⅔ cup uncooked long grain white rice
1 ⅓ cups water
3 tablespoons vegetable oil
2 medium onions, cut into wedges
3 cloves garlic, chopped
½ tablespoon white sugar
2 teaspoons salt
1 egg, beaten
¼ pound cooked crabmeat
3 green onions, chopped
1 tablespoon chopped cilantro
½ cucumber, sliced
1 lime, sliced

Steps:

  • Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • Heat the oil in a wok over medium heat. Cook and stir the onions and garlic in the hot oil until tender. Mix in the rice, sugar, and salt, and cook 5 minutes, until well blended. Stir in the egg until the rice is coated. Increase heat to high, and mix in the crabmeat, green onions, and cilantro. Continue cooking 2 to 5 minutes, until the crab is heated through. Garnish with the cucumber and lime slices to serve.

Long as I can remember, crab rice was a monthly treat around our house. As I've raised my own family -- sometimes near the water, sometimes not so near -- I've cherished this dish and added a few touches of my own. If there's a picnic or a family gathering, I'll find a way to get some crabs. When I find folks with a dock, it's not long before I'll be asking them if I can set out a crab trap or two. Because as soon as someone tastes ol' Fuskie crab rice, they're likely to be asking me to make it. My kids beg for crab rice all the time, and just like my mother did with us girls, I make them help me pick the crabs. We sit out on the porch or around the kitchen table, spread some newspapers and go to pickin'. The more hands we've got, the sooner we're ready to cook.

1 1/2 cups uncooked rice
2 1/4 cups warm water
Pinch salt
2 strips bacon
1/4 cup vegetable oil
1 stalk celery, chopped
1 medium green bell pepper, chopped
1 medium onion, chopped
1 1/2 to 2 pounds crabmeat (lump or claw)
1 tablespoon garlic powder
Salt and black pepper

Steps:

  • Measure the dry rice; then rinse and drain it several times. Put it the rice, water, and salt in a medium pot. Cover, bring to a boil, and simmer until the rice is done and the water is absorbed, about 20 minutes or more.
  • Fry the bacon until crispy in a 12-inch skillet; when the bacon is done, remove it from the pan, set aside, and crumble when cool. Add the oil to the bacon fat in the skillet and heat. Add the celery, bell pepper, and onion. Stir-fry until the onions are clear; then add the crab and cook until the crab begins to brown, another 5 to 10 minutes. Add the crumbled bacon, cooked rice, and garlic powder, along with salt and pepper to taste, and stir constantly until evenly combined. Cover the mixture and simmer for at least 10 minutes. (If you'd like a meatier mixture, just use more crab and less rice.)

As a young chef just starting out in New York, I had limited time and money. One of my favorite things to do on my rare days off was to Rollerblade down to Chinatown and explore the amazing ingredients in the markets. While I was there, I would usually get a bowl of fried rice, which was warm, comforting, and filling. In those days, I couldn't afford to get it with a luxe ingredient like crab--I added that later on. By including it in a simple bowl of fried rice, I'm reminded how one special ingredient can make an ordinary dish extraordinary.

6 tablespoons olive oil
4 garlic cloves, chopped
One 1/2-inch piece ginger, peeled and minced
2 stalks lemongrass, finely chopped (see Cook's Note)
4 fresh curry leaves (optional; see Cook's Note)
1/2 cup diced Chinese duck sausage or dry Spanish chorizo
2 teaspoons curry powder
2 cups cooked jasmine rice
1/4 cup soy sauce, plus more as needed
2 teaspoons sambal oelek (see Cook's Note)
Pinch of sugar
Kosher salt and freshly ground black pepper
4 large eggs, beaten
6 scallions, cut into 1/2-inch pieces
8 ounces jumbo lump crabmeat, picked over to remove any shell or cartilage
2 tablespoons chopped fresh cilantro
2 limes, quartered
Boston, Bibb, or iceberg lettuce

Steps:

  • Heat the olive oil in a large skillet over medium heat. When it shimmers, add the garlic, ginger, lemongrass, curry leaves, sausage, and curry powder and cook, stirring, for 5 minutes, or until very fragrant.
  • Add the rice to the skillet and stir until all the rice is separated into grains. Cook, stirring occasionally, until the rice is hot, 2 to 3 minutes.
  • Combine the soy sauce, sambal oelek, sugar, and a pinch each of salt and pepper in a small cup, then add it to the rice. Cook, stirring, for another minute.
  • Pour the eggs over the rice and let them sit for about a minute. Stir the eggs into the rice and turn off the heat (you're not making scrambled eggs; you just want the eggs to make the rice creamy).
  • Fold in the scallions and half of the crabmeat. Let sit for another minute. Taste the rice and season it with salt and pepper or more soy sauce.
  • Spoon the rice onto a platter. Scatter the remaining crab and the cilantro over the top and garnish with the lime wedges. Set out a plate of lettuce leaves so you can spoon rice into the leaves, wrap, and enjoy.

