1 ¼ cups warm water
½ cup cracked wheat
1 (.25 ounce) package active dry yeast
⅓ cup warm water (110 degrees F/45 degrees C)
2 tablespoons butter, softened
1 tablespoon salt
2 tablespoons molasses
2 tablespoons honey
1 cup milk
1 cup whole wheat flour
4 cups all-purpose flour

Steps:

  • In a small saucepan, bring water to a boil. Stir in cracked wheat and simmer for 10 minutes; let cool to lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Pour the cracked wheat mixture into a large bowl. Stir in the butter, salt, molasses, honey, milk, yeast mixture, whole wheat flour and 2 cups of the bread flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.
  • When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in a preheated 375 degree oven 30 to 35 minutes, or until the loaves sound hollow when tapped on top and bottom. Cool on racks.

This recipe was in the booklet that came with my bread machine 12 years ago. A delicious bread. Preparation time is hands-on time and does not include the time in the bread machine. Baking time is for if you bake in the oven.

11 ounces water
1 1/2 teaspoons salt
1 1/2 tablespoons butter
2 tablespoons honey
2 1/4 cups bread flour or 2 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1/2 cup cracked wheat (or Red River Cereal)
2 1/4 teaspoons active dry yeast

Steps:

  • Add ingredients to bread bucket in order recommended by the manufacturer.
  • Select desired setting. I use the dough setting on my machine. Press "start".
  • If you used a regular setting, remove the finished bread when it is finished baking.
  • If you used the dough setting, dump the dough onto a floured countertop when the cycle is finished, knead a few times to remove air bubbles, shape into a loaf and place in greased loaf pan. Let rise until doubled or at least somewhat bigger, about 1 hour.
  • Bake for 35 minutes in oven preheated to 400ºF.

'CRACKED WHEAT' BREAD



'Cracked Wheat' Bread image

When I began my career as a cook, I made hearty loaves like these every week. Now that we have so many bakeries producing good breads, I don't really need to bake as often, but I've never gotten bread quite like this grainy loaf in a bakery. Make it on a weekend when you're at home for a while. There's only about 15 minutes of active work, but the bread requires several rises. Although I call it cracked wheat bread, I use bulgur, which makes a lighter, moister bread than cracked wheat.

2 1/2 teaspoons active dry yeast
3 cups lukewarm water
2 tablespoons mild honey
1 tablespoon blackstrap molasses
1 cup medium or coarse bulgur
1 cup all-purpose flour
2 cups whole wheat flour
1/4 cup canola oil
1 scant tablespoon salt
2 cups whole wheat flour, plus additional as necessary for kneading
1 egg, beaten with 2 tablespoons water for egg wash

Steps:

  • In a large bowl, combine the yeast and water, and stir until dissolved. Stir in the honey and molasses. Whisk in the bulgur, then whisk in the flours a cup at a time. Stir or whisk this mixture a hundred times for about two minutes. Scrape down the sides of the bowl with a spatula, cover the bowl tightly with plastic, and leave to rise in a warm spot for one hour until bubbly.
  • Add the oil to the sponge and fold in, using a large spoon or spatula. Add the salt and fold in. Fold in 1 cup of whole wheat flour. Place some of the second cup of flour on your work surface, and scrape the dough onto it. Use a paddle to help fold the dough over to knead until it has absorbed the flour on the work surface. Flour your hands and your work surface, and knead the dough for 10 minutes, adding flour as necessary, until the dough is elastic and springs back when you press it with your finger. It will be dense and slightly tacky. Shape the dough into a ball. Rinse and dry your bowl, and coat with oil. Place the dough in it, then flip it over so that it is coated with oil. Cover the bowl tightly with plastic wrap, and set in a warm spot to rise for 1 hour or until doubled.
  • Punch down the dough again, cover the bowl and allow to rise for another hour.
  • Preheat the oven to 375 degrees. Divide the dough in two and shape into loaves. Oil two 9 x 5-inch bread pans, and place the loaves in the pans, seam side up first, then seam side down. Cover with a damp towel, and allow to rise for 30 minutes or until the middle of the loaves rises above the edges of the pans.
  • Gently brush the loaves with egg wash and, using a sharp knife, cut two or three 1/2-inch deep slashes across the top of each loaf. Bake 50 to 60 minutes, brushing again halfway through with egg wash. The bread is done when it is golden brown and responds to tapping with a hollow sound. Remove from the pans, and cool on a rack.

1-1/2 cups water
6 tablespoons cracked wheat
3/4 cup warm buttermilk (70° to 80°)
3 tablespoons honey
3 tablespoons butter, softened
1-1/2 teaspoons salt
1/4 teaspoon baking soda
1-1/2 cups bread flour
1-1/2 cups whole wheat flour
1 tablespoon active dry yeast

Steps:

  • In a saucepan, bring the water and cracked wheat to a boil; boil for 6 minutes. Drain; cool for 15 minutes. Place all ingredients, including cracked wheat, in bread machine pan in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1-2 tablespoons of warm buttermilk or flour if needed.

