1 small cabbage, shredded
1 cup thinly sliced bell pepper
1 medium onion, sliced into thin half rings
1 lb imitation crabmeat or 1 lb fresh white crab meat
1/4 cup olive oil
1/4 cup wine vinegar
1/2 teaspoon garlic powder
4 tablespoons mayonnaise
salt
Tabasco sauce or ground cayenne pepper
pepper

Steps:

  • In a large salad bowl, combine cabbage, bell pepper, onions, and crab meat and mix well.
  • In a small bowl, whisk together the olive oil, vinegar, garlic powder, mayonnaise, salt and hot sauce.
  • Pour the dressing over the vegetables and mix until coated.
  • Serve immediately or refrigerate until ready to serve.

6 cups torn romaine
3/4 cup finely chopped onion
1 package (8 ounces) imitation crabmeat, chopped
1/3 cup canola oil
3 tablespoons cider vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 package (3 ounces) chicken ramen noodles
2 tablespoons slivered almonds, toasted
2 tablespoons sesame seeds, toasted

Steps:

  • In a large bowl, combine the coleslaw mix, romaine, onion and crab. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, salt, pepper and contents of seasoning packet from noodles; shake well. , Break noodles into small pieces. Sprinkle noodles, almonds and sesame seeds over salad; mix well. Drizzle with dressing and toss to coat. Serve immediately.

1/2 cup diced celery
1/4 cup chopped onion
2 cups shredded cabbage
1/4 cup rice wine vinegar

1/2 cup sugar
1 tablespoon sesame oil

2 Tablespoons butter
1/2 cup crumbled Gorgonzola cheese
1/2 cup half-and-half, or cream
1/2 cup freshly grated Parmesan cheese, plus more if desired

Steps:

  • Melt the butter in a 1- or 2-quart saucepan over low heat. While it is melting, put the Gorgonzola in a small bowl and mash it with a fork or potato masher, gradually adding the milk. Don't worry about making it smooth, just make sure it is well-combined. When the butter is melted, add the cheese-milk mixture and continue to cook, stirring and mashing occasionally. 2 Mix crabmeat with the sauce in a large, warm bowl; stir in the Parmesan, then taste for salt and add some if necessary. Serve, passing additional Parmesan at the table if you like. 1 1/2 lbs medium shrimp, shells reserved
3 tablespoons olive oil
1/2 cup butter
1 large shallot, minced
3 stalks celery, cut into chunks
1 cup baby carrots
1/4 cup chopped parsley
1/2 teaspoon dried thyme
2 bay leaves
2 slices lemon zest
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper
1/2 sherry wine
3 tablespoons all-purpose flour
1 1/2 cups seafood stock
2 cups heavy cream
2 cups milk
1 cup Hidden Valley® Original Ranch® Dressing
kosher salt
fresh ground pepper, to taste
chives, for garnish

Steps:

  • Heat olive oil in a large pot over medium heat. Add butter and melt. Add the shrimp shells, shallots, celery, carrots, parsley, thyme, bay leaves, lemon zest, tomato paste and cayenne. Cook, stirring every occasionally, until the shells are red and the vegetables are tender, about 10 to 12 minutes.
  • Remove from heat and add sherry. Ignite the sherry with a wand lighter and cook until the flame subsides. Return the pot to the heat, sprinkle in flour and stir. Cook for another 2 minutes. Add seafood stock to deglaze. Stir browned pieces from the bottom of the pot. Add cream, milk, and HIDDEN VALLEY RANCH and bring to a boil. Turn the heat to low and simmer until reduced and thickened, 40 to 45 minutes. Strain into a clean pot and season with salt and pepper. Bring bisque to a simmer.
  • Chop shrimp into small pieces and add to bisque. Cook about 3 minutes until shrimp are done. Taste for seasoning and garnish with HIDDEN VALLEY RANCH DRESSING and chives.

It's quick and easy, you can cook it on the stove top or in a crock pot; make and freeze ahead; and it feeds a crowd, i.e., my family! Even the little ones love it, spinach and all! I like to serve over buttered egg noodles with steamed broccoli on the side.

1 lb ground chicken breast
1 lb ground pork
2 shallots, peeled and diced fine or 1/3 cup shallot
1 garlic clove, minced
1 cup fresh spinach leaves, packed, chopped fine
1 (1 ounce) package Hidden Valley Original Ranch Dressing Mix
1 cup fresh breadcrumb (do NOT use seasoned dry breadcrumbs)
1/2 cup grated parmesan cheese
1/2 teaspoon fresh ground black pepper
1 teaspoon kosher salt
1/2 teaspoon mustard powder
1/8 teaspoon nutmeg
2 eggs, lightly beaten
1/3 cup sour cream
3 tablespoons vegetable oil (for frying)
2 tablespoons butter (melted if using crock pot)
4 tablespoons flour
1 1/2 cups Hidden Valley® Original Ranch® Dressing
2 cups whole milk
1/2 cup sour cream
1/2 teaspoon fresh ground black pepper
1 teaspoon salt
1/8 teaspoon nutmeg
1/3 cup finely chopped scallion, green tops only, plus more for garnish
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350.
  • MEATBALLS:.
  • Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
  • GRAVY:.
  • In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
  • In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
  • Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
  • Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.
