CRAB MELTS
These special open-faced sandwiches from Donna Bennett of Washougal, Washington have wonderful crab and cheese flavor. "This recipe closely resembles a dish my husband and I enjoyed at a favorite restaurant several years ago," Donna writes.

- In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

No! I'm not the crab in the blanket! I have crab filling in a "blanket"! These are delightful to serve at brunches, parties or pot luck dinners. They are very easy to make, but look like you have been slaving.... tee hee! *** you can also make other fillings to make a variety to set out.

- 1. Preheat oven to 325 degrees.
- 2. Beat together the cream cheese, lemon juice, whipping cream, salt, pepper and garlic with an electric mixer on medium speed for 3 minutes until smooth. Add the shredded cheese, chives and nut and mix for 1 minute. Stir in the crab meat. Set aside until needed.
- 3. Cut the crust off of the slices of bread (save the crusts to make bread crumbs for future use). Using a rolling pin, roll out each slice of bread to about 1/8 inch thick.
- 4. Put about 1-1/2 Tablespoons of the crab filling on the diagonal across the bread. Overlap opposite corners of the bread at the center. Use a toothpick to hold in place (if needed).
- 5. Place these on a ungreased baking pan. Brush the tops of these with melted butter.
- 6. Bake for 25 minutes or until light golden brown. *** You may choose to garnish with fresh parsley sprigs (optional). Serve right away.

- On a lightly floured work surface, roll each pastry sheet out into a 12-inch square, then cut into 4-inch squares. Lightly brush lower half of each square with mustard, center a sausage on mustard-coated edge, and brush top inch with egg. Roll sausages in pastry, pressing seams to tightly seal. Brush tops with egg, then sprinkle with poppy seeds or flaky salt. Cut each at an angle into thirds. Freeze pigs in blankets, uncovered, on a parchment-lined baking sheet until firm.
- Preheat oven to 400 degrees. Place frozen pigs in blankets 1 inch apart on parchment-lined baking sheets. Bake until pastry is puffed and golden brown, about 25 minutes. Serve warm with mustards.