This recipe is adapted from The El Molino Cookbook that I've had for a million years!This has the potential to make 3 loaves and is the ONLY recipe I use for whole wheat bread.It is the moistest I've ever had and because honey is a natural preservative it has a longer shelf life. You can add a little more honey and make amazing dinner rolls or cinnamon rolls.The cookbook states "the same natural ingredients but a new improved method that gives a higher, lighter loaf." Yes, this rises 3 times! I use the quick acting yeast and am able to make 9 loaves in a day without stressing out.You can substitute about a cup of the whole wheat flour with a cup of white bread flour but I rarely do.Enjoy!

1 cup warm water (110-115 degrees)
2 (1/4 ounce) packages fast-rising active dry yeast
1 cup milk, scalded and cooled to 110 degrees
1/3 cup honey
1/4 cup oil
2 teaspoons salt
2 eggs
5 1/2-6 cups stone ground whole wheat flour
1/2 cup cracked wheat, softened in 1 c hot water for 1 hour

Steps:

  • In the bowl of your electric mixer (I use a KitchenAid ) dissolve yeast in warm water. Add milk, honey, oil, salt and eggs. Mix until blended.
  • Add 2 1/2 cups of the flour and beat for 3 to 4 minutes. Cover bowl with plastic wrap or a warm towel and allow sponge to rise in a warm place until doubled in bulk, about 30 minutes.
  • Mix in remaining flour reserving 1/2 C for kneading. At this point you may add the softened cracked wheat if desired. This may seem a little stickier than you may be used to but as long as your fingers don't stick in the dough you have the right amount of flour.
  • Turn out onto floured board or counter top or use the dough hook from your mixer. Knead for 8 to 10 minutes until elastic and smooth.
  • Put in a large buttered bowl and let rise in warm place until doubled in bulk.
  • Punch dough down. On lightly floured board or counter top divide into 3 equal portions. Shape into loaves and place in buttered loaf pans approximately 8" X 4".
  • Cover and let rise for the third time until doubled in bulk.
  • Bake at 375 degrees for 30 - 35 minutes. The bread tests done when the crust make a hollow sound when tapped.
  • Remove from pans and brush with melted butter. Cover with a hot damp towel to soften crust if desired.

This bread has no dairy products except the butter; and you can substitute margarine if you want to. You'll love it, my family does!

1 c boiling water
2/3 c cracked wheat or bulgar
1/4 c molasses
3 Tbsp unsalted butter or margarine (i've used salted without a problem)
1 1/2 tsp salt ( a little bit less if you are using salted butter or margarine)
3/4 c water
2 2/3 c bread flour
1 Tbsp gluten
2 1/2 tsp saf yeast or 1 tablespoon of bread machine yeast or 1 pkg of reg. fast acting yeast

Steps:

  • 1. Pour the boiling water over the cracked wheat in a bowl. Add the molasses, butter and salt. Let stand 1 hour at room temperature to soften.
  • 2. Place the ingredients in the pan according to the order in the manufacturer's directions, adding the cracked wheat mixture and the additional water as the liquid ingredients. Set crust on medium and program for the Basic cycle; press Start. (This recipe may be used using the Delay Timer.)
  • 3. When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

2 1/2 cups sourdough starter
2 cups whole wheat flour
3 1/2 cups bread flour
1 egg

Steps:

  • In a medium bowl, place cracked wheat and pour hot water over wheat. Add melted butter, molasses, honey, nonfat milk. flax, and sunflower seeds and mix well. Cool to lukewarm and stir in the sourdough starter. With a large wooden spoon start stirring in the flours, 1 cup at a time, beginning with the whole wheat then the bread flour. When dough is stiff enough to work, turn out onto a floured surface and knead a good 10 to 12 minutes, working in as little of the remaining flour as necessary. When smooth and elastic, shape dough into a ball and put it into a greased bowl, turning to coat all sides. Cover, place in a warm, draft free spot and let rise until doubled in bulk, about 1 1/2 hours. Punch down risen dough and set aside again to rise in a warm spot until doubled, about 1 hour. When the second rising is complete, punch down the dough and shape into two loaves. Place dough in two well greased 9X5 inch loaf pans or form into two round loaves on baking sheet and let rise again until doubled in bulk, about 1 hour. Brush tops with an egg wash made by whisking one tablespoon water into one whole egg until well blended. Bake in preheated 375 degree oven for 30 minutes. After 15 minutes, rotate pans and spray with cold water, continue baking until the loaves test done by the hollow sound made when tapped on the top and bottom or internal temperature of 190 degrees. Cool on racks in the pans for 10 minutes, then turn out onto the racks to cool completely.

