RITZ CRACKER COOKIES - NO BAKE - CANDY COATED
I've been making these for years now. Everyone always loves them. They are super easy. I know there are a few other recipes out there for these cookies - most use almond or candy bark... these use the "candy melt wafer discs" from craft stores, candy shops, or Walmart Craft Dept., I also microwave the candy melts instead of using a double boiler. Plus, these candy melts come in many colors to suit your needs - think pink candy melts with pink M&M's for October Breast Cancer Awareness, white on white for Bridal Showers... They are so pretty for the Holidays - you can decorate these with any color sprinkles, candy M&M's, I've even used Hershey's Hugs mini-morsels.. the possibilites are endless, just make to suit your occasion... great with bright sprinkles for birthdays, or pastel M&M's for Easter, etc. - have fun! Also good for bridal or baby shower take-home goodie bags. Note: I always use the MINI M&M over the regular size just not to overpower the cracker flavors... just an FYI...

FANTASTIC GRAHAM CRACKER CANDY BALLS (NO-BAKE)
These are so good, and so easy to make, they don't take more than 15 minutes to make in total, these are extremely addictive, you won't be able to stop eating them lol! You can sub whipping cream for the evaporated milk, I have done this a few times, and it seems to work just fine, also you can use 1/2 cup white sugar and 1/2 cup light brown sugar if desired. Just remember to leave the mixture sit in the pot or bowl for about 10 minutes or longer to allow the mixture to firm up. If desired chill the balls firsty and then coat in melted semi-sweet chocolate...YUMMMMMM!

Steps:
- Crush the candy canes in a food processor. You could also place them in a freezer bag and crush them using a rolling pin if you prefer chunkier pieces.
- Melt the white chocolate chips according to package instructions. I recommend placing chips in a microwave safe bowl and heating for 30 second increments, mixing in between, until smoothly melted. Be cautious of over-melting the chocolate or it will not properly stick to the graham cracker.
- Break your graham crackers in half. Using a fork, dip the graham crackers in your melted chocolate until they are fully covered. Gently tap off the excess chocolate and place on the parchment paper.
- Sprinkle your crushed candy canes over the chocolate covered graham crackers before the chocolate melts. ** Allow chocolate to harden.
