I have tried and tried again to re-create the garlic butter crab legs that taste like the crabs from my favorite crab joint-The Crab House on Pier 39 in San Francisco. I have finally done it!

2 lbs king crab legs
1/2 cup butter (salted or unsalted)
1/2 head garlic, about 5 garlic cloves, minced pressed
1/2 lemon, juice of
1/2 lime, juice of
1/8 cup extra virgin olive oil
sea salt (optional)
dried parsley (optional)

Steps:

  • Preheat your oven to 375 degrees. Meanwhile, grab yourself a small saucepan. On med low heat, melt the butter. Add the garlic (I prefer a press) and LIGHTLY saute. Squeeze in the juice of the citrus of choice. If using a lemon, squeeze the juice into your hands so that you can remove the seeds with ease. Turn the heat to low and let those flavors mesh until the oven is nice and hot. Toss in as much salt (to taste) and a couple pinches of parsley. Then whisk in that olive oil with a fork. Turn off your burner.
  • Arrange your tasty crustaceans in a 9x13 baking dish, brushing each leg with the sauce. ***TASTY TIP*** I use an injector to pop a *little* extra UMPH into my crabs. Pour any remaining sauce over those puppies. Now toss the pan into the oven on the center rack.
  • Bake your crabs for about 25 minutes or so (depending on how thick the legs you have are), brushing the sauce from the bottom of the pan onto the legs every 5-7 minutes. Remove from oven. Sprinkle with a few pinches o' parsley for garnish.
  • I am a lazy gal, detest doing more dishes than I have to, and am a firm believer in the "waste not, want not" phrase. With that said, I just serve the crab in the same dish I baked it in so I can dip the meat into the tasty sauce, savoring every last drop. If you are the opposite, use tongs and place them on a platter and pour the buttery-goodness into ramekins. VOILA! Crab House comparable delicacy! "Ohhhh my CRAAAABS!

The name pretty much gives away the recipe, but this is the my favorite way to eat fresh crab (and most other seafood). Be sure to have crusty french bread on hand to soak up the excess. Adjust amounts to your taste.

1 cup mashed potatoes (with added milk and butter)
1 large egg, beaten
1 tablespoon plus 1/2 cup dry bread crumbs, divided

1/8 teaspoon salt
1/8 teaspoon pepper
1 pound fresh crabmeat
1/4 cup all-purpose flour
Oil for deep-fat frying
LIME BUTTER:
1/2 cup butter, softened
4 teaspoons lime juice
1 teaspoon grated lime zest

Steps:

  • In a large bowl, combine the potatoes, egg, 1 tablespoon bread crumbs, onion, parsley, lime juice, salt and pepper. Gently stir in the crab. Shape into 12 patties., In a shallow bowl, combine flour and remaining bread crumbs. Coat patties with crumb mixture., In an electric skillet, heat 1/4 in. of oil to 375°., Fry crab cakes, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels. Combine the butter, lime juice and zest. Serve with crab cakes.

For the filling:
1 cup ricotta cheese (8 ounces)
1 cup lump crabmeat, such as peekytoe (8 ounces)
Coarse salt and freshly ground pepper
1/8 teaspoon red-pepper flakes
For the ravioli:
All-purpose flour, for baking sheet
90 wonton wrappers (two 12-ounce packages)
1 large egg, lightly beaten, for egg wash
Coarse salt
For the sauce:
1 stick unsalted butter
2 teaspoons lemon peel, very finely chopped, plus 2 teaspoons fresh lemon juice
Garnish: fresh chervil

Steps:

  • Make the filling: Mix together ricotta, crabmeat, 1/2 teaspoon salt, 1/8 teaspoon pepper, and the red-pepper flakes.
  • Make the ravioli: Lightly flour a baking sheet. Working in batches, arrange 45 wonton wrappers on a work surface; keep remaining wrappers covered with a damp paper towel. Mound 1 teaspoon crab filling in the center of each. Brush edges of wrappers with egg wash, and top each with another wrapper. Press edges to seal. Cut out circles using a 2 1/4-inch cookie cutter; transfer to baking sheet.
  • Bring a large pot of salted water to a boil. Working in 2 batches, cook ravioli until they rise to the top, 2 to 3 minutes.
  • Meanwhile, make the sauce: Heat a large skillet over medium heat. Melt 4 tablespoons butter, and heat until just bubbling and frothy. Transfer first batch of ravioli to skillet using a slotted spoon, along with about 2 tablespoons cooking liquid. Add 1 teaspoon chopped lemon peel and 1 teaspoon juice, and swirl to combine. Transfer to plates.
  • Repeat with second batch of ravioli. Garnish with chervil.

50g butter , softened
1 tbsp chopped tarragon leaves
50g/2oz crab , half white meat, half brown
1 lemon , zested, then cut into thin slices
1 large whole lemon sole or 2 small ones, descaled and gutted (ask your fishmonger to do this), washed and dried
50ml white wine
1 tbsp caper , drained and rinsed
2 tbsp double cream

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a small bowl, mash the butter with the tarragon, crabmeat and zest, and season. Make a few deep slashes across the fillets on both sides of the sole, then place the fish, dark-skin up, in a large roasting tin. Season, then stuff the crab butter into the cuts, spreading any remaining butter on top. Lay a few lemon slices over the fish, then pour over the wine.
  • Bake for 15-20 mins, depending on the size of the fish - the flesh should flake away easily from the bone when gently pushed with a knife.
  • Carefully remove the fish from the tin, place on a warm plate or platter and cover with foil while you make the sauce. Set the tin over a low heat, add 2 tbsp water and bring to the boil. Let the sauce bubble for a few mins, then stir in the capers and cream. Pour the sauce over the fish and serve with steamed potatoes and a green salad.

