Herbed Crab Cakes With Green Goddess Dressing image

Number Of Ingredients 20

1 sleeve saltine crackers (about 40 crackers)
2 large egg yolks
¼ cup mayonnaise
2 tablespoons Dijon mustard
2 teaspoons grated lemon zest plus 2 Tbsp. fresh juice (from 1 lemon)
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh cilantro
1 tablespoon finely chopped fresh tarragon
¼ teaspoon black pepper
1 pound fresh lump crabmeat, drained and picked over
¾ cup mayonnaise
½ cup packed fresh cilantro (tender stems and leaves)
¼ cup loosely packed fresh tarragon leaves
½ teaspoon grated lemon zest plus 3 Tbsp. fresh juice (from 1 lemon)
1 small garlic clove, grated
1 teaspoon kosher salt
⅛ teaspoon black pepper
¼ cup canola oil
1 (5-oz.) pkg. spring mix salad greens
Lemon wedges

Steps:

  • Prepare the Crab Cakes: Process saltines in a food processor until consistency of fine crumbs, about 1 minute. Stir together egg yolks, mayonnaise, mustard, lemon zest and juice, chives, cilantro, tarragon, and pepper in a large bowl until combined. Gently stir in crabmeat and 1 cup saltine crumbs. (Reserve remaining crumbs for another use.) Let stand 10 minutes.
  • Shape crab mixture evenly into 8 (3-inch) patties (about ½ cup each). Arrange on a baking sheet lined with parchment paper. Cover; chill at least 1 hour or up to 12 hours.
  • Meanwhile, prepare the Green Goddess Dressing: Process mayonnaise, cilantro, tarragon, lemon zest and juice, garlic, salt, and pepper in a blender until smooth, about 30 seconds. Cover and refrigerate until ready to serve or up to 24 hours.
  • Heat oil in a large skillet over medium-high. Working in batches, add Crab Cakes to skillet. Cook until browned on both sides, about 5 minutes per batch, flipping once halfway through cook time.
  • Top salad greens with Crab Cakes. Drizzle with Green Goddess Dressing, and serve with lemon wedges.

1 pound lump crab meat*
1/2 cup bell pepper ((yellow, red, or a little of both), chopped)
2 large eggs (, separated)
2 teaspoons Old Bay Seasonings
2 Tablespoons mayonnaise
1 clove garlic (, minced)
1 Tablespoon fresh cilantro (, chopped)
salt and freshly ground black pepper (, to taste)
1/4 cup cornstarch
1 Tablespoon olive oil
Panko bread crumbs
1 cup mayonnaise
2 Tablespoons chives (, finely chopped)
2 cloves garlic (, minced)
2 teaspoons fresh lime juice
1 teaspoon chipotle chili powder
salt and freshly ground black pepper

Steps:

  • Make chipotle mayo crab cakes sauce by combining the ingredients until smooth. Refrigerate, covered, until ready to serve. (This can be made several days in advance).
  • In a mixing bowl add the crab meat, bell peppers, one beaten egg, Old Bay seasoning, mayo, garlic, cilantro and salt and pepper. Gently stir just until blended.
  • Refrigerate for at least one hour, or up to 5 hours.
  • Beat the remaining egg and add to a shallow dish. Add the panko bread crumbs to another dish.
  • Spoon about 1/3 cup of the mixture into your palm and flatten into a small disc, about 3 inches in diameter.
  • Sprinkle the outsides of the crab cake patties with a tiny bit of cornstarch.
  • Dip each patty lightly in the beaten egg, and then coat them lightly with panko bread crumbs. I try to avoid doing a thick coating of crumbs because I like the crab flavor to shine through as much as possible.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the crab cakes and cook for about 3-4 minutes on one side, until golden brown on bottom.
  • Gently flip to the other side and cook for another 3 minutes, or until golden. Remove to a plate. Serve warm with chipotle mayo sauce for dipping.