2 cups uncooked brown rice
2 green onions, diced, white parts only
1 clove garlic, diced
3 mushrooms, diced
1 large carrot, shredded
½ pound cooked Dungeness crab
1 ½ tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon sesame oil

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • While rice is cooking, heat a skillet over medium heat. Add green onions and garlic and cook for 1 minute. Add mushrooms and cook until softened, 3 to 5 minutes. Add carrots and cook until softened, about 2 minutes more. Add crab and cook until heated through, about 3 minutes more.
  • Mix soy sauce, maple syrup, and sesame oil to the vegetable mixture in the skillet. Add cooked rice and stir to combine.

This is a recipe I found in GULLAH HOME COOKING, THE DAUFUSKIE WAY by Sallie Ann Robinson, foreword by Pat Conroy. Those of you who live in the Low Country of South Carolina know that there is a Dausfuskie Island. Pat Conroy wrote about this island in a book called,"The Water is Wide." It was also made into a movie. This recipe is bascially crab fried rice without the eggs or carrots and peas that you find in some fried rice. I haven't tried it yet, but when I do, I think I'll add the carrots and peas for color and more crab meat,because I like lots of meat. Note: I think that leftover rice will work.

1 (16 ounce) package imitation crabmeat, chopped

¼ cup Worcestershire sauce
1 teaspoon seasoning salt
1 teaspoon salt

Steps:

  • Heat olive oil in a large skillet over medium heat. Add sausage and fry for 5 minutes. Add imitation crab and cook for another 5 minutes.
  • Move imitation crab and sausage mixture to the edges of the pan. Melt margarine in the center of the pan. Add eggs and cook, stirring with a spatula, until eggs are soft scrambled, 3 to 5 minutes.

1 cup crabmeat, shredded
1/4 cup cooking oil
1/4 cup soy sauce
3 eggs, beaten

Peanut oil
4 ounces cream cheese, at room temperature
4 ounces lump crabmeat
1 tablespoon minced chives
1 1/2 teaspoons soy sauce
Freshly ground black pepper
1 large egg, beaten
20 wonton wrappers
2 tablespoons peanut oil
12 ounces extra-large shrimp, peeled and deveined
Kosher salt
2 cloves garlic, minced
1 tablespoon grated ginger
5 scallions, white parts cut into 1-inch lengths, green tops thinly sliced for garnish
3 dried hot chiles
3 cups leftover cooked jasmine rice
1 large egg, beaten
1/2 cup frozen peas, thawed
1/2 cup frozen diced carrots, thawed
1 cup mung bean sprouts
2 tablespoons soy sauce
1 tablespoon toasted sesame oil

Steps:

  • For the crab rangoon: In a wok or large heavy-bottomed pot, heat 2 inches of peanut oil to 375 degrees F.
  • Meanwhile, combine the cream cheese, crabmeat, chives and soy sauce in a medium bowl. Season with black pepper.
  • Place 1/2 tablespoon crab mixture in the center of each wonton wrapper. Brush the edges of the wonton with the beaten egg. Fold in the opposite corners toward each other and pinch to seal tightly over the filling, squeezing out any extra air.
  • Fry the crab rangoon in batches, about 3 to 4 minutes per batch, flipping as necessary with a spider until golden on all sides. Drain on a paper towel-lined baking sheet. Reserve while you make the fried rice.
  • For the fried rice: Lay out all of the prepped mise en place in the order in which you will add the ingredients to the wok. Preheat a wok over high heat.
  • Add 1 tablespoon peanut oil to the wok. Add the shrimp in an even layer and season with salt. Cook, turning once, until just starting to turn pink, about 90 seconds. Reserve to a plate.
  • Add 1 tablespoon peanut oil to the wok. Add the garlic, ginger, scallion whites and dried chiles and stir-fry until aromatic, about 30 seconds. Add the rice and cook for 2 minutes, without disturbing too much so you get a nice crust. Push the rice to the side, leaving an empty space. Add another drizzle of peanut oil if needed. Add the egg, let set for about 30 seconds, then scramble. Toss everything together, then add the peas and carrots. Cook for another minute, then add the reserved shrimp, bean sprouts, soy sauce and sesame oil. Toss for 1 minute. Add the green parts of the scallions.
  • Scoop onto a serving plate and enjoy! Serve with the crab rangoon.

