tablespoons chopped fresh parsley or 1 tablespoon dried parsley
1 teaspoon garlic salt
1 teaspoon black pepper
8 large eggs
4 tablespoons low-fat mayonnaise
1/2 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/8 teaspoon kosher salt
1/8 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • In bowl, stir together corn relish ingredients and mix thoroughly. Refrigerate for at least three hours to marry flavors.
  • Whisk together all of the vinegars, orange juice, Dijon mustard, garlic, onion, salt and black pepper in a large bowl; Add oil in a slow stream, whisking until emulsified. Set aside.
  • In bowl, toss cucumbers and onions with 1/2 cup of the country vinaigrette. Chill for at least one hour.
  • In a saucepan, place eggs, and add cold water to cover. Bring eggs to a rolling boil; immediately cover and remove from heat. Let eggs stand, covered, for 17 minutes.
  • Drain, and place eggs in ice water for 10 minutes before peeling or cool running under continuously running cold water. Peel eggs, pat dry, and cut in half lengthwise. Remove yolks, and place in medium bowl, mashing with a fork to a fine crumble.
  • Add mayonnaise, mustard, lemon juice, salt and pepper to yolks and mix vigorously until well combined. Pipe or spoon filling into halves. Garnish with a sprinkle of paprika. Chill until ready to serve.
  • Season chicken tenderloins with kosher salt and black pepper. Spray nonstick skillet with nonstick spray, add olive oil and heat to medium high. Add seasoned chicken and sear until done turning once (6-8 minutes).
  • When ready to serve, divide prepared salad into 4 large salad plates. Spoon onto each serving plate the following: 1/2 cup cucumber and onion salad, 1/3 cup corn relish, 1/2 cup grape tomatoes, 2 thick slices of vine ripe tomatoes and 2 deviled eggs. Top with hot seared chicken, and serve immediately.

3 cups buttermilk
1/2 cup lemon iced tea
3 eggs
2 teaspoons garlic powder
2 teaspoons onion powder
4 tablespoons hot sauce
Salt and pepper
3 pounds halibut fillet, cut in 1-by-2-inch pieces
3 cups yellow cornmeal (not self-rising)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt
Vegetable oil, for frying
1 cup mayonnaise
3 tablespoons hot sauce
1 teaspoon cayenne pepper
Juice of 1/2 lemon
4 ears corn
3 large heirloom tomatoes (yellow, pink or orange), diced
4 Roma tomatoes, diced
1/2 red onion, diced
1 green bell pepper, diced
1/4 cup chopped fresh parsley
1/4 cup vinegar
1/4 cup vegetable oil
3 teaspoons sugar
1/4 cup lemon tea
Salt and pepper

Steps:

  • For the fish nuggets: Mix the buttermilk, iced tea, eggs, garlic powder, onion powder, hot sauce and some salt and pepper in a large bowl. Add the halibut and toss to coat. Let stand for 45 minutes.
  • Mix together the cornmeal, garlic powder, onion powder and some salt in a large bowl. Toss the fish nuggets in the breading and then fry in 350-degree oil for 3 to 4 minutes, until golden brown and cooked through. Drain on paper towels.
  • For the firecracker sauce: Combine the mayonnaise, hot sauce, cayenne and lemon juice in a bowl and mix together.
  • For the corn-tomato salad: Roast the corn on a grill. Cut off the kernels and let cool.
  • Place the heirloom and Roma tomatoes, red onions, bell peppers and parsley in a bowl. In a separate bowl, whisk together the vinegar, oil, sugar, lemon tea and some salt and pepper. Add the corn to the tomatoes, pour dressing over and toss.
  • Serve the fish nuggets over the corn-tomato salad. Drizzle with firecracker sauce.

I noticed every cracker salad here at RZ called for fresh tomatoes so I figured ... why not ... I'll put in the recipe I was raised on. The other recipes here look good also ... this just happens to be the one I am used to and we dearly love it. It is great as a side-dish with fried chicken, great as an appy stuffed inside little cherry or grape tomatoes, and perfect as a complete lunch when stuffed inside a tomato. Haha ... DH is sitting here now eating it as a dip on top of more saltines. :)

1 sleeve saltine crackers, crushed (leave a bit chunky)
4 tablespoons mayonnaise
6 large eggs, hard-boiled, chopped
1 medium onion, chopped
1 medium bell pepper, chopped (optional ... I love it both ways)
salt and pepper

Steps:

  • Pour tomatoes (including juice) in a large boil. Using your hands, squeeze each tomatoe through your fingers (be careful you don't squirt the juice on you -- I poke each one good with my fingers gently before I commence squeezing) until they look crushed but still chunky. Yes, you can buy already crushed tomatoes but I don't like their texture -- almost like a sauce instead of crushed tomatoes.
  • To the tomatoes, add remaining ingredients and stir. If appears to dry for you, add a LITTLE more mayo.
  • Salt and pepper to taste.
  • Tastes just as great either fresh made or after refrigerated.

1 small bell pepper
1 bunch green onions or 1/2 cup other onion
1/4 lb cracker (any kind)
2 tablespoons mayonnaise or 2 tablespoons Miracle Whip

Steps:

  • Chop first three ingredients and put in mixing bowl. Crush the crackers and add to bowl of veggies.
  • Add Mayonnaise and mix well.
  • You can eat immediately or if you let sit in fridge overnight, the juices from the tomato will turn the crackers slightly pink and when eaten, people think there is shrimp or cheese in it. It is quite delightful as a very colorful and delicious salad.
  • I have even used as an appetizer serving it with celery sticks or even on more crackers.
  • Try it -- you won't believe how good it is!

1/2 c *thrive life freeze dried chopped chicken,
break chicken pieces into smaller sizes
1/16 c thrive life freeze dried onions, chopped,
1/8 c freeze dried celery, chopped
1/4 c thrive life freeze dried red seedless grapes
mayonnaise, water

Steps:

  • 1. Gather all of your ingredients and a small air tight container. If you want to make more this is really handy to line up the containers and fill each container, one at a time.
  • 2. Add each Thrive Life freeze dried ingredient and put into your containers. You can add your own spices of choice. Also, you can add or subtract the freeze dried onion to your taste. The original recipe called for 1/8 cup of onions. Do not add the mayonnaise just yet.
  • 3. To each container, I add the directions to prepare. (I make a note and wrap directions in plastic wrap) and lay on top. This is in case you make some for family members or friends. Put on lid . Store the extras, if you made more, in the cupboard.
  • 4. To prepare: Add 1/4 cold water and stir. Add another (up to) 1/4 cup of water, depending on the consistency you desire. Let sit for 10 minutes to refresh. Stir and check that all is refreshed. Drain extra water if needed and add 2 or 3 tablespoons of mayonnaise to your liking and mix. Spoon on your crackers and eat. (*Thrive Life meats are precooked and then freeze dried)
  • 5. Take for lunch: Just take along 2 or 3 mayonnaise packets, crackers, spoon and a water bottle and of course your container of freeze dried chicken salad.
  • 6. You can substitute the grapes for Thrive Life freeze dried apples. (if you add other ingredients that are not freeze dried, like walnuts, do not put into your container until you are ready to eat.) Note: Your air tight containers will keep in cupboard for a few months. It is simple to make and just eat one at a time.
