LUMP CRABMEAT AU GRATIN/DIP II



Lump Crabmeat Au Gratin/Dip II image

Pappadeaux's is famous for many delicious dishes, the crab & spinach dip being one of the most popular. Here's my version of that amazing dip. Shrimp or Crawfish can be added or substituted for the crabmeat.

1/2 small onion, chopped fine
2 tsp garlic, minced
1/2 c butter
1 lb lump crabmeat
1 Tbsp all purpose flour
4 oz monterey jack cheese, cubed
4 oz philadelphia cream cheese
3/4 c half & half
1 tsp salt
1/2 tsp white pepper
1/2 tsp cayenne pepper
1 bunch green onions, sliced thin
3/4 - 1 c cheddar or colby jack cheese, shredded
1 - 2 baguettes, diagonally sliced
1 - 2 stick butter, melted
2 tsp powdered or granulated garlic
1 Tbsp dried chopped parsley
finely grated parmigiano reggiano

Steps:

  • 1. Preheat oven 350° F. Microwave onions and garlic in microwave safe bowl with just a little water for about 3 minutes or until onions are translucent. Completely drain the liquid and set aside.
  • 2. Melt butter in skillet over medium heat. Add crabmeat and sauté about 3 minutes being careful not to break up crabmeat. Scoop out crab meat and add to onions. Leave the liquid in the skillet.
  • 3. Reduce heat to low and stir flour into the crab/butter liquid until well blended.
  • 4. Add Monterey Jack cheese and cream cheese; stir until cheeses are completely melted.
  • 5. Increase heat to medium and add Half & Half, salt, pepper & cayenne, stirring continuously until mixture begins to boil. Remove from heat immediately.
  • 6. Fold in onions and crab meat, being careful not to break up crabmeat.
  • 7. Pour into 6 individual buttered Ramekins or into a buttered 9 x 9 shallow casserole dish.
  • 8. Sprinkle top with green onions, then top with shredded cheese. If serving as a dip, make the garlic bread now.
  • 9. Put the bread slices on a baking sheet lined with foil. Combine melted butter and granulated garlic then liberally brush on one side of the baguette slices. Sprinkle lightly with parsley and grated parmesan cheese.
  • 10. Put dip in the oven on lower rack and garlic bread on the top rack. Bake for 10 minutes until cheese is melted and dip is hot and bubbly, and garlic bread is toasted. Enjoy!

1 tablespoon milk

1 teaspoon prepared horseradish

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).

6 tablespoons butter

1 lb white crabmeat (or combo of both) or 1 lb cooked shrimp (or combo of both)

1 dash paprika
salt, if needed

Steps:

  • Place first 4 ingredients in microwavable-safe dish and heat until cream cheese and butter melt, about 5 minutes.

This is a pretty tasty recipe for warm lobster dip. Again, as in title, you could substitute with crabmeat, sea legs, or tiny baby shrimp if you like. I happen to mostly use my leftover lobster tail or claw meat when I make this. I have a great 1 qt. chafing server with a tea light beneath it that I usually prepare this in. Serve with pita chips, crackers, baguette slices, or vegetables. You can make this thicker or thinner depending on the amount of half & half and sour cream you use - prepare as you like

1 1/2 cups lobsters, cooked (cut into small pieces with scissor)
1/2 small onion, chopped
5 garlic cloves, chopped
1 tablespoon olive oil
6 ounces cream cheese, softened
2 tablespoons sour cream
4 tablespoons half-and-half cream
1 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon mayonnaise
1/4 cup grated parmesan cheese
1/2 cup mozzarella cheese, shredded (add more if you like cheesier)
salt & pepper (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Chop onion & garlic and put in microwave safe bowl with the olive oil. Microwave 1 minute then remove and add to a large bowl with all the remaining ingredients.
  • Stir to combine well & add to oven safe baking dish sprayed lightly with cooking spray for easy clean-up (I use Pam Olive Oil Spray).
  • Bake 30 minute covered with foil. Remove foil & bake another 10-15 minute until bubbly.

3/4 c mayonaise
3/4 c sour cream
1/4 c dehydrated onions
1 Tbsp cocktail sauce

  • 1. Cut up and flake the crabmeat.

½ large onion, chopped fine
1 Jalapeno pepper, chopped
1 clove of garlic minced
1 tbsp. olive oil
1 - 8 oz. cream cheese
½ cup sour cream
1 - 10 oz. box spinach, thawed and squeezed dry
½ lb. crab meat(white or claw)
1/3 block of Monterey Jack Cheese with peppers, cubed
1 can artichoke hearts, quartered and drained
Parmesan cheese, grated
Cayenne Pepper, to taste
Cajun Seasoning (Tony Chachere's, etc your choice, to taste)

Steps:

  • On medium to high heat, sauté 1st 4 ingredients in olive oil; lower fire to a simmer and add cream cheese and sour cream; blend until melted; add spinach and crab meat; stir gently for about 10 - 15 minutes. Add Monterey Jack Cheese and cover pot to let cheese melt; fold in artichoke hearts and check seasonings. Once thoroughly heated, transfer to chafing dish and top with Parmesan cheese, serve with crackers/garlic pita chips, etc

1 8oz package cream cheese
1 or 2 tablespoons horseradish sauce (Kraft)

  • Mix all ingredients. Top with almonds. Bake at 350-375 until it bubbles through (20 minutes).