¾ cup cracked wheat
1 cup hot water
¼ cup margarine, melted
2 tablespoons molasses
2 tablespoons honey
¾ cup nonfat milk
½ cup flax seed
½ cup raw sunflower seeds
2 ½ cups sourdough starter
2 cups whole wheat flour
3 ½ cups bread flour
1 egg, beaten

Steps:

  • In a medium bowl place cracked wheat and pour hot water, (does not need be boiling), over wheat. Add melted margarine, molasses, honey, nonfat milk, flax seed and sunflower seeds and mix well. Cool to lukewarm and stir in the sourdough starter.

2 tablespoons liquid honey

3/8 cup toasted sunflower seeds

Steps:

  • Put cracked wheat into a small pot with 1 to 2 cups of water.
  • Bring to a boil, reduce heat to medium and boil for 6 minutes.
  • Remove from heat and drain well.
  • Let cool about 15 minutes.
  • Put cooked wheat into bread machine.
  • Add all other ingredients as listed except for the sunflower seeds.
  • If you don't have buttermilk, you can make a substitute by adding 1 tbsp lemon juice to one cup of whole milk.
  • Stir and let sit for 5 minutes.
  • Use amount called for in the recipe.
  • Set bread machine for whole wheat bread.
  • Press start.
  • Add sunflower seeds at'addition' beep.

1 cup hot water
1/4 cup melted margarine
1 egg (this can be left out to make it an egg free product) (optional)
2 tablespoons molasses
2 tablespoons honey
1 1/2 teaspoons salt
3/4 cup nonfat milk
1/2 cup golden flax seed
1/2 cup raw sunflower seeds (optional)
2 1/2 cups proofed sourdough starter
2 1/2 cups whole wheat flour
3 1/2-4 cups white flour

Steps:

  • In a medium bowl place the cracked wheat and pour the hot water over it, let sit.
  • In your mixer place margarine, milk, salt, egg, molasses, honey, flax seeds, and sunflower seeds. Pour in wheat mixture when it reaches lukewarm temperature.
  • Pour in starter and mix well.
  • Starting with wheat flour mix in flour one cup at a time. Mixing well after each addition. You may only need 3-1/2 cups of the white flour.
  • Mix for about 10 minutes to allow the wheat flour to develop.
  • Transfer to a well greased bowl and let rise 1-1/2 hours.
  • Punch down, let rise 1 hours.
  • Divide into three loaves and let rise till doubled.
  • Bake at 350 for about 40-45 minutes, tops will be brown.
  • Thump bottoms of loaves and if they sound hollow they are done.
  • Place on racks to cool.

  • Stir buttermilk, honey, molasses, 1/4 cup butter, wheat germ, flax seed, and bran into the cracked wheat until blended. Mix in whole wheat flour.
  • Mix cracked wheat mixture into the yeast mixture using a spoon or electric mixer. Add all-purpose flour 1 cup at a time, mixing until dough is smooth and elastic.
  • Place dough in a large greased bowl, cover, and let rise until doubled in size, about 1 hour.
  • Punch down dough to release air. Divide dough into 2 equal pieces. Roll out pieces into rectangles to release any air bubbles. Roll up, pinching seams tightly and tucking in sides as you go.
  • Grease two 9x5-inch loaf pans. Place rolls seam side-down in the pans; press down to flatten. Tuck in all sides gently with the top of a finger. Cover and let rise in a warm place until dough rises 1 inch above the rim of the pans, about 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake loaves until golden brown and the bottoms sound hollow when tapped, about 35 minutes. Brush with 2 tablespoons melted butter and turn out onto wire racks to cool. Allow to cool completely before slicing.

This is a slightly sweet, very hearty bread that's great with soup or just by itself. Like many breads, it takes some time the first time, but once you get the hang of it, it's pretty easy. The original recipe says this will make two loaves, I prefer however to make four, small 'personal' loaves which can be frozen for personal use or given as gifts.

