1 (17 1/2 ounce) package frozen puff pastry, thawed
1 cup white sugar
3/8 cup dry breadcrumbs
3 tablespoons ground cinnamon
1 pinch ground nutmeg
1 egg, beaten
4 granny smith apples, peeled, cored and halved
1 cup confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons milk
2/3 cup chopped toasted pecans
2/3 cup packed brown sugar
2/3 cup all-purpose flour
5 tablespoons melted butter

Steps:

  • Preheat oven to 425°F (220°C). Lightly grease a baking sheet.
  • Roll out each sheet of pastry to measure 12x12 inches. Cut into quarters, to make 8 - 6 inch squares.
  • In a small bowl, combine sugar, bread crumbs, cinnamon and nutmeg.
  • Brush a pastry square with beaten egg.
  • Place 1 tablespoon bread crumb mixture in center.
  • Place one apple half, core side down, over bread crumbs.
  • Top with another tablespoon of mixture.
  • Pull up four corners of pastry and pinch sides together to seal seams completely. Repeat with remaining apples.
  • Brush each dumpling with beaten egg.
  • Top with Pecan Streusel.
  • Place in preheated oven for 15 minutes, then reduce heat to 350°F (175°C) and continue baking 25 minutes more, until lightly browned.
  • Drizzle with icing.
  • Let cool completely at room temperature.
  • PECAN STREUSEL: In a small bowl, combine 2/3 cup chopped toasted pecans, 2/3 cup packed brown sugar, 2/3 cup all-purpose flour and 5 tablespoons melted butter. Mix with a fork until mixture resembles moist crumbs. Use as directed in recipe. Make more or less as desired.
  • To make icing, combine confectioners' sugar and vanilla and enough milk to make a drizzling consistency. Drizzle over cooled dumplings. Serve the same day.

2 medium Granny Smith apples
2 tubes (8 ounces each) refrigerated crescent rolls
1 cup sugar
1/3 cup butter, softened
1/2 teaspoon ground cinnamon
3/4 cup Mountain Dew soda
Vanilla ice cream

Steps:

  • Preheat oven to 350°. Peel, core and cut each apple into 8 wedges. Unroll both tubes of crescent dough; separate each into 8 triangles. Wrap a triangle around each wedge. Place in a greased 13x9-in. baking dish., In a bowl, mix sugar, butter and cinnamon until blended; sprinkle over dumplings. Slowly pour soda around the rolls (do not stir)., Bake, uncovered, until golden brown and apples are tender, 35-40 minutes. Serve warm with ice cream.

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

I grew up eating fried apples and then as an adult I discovered Cracker Barrel and their fried apples. This recipe is from another site and is as close as I have seen to Cracker Barrel. The recipe says you can freeze the cooked apples. I have never done this as there is never any left.

2 cups apple juice, plus
1/2 cup apple juice
4 large golden delicious apples, with peel,cut 1/2 inch wedges
3 tablespoons cornstarch
1 teaspoon apple pie spice
4 tablespoons sugar

Steps:

  • In a medium skillet, combine the 2 cups apple juice and sliced apples.
  • Simmer gently until apples are fork tender but not mushy, turning apples frequently.
  • Remove apples from juice using a slotted spoon and place in an oven safe dish.
  • In a blender, combine the remaining 1/2 cup apple juice, cornstarch, apple pie spice and sugar.
  • Blend a few seconds until smooth.
  • Whisk mixture into hot apple juice in skillet and cook, stirring constantly on medium high heat until it bubbles and becomes thickened and smooth.
  • Pour thickened mixture over apples and serve.
