This delicious Cracker Pie is a simple pie with simple ingredients and it's easily altered to suit whatever you have on hand.

1 deep dish pie shell
16 saltine crackers (crushed)
15 ounce can fruit cocktail of your choice (well drained)
3 egg whites
1 cup sugar
1/2 cup chopped pecans or walnuts (optional)
1 tsp vanilla
1/2 teaspoon baking powder

Steps:

  • Prick bottom of pie crust several times with a fork. Bake for 10 minutes in a 325 degree oven.
  • While crust is baking, place egg whites in mixing bowl and beat until still peaks form. Add sugar and baking powder and beat again until sugar is well incorporated, about one minute more.
  • Using a large spoon, gently fold in nuts, drained fruit, cracker crumbs, and vanilla until it is all well combined.
  • Pour into baked pie crust. Bake at 325 for 20-25 minutes, or until lightly browned on top. Allow to cool completely before serving.

The Soda Cracker Pie comes from a long line of desperation pies, also known as "make-do pies," that were designed to cope with dwindling supplies and limited ingredients. You know them, you love them: Chess Pie, Southern Buttermilk Pie, Old-Fashioned Shoofly Pie, and Soda Cracker Pie. They first gained popularity during the Depression and World War II, but they've graced our tables ever since. This Soda Cracker Pie is built on a base of whipped egg whites and baking powder. Since this mixture forms the foundation of the pie and will give it much of its height, it's important to whip your egg whites until they reach completely stiff peaks. Then gradually beat in the sugar and fold in the secret ingredients: crushed crackers, nuts (we favor pecans, but you can use any nuts you have on hand), and a splash of vanilla. Who has time to fuss around with a crust? This pie has 12 crushed crackers mixed right into the pie itself. Soda Cracker Pie is a testament to Southerners' resourcefulness, and right now, it really hits the spot.

14 saltine crackers
3/4 c pecan pieces

1 tsp butter or marg.

This is one of two Graham Cracker Pie recipes found in a 1967 edition of "Our Favorite Desserts" from the "Favorites From Home Economics Teacher" cookbook series. This recipe was submitted by Mrs. C. E. Duverney, Elk Rapids High School from Elk Rapids, Michigan. I have not made either of them.

14 graham crackers
7 Tbsp butter, melted
1 c milk
2 eggs, separated
1/2 c sugar
1/4 tsp salt
1 tsp vanilla
1 envelope unflavored gelatin
1 c whipping cream, whipped

Steps:

  • 1. Finely crush the graham crackers. Add the melted butter; mix well. Reserve 4 tablespoons crumbs. Line an 8-inch pie pan with buttered crumbs, pressing into shape. Bake at 350° for 10 minutes. Set aside to cool.
  • 2. Soften gelatin powder in 1/4 cup water. Make a cooked custard of milk, egg yolks, sugar and salt (cook milk, egg yolks, sugar and salt, stirring constantly, until custard will coat the spoon that you are using to stir); add vanilla and softened gelatin. Cool custard.
  • 3. Beat egg whites until stiff. Fold beaten egg whites and whipped cream into cooled custard mixture. Pour into cooled pie crust. Sprinkle top of pie with reserved graham cracker crumbs. Cool several hours before serving.
  • 4. One-fourth cup drained pineapple may be added to custard.
  • 5. NOTE: This is an old recipe, from 1967, when people did not have the concerns about raw eggs that many people have today. You might want to look for a pasturized egg product instead.

My grandmother was a wonderful cook. Even in her "town" house (as opposed to her farm house) she had two kitchens. One on the main floor for day to day cooking, and another in the basement for canning and preserving. After her death, my mother and I were cleaning out the cupboards in the basement kitchen. We found recipe box after recipe box. When my mom found this recipe, she almost did a cartwheel! I looked at the recipe and thought, "ok, this doesn't really sound all that good...." Mom told me, "wait til you try it!!" It's now one of my favorite desserts. The crust is dense and somewhat salty, which perfectly balances the creamy sweetness of the topping.