2 cups cracked wheat
1 tablespoon salt
1 cup honey
2 tablespoons butter
2 cups boiling water
1 1/2 cups white flour
4 cups whole wheat flour
2 tablespoons dry yeast
water
1 egg
cornmeal

Steps:

  • Boil water (you'll need 2 cups).
  • In a large bowl, mix cracked wheat, salt, honey and butter.
  • Add 2 cups of boiling water to above ingredients; set aside.
  • Mix yeast and 1/2 C warm water. Let rise.
  • When the yeast has risen and the cracked wheat mixture has cooled to room temperature, then combine the two mixtures (yeast and cracked wheat).
  • Stir in 1 1/2 C white flour and 3-4 C whole wheat flour. NOTE: Dough will be stiff, knead in the last cup by hand.
  • Place in greased bowl, cover and let rise until double (about 90 minutes).
  • Grease cookie sheet and sprinkle with cornmeal; set aside.
  • Mix 1 egg and about 2 t water until smooth; set aside.
  • After the dough has risen, shape into two loaves (I prefer four--do what works for you!), place on greased/cornmeal-ed cookie sheet.
  • Paint with egg wash.
  • Make three slashes on the top of each loaf.
  • Let rise until double in size (about 30 minutes to an hour).
  • Bake at 350 degrees F for 30 - 35 minutes until golden.

2 2/3 cups water
1 1/2 cups cracked wheat
1/3 cup honey
1 teaspoon honey
1 teaspoon salt
2 tablespoons oil
2 packages yeast
2 1/2 cups glutinous flour or 2 1/2 cups unbleached flour
3 cups whole wheat flour

Steps:

  • Pour 2 cups boiling water over the cracked wheat. Add the honey reserving 1 teaspoon for later, salt and oil.
  • Cool.
  • Dissolve the yeast in 2/3 cup warm water and add the 1 teaspoon honey.
  • Combine with the cooled cracked wheat mixture. Add the flour and mix thoroughly.
  • Place in a buttered bowl and cover, let rise for 1 hour.
  • Punch down and let rise for another 30 minutes.
  • Punch down and turn out on a floured board.
  • Knead well.
  • Shape into 2 loaves and place in loaf pans.
  • Bake at 350 until golden brown.
  • Check after 30-40 minutes.
  • Check for doneness by tapping on bottom of loaf, if it sounds hollow, it's done. If not, bake for an additional 5-10 minutes.

2 tablespoons margarine, softened
2 tablespoons dry milk powder
2 tablespoons brown sugar
1 1/4 teaspoons salt
3 cups bread flour
1/3 cup whole wheat flour
1/4 cup cracked wheat
1 1/4 teaspoons active dry yeast

Steps:

  • Combine yeast, warm water until it is foamy. Combine all dry ingredients in the kitchen aid mixer with bread hook. Add the yeast mixture and kneed. Let rise under a damp towel in a bowl until doubled. Turn out into a bread pan and let rise a second time. Bake at 350 for 25-30 min. until golden brown. Cool on rack.

41/2-51/2 c all purpose flour
3 c cracked wheat
2 pkg active dry yeast
1/4 c honey or sugar
1 Tbsp salt
3 Tbsp softened butter
2 1/4 c hot tap water
cooking oil or butter

Steps:

  • 1. Combine 2 cups of all purpose flour, undissolved yeast, honey or sugar and salt in a large bowl. Stir well to blend. Add butter and hot tap water.
  • 2. Beat with an electric hand mixer at medium speed for 2 minutes, scraping bowl occasionally.
  • 3. Add 2 cups cracked wheat. Beat with electric mixer at high speed for 1 minute until thick and elastic.
  • 4. Stir in remaining cracked wheat with a wooden spoon. Then gradually stir in just enough of remaining all purpose flour to make a soft dough which leaves the sides of the bowl. Turn out onto floured board.
  • 5. Knead 5 minutes or until dough is elastic. Cover with plastic wrap and then a towel. Let rest 20 minutes on board. Punch down. Divide dough in half. Shape into 2 loaves. Place in greased 8 1/2" x 4 1/2" loaf pans. Brush dough lightly with oil. Cover pans loosely with plastic wrap.
  • 6. Let rise in a warm, draft-free space for 1 hour or until doubled.
  • 7. Bake at 375 degrees for 40-45 minutes or until done. Cover loosely last 5-10 minutes if becoming too brown.
  • 8. Remove from pan immediately. Brush top crust with melted butter

this recipe is to be used w/bread machine
1 c boiling water
2/3 c cracked wheat or bulgur
1/4 c molasses
3 Tbsp unsalted butter or margarine cut into pieces
2 tsp salt
1 c water
3 1/2 c bread flour
1/2 c whole wheat
1 Tbsp plus 1 tsp of wheat gluten
1 Tbsp saf yeast, or 1 tbsp plus 1/2 tsp of bread machine yeast or 1 pkg of active dry yeast

Steps:

  • 1. Pour the boiling water over the cracked wheat in a bowl. Add the molasses, butter, and salt. Let stand 1 hour at room temperature to soften.
  • 2. Place the ingredients into the pan according to manufacturers directions, adding the cracked wheat mixture and the additional water as the liquid ingredients. Set crust on medium and program for the Basic Cycle; press Start. (This recipe MAY be used with the Delay Timer).
  • 3. When the baking cycle is ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