1 pack of Seafood & Eat It White Crab
1 Red Chili, finely sliced
4 Spring Onions, shredded
2 Cloves of Garlic, sliced
1 Lime, zest and juice
2 Tablespoons of Sesame oil
1 Tablespoon of root Ginger
1 Egg, beaten
2 handfuls of Frozen Peas, defrosted
150g of Basmati Rice, roughly chopped
1 Medium Pak Choi, roughly chopped
1 Handful of Basil

Steps:

  • Heat the oil in a wok or frying pan until.
  • Add the chili, spring onion, garlic and ginger and fry until fragrant.
  • Add the rice, peas, egg, crab and pak choi then warm through for 1 or 2 minutes.
  • Remove from the heat and stir through the basil and lime.
  • Spoon immediately into a bowl and garnish with a little basil and spring onion.

12 tablespoons salted butter, divided
¾ teaspoon kosher salt, divided, or to taste
1 cup sliced fresh shiitake mushrooms

3 stalks green onion, white and green parts separated and chopped
1 clove garlic, minced
1 tablespoon soy sauce
3 cups leftover cooked jasmine rice
1 ½ cups lump crabmeat
3 tablespoons chopped fresh chives

Steps:

  • Place egg, 1 tablespoon butter, and 1/4 teaspoon kosher salt in a cold, nonstick skillet. Place over medium-low heat and stir with a silicone spatula. Continue stirring until egg starts to set, then becomes a soft scramble with just a little bit of liquid left. Transfer to a bowl and set aside.
  • Melt 4 tablespoons butter in a wok over high heat. Add mushrooms, 1/2 teaspoon kosher salt, and pepper; saute for 2 minutes. Add white parts of green onions plus garlic; saute until mushrooms are browned, about 2 minutes.
  • Add 4 tablespoons butter plus soy sauce to the wok. Break up the leftover rice and add; stir-fry until rice is warmed through and evenly coated with the sauce, about 3 minutes. Add scrambled egg and green parts of the green onions; toss to mix everything. Taste and season with more salt if needed. Divide onto serving plates.
  • Melt 3 tablespoons butter over low heat in a saucepan. Add crabmeat and toss gently, avoiding breaking up the lumps, until heated through, about 2 minutes. Spoon crabmeat onto each plate and garnish with chives.

1-2 garlic cloves, peeled
large pinch of salt
3 tablespoons oil
1 egg
1 cup cooked jasmine rice
large pinch of ground white pepper
larger pinch of white sugar
2 tablespoons light soy sauce
3 spring (green) onions, cut into 1 cm (1/2 inch) lengths
100g (3 ounces) cooked crabmeat
1 tablespoon coriander leaves

Steps:

  • Mince garlic with salt. Heat oil in a wok and fry garlic until fragrant and beginning to colour. Crack in the egg, allowing the white to firm before scrambling. Add rice and turn down the heat. Fry gently, mixing and tossing. Season with pepper, sugar and light soy sauce: the rice should be well seasoned, but not too salty. Add spring onions and, after a moment, the crabmeat, reserving a little to sprinkle over the finished dish, along with coriander.

This is my guess at the recipe for crab fried rice from one of my favorite restaurants. I have no idea of how they actually make it, but my friend and I really wanted some one night, so we decided to give it a try. We thought it turned out pretty good!

2-3 c cooked rice
8-16 oz lump crab meat
4 slice bacon, cooked (not crispy), cut into pieces
1 bunch asparagus, fresh
8 oz shitake mushrooms, sliced
2 eggs
1/2 c green onion, chopped
sriracha sauce
vegetable oil
1-2 Tbsp butter
cilantro, chopped
lemon slices
4 clove garlic, minced

Steps:

  • 1. Cook your rice according to package directions. I like white rice best for this, but we have also used brown rice and it was still tasty. In a very large frying pan or wok, cook your bacon. The bacon should be just cooked, not crispy, since it will be cooked again when you fry the rice.
  • 2. While the bacon is cooking, trim the asparagus, removing the woody ends. Bring a pot of water to a boil, and blanch the asparagus. This means to cook the asparagus for about 2 minutes, then drain immediately and put the asparagus in a bowl of ice water to stop the cooking process. You'll want to cut the asparagus into bite size pieces, 1-2" long, either before or after you blanch them.
  • 3. Once the bacon is done cooking, pull it out of the pan and cut into pieces, about 1" or so each. Set aside. Keep the bacon drippings. If you don't have very much drippings, add some vegetable oil to the pan and heat it up at this point. You want maybe 3-4 tablespoons of oil. Add the sliced shitake mushrooms, chopped green onions and minced garlic. Cook until tender, maybe 3 or so minutes on high heat. Add the crab, asparagus and the bacon to the pan and stir to combine. Whip the eggs and add to the pan, stirring quickly to spread throughout the dish.
  • 4. Add the rice and keep stirring to combine and cook evenly. Finally, add the sriracha sauce to taste, and stir to combine. Lastly, chop the butter into small pieces and add to the rice to gloss the dish. Serve immediately, garnish with cilantro and lemon slices.