1 cup dried breadcrumbs
1 cup mayonnaise, store-bought or homemade
2 large eggs
1 red bell pepper, stem, seeds, and ribs removed, cut into 1/8-inch dice
1 yellow bell pepper, stem, seeds, and ribs removed, cut into 1/8-inch dice
1/2 cup fresh cilantro leaves, chopped
4 scallions, chopped
Coarse salt and freshly ground black pepper
Vegetable oil, for frying
Cilantro-Lime Mayonnaise

Steps:

  • Preheat oven to 250 degrees. In a large bowl, combine crabmeat, breadcrumbs, mayonnaise, eggs, peppers, cilantro, and scallions; mix well. Season with salt and pepper. Shape mixture into twenty-four 2-inch-round patties.
  • Heat 1/2-inch of oil in a large skillet over medium high heat until hot but not smoking. Working in batches, add crab cakes, and cook until golden brown, about 2 to 3 minutes on each side. Transfer to a paper towel-lined baking sheet to drain, and place in oven to keep warm. Repeat with remaining crab cakes. Serve with Cilantro-Lime Mayonnaise, if desired.

4 tablespoons vegetable oil
1 small onion, finely chopped
1 Thumb-size piece fresh ginger, peeled, and finely chopped
2 small cloves garlic, finely chopped
2 teaspoons ground coriander
1/4 to 1/2 teaspoon red chile powder
1 teaspoon garam masala
Kosher salt
2 tablespoon fresh lemon juice
1 ounce fresh cilantro leaves and stalks, chopped
14-ounces prepared crab meat
1 large free-range egg
2 1/2 tablespoons mayonnaise
9 to 10 pieces of thick bread, made into crumbs in a food processor
3 ounces prepared mayonnaise
2 ounces or 1/4 cup milk
1 tablespoon tamarind paste,* or to taste
1/4 teaspoon freshly ground black pepper
Kosher salt
Handful fresh cilantro leaves and stalks, chopped
Lightly dressed fresh salad leaves, to serve

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat 2 tablespoons of the oil in a nonstick pan and fry the onion for about 4 minutes, or until the onions are soft. Add the ginger and garlic, and cook for another 40 seconds. Stir in the coriander, red chile powder, garam masala, and salt, to taste, and cook for another 20 seconds then take the pan off the heat. Place the mixture into a large bowl.
  • Add the lemon juice, fresh cilantro, crab, egg, and mayonnaise to the onion mixture in the bowl. Stir the ingredients well and add the bread crumbs. Divide the mixture into 8 equal portions and form each into a circular shape.
  • Heat 1 tablespoon of oil in a nonstick pan and cook the crab cakes in batches over a low, moderate heat for about 2 minutes on each side, or until the crab cakes are golden brown, adding more oil as needed.
  • Place the cooked crab cakes on a baking sheet and place them into the oven to stay warm while you cook the others.
  • For the tamarind mayonnaise: Place the mayonnaise, milk, tamarind paste, black pepper, salt, to taste, and cilantro into a bowl and whisk together. Adjust the seasonings, to taste.
  • To serve the crab cakes, take the warm crab cakes out of the oven, and put them on a plate and serve with a spoonful of the tamarind mayonnaise. Place the fresh lightly dressed salad leaves on the side.

1 1/2 cups fresh bread crumbs (made from 4 or 5 slices white bread with the crusts removed and processed in food processor)
2 tablespoons mayonnaise, plus more if needed
1 large egg white
1/2 lime, juiced
1/4 cup freshly chopped cilantro leaves, plus whole leaves, for garnish

Steps:

  • Make the crab cakes first so they have time to firm up in the refrigerator before you cook them.
  • Heat a 2-count of olive oil in a frying pan over medium heat. Add the onion and garlic and cook for 5 to 7 minutes, until the onion gets kind of caramelized. Dump that into a bowl and fold in the crabmeat, bread crumbs, mayonnaise, egg white, lime juice, and cilantro, mixing just until well blended. Season with salt and pepper. Shape the mixture into 6 fat crab cakes. Put them on a plate, cover, and stick them in the refrigerator to chill.
  • To serve, heat a 3-count of olive oil in a large saute pan over medium heat. Add the crab cakes and cook for about 4 minutes each side until nice and crisp. Serve on torn butcher paper with fresh lemon wedges and Garlic Aioli with Celery Root.
  • Mince garlic and make into paste using the side of your knife. Hint: to make this go faster add a bit of salt to the garlic and continue mashing with the side of your knife.
  • Place the paste in a large bowl and add: the sour cream, mayonnaise, celery seed, lemon juice, and oil. Season well with salt and freshly ground black pepper. Fold in the shredded celery root and chives. Give it a final taste and adjust seasoning, if necessary.