12 Meyer lemons, juiced and strained
1 tablespoon heavy cream
4 tablespoons cold butter, cut into small cubes
4 tablespoons butter
6 small leeks, tough outer leaves discarded
2 Hayman or other variety sweet potatoes, peeled and cut into small dice
1 pound jumbo lump blue crab, picked over
8 ounces country ham, sliced very thin (recommended: Kite's)
2 tablespoons chopped fresh fines herbes (chervil, chives, parsley, tarragon)
Kosher salt and freshly ground white pepper, to taste
4 (7-ounce) rockfish fillets, patted dry
Salt and freshly ground white pepper
4 tablespoons clarified butter
1 tablespoon whole butter
1 small bunch fresh thyme leaves
Meyer lemon segments or slices, for garnish, optional

Steps:

  • Preheat oven to 350 degrees F.
  • For the Meyer lemon butter: In a small saucepan, reduce the Meyer lemon juice until slightly syrupy. Stir in the heavy cream. Whisk in the cold cubed butter a few pieces at a time, not allowing the sauce to become cold or too hot to touch by hand. When all of the butter is incorporated, strain the sauce. If the sauce separates, pulse with an immersion blender to emulsify. Set aside and keep warm.
  • For the hash: Bring a large pot of water to a boil over high heat, salt it generously. Trim the root end of the leek and halve lengthwise. Rinse very well under running water to flush out any grit trapped between the leaves. Slice leeks into 1/4-inch-thick pieces, put in a small strainer and dip in the boiling water. Cook until just tender, about 3 minutes, then plunge strainer and leeks in an ice water bath to cool. Drain and pat dry leeks, set aside. Repeat this procedure with the diced sweet potatoes, blanch until almost tender, about 3 minutes, then cool in the ice bath. Drain and pat dry, set aside.
  • In a large skillet, melt the butter over medium heat. Add the blanched Hayman sweet potatoes leeks, sweat until very tender about 3 to 4 minutes. Add the leeks continue to cook until heated through. Add the crab and country ham, stirring gently until heated through. Add the fines herbes at the last minute. Season, to taste, with salt and white pepper. Set aside and keep warm while you prepare the fish.
  • For the rockfish: Score the skin side of the fillets with a sharp knife, taking care not to cut too far into the flesh of the fish. Season with salt and white pepper. Heat a large skillet over medium-high heat, and add the clarified butter. Add the rockfish skin side down, sear until skin is golden and crisp, about 2 to 3 minutes. Flip, add the butter and thyme and bake until just cooked through, about 3 to 4 minutes.
  • In a bowl or plate, drizzle the warm Meyer lemon butter in a circle just inside the rim. Gently place the warm blue crab hash in the center of the plate. Place the rockfish on top of the hash with the crispy skin side up. Garnish with Meyer lemon segments or slices, if desired.

1/2 Scotch bonnet, jalapeno or Serrano pepper, seeded and minced
4 tablespoons mayonnaise
1/2 cup fresh bread crumbs
2 limes
Freshly ground black pepper and salt (optional) to taste
1 tablespoon olive oil
1 large ripe avocado, pitted and cut into chunks
24 thin slices French baguette, toasted

Steps:

  • Pick over the crab meat and gently combine in bowl with egg, parsley, scallion, mustard, Worcestershire, hot pepper, mayonnaise, bread crumbs, juice of one lime, pepper and salt.
  • Shape into 24 small patties and saute in hot oil in nonstick skillet until brown on both sides. Handle and turn gently so that crab cakes do not fall apart. Cakes will cook in two or three minutes.
  • In food processor, process avocado and 2 tablespoons lime juice until smooth. Add salt and pepper, to taste.
  • When crab cakes are cooked, arrange on toast; top with a large dab of avocado butter and serve.

Reserved solids from crab bisque
4 sticks (1 pound) unsalted butter
1/2 teaspoon paprika (not hot)

Steps:

  • Preheat oven to 450°F with rack in lowest position.
  • Put reserved crab solids in a 3-quart ovenproof heavy pot. Put butter on top of solids, then cover and cook in oven 1 hour.
  • Remove pot from oven and add enough cold water to reach 1/4 inch below rim of pot. Let stand, uncovered, about 10 minutes to allow melted butter to rise to surface of water.
  • Skim melted butter with a large spoon or ladle into a 1-quart saucepan, then boil until butter stops crackling (when all water has been boiled out) and turns clear, about 15 minutes. Strain through a fine-mesh sieve into a small bowl. Stir in paprika.

SOFT-SHELL CRAB CROSTINI WITH ARUGULA BUTTER



Soft-Shell Crab Crostini With Arugula Butter image

For easy weeknight meals, I dry my cleaned crabs thoroughly so they don't steam, then sauté them in plenty of butter or oil. You could use a breading like flour or cornmeal to augment the crunch factor, but it also impedes the sweetness of the meat. And good crabs don't really need it. The trick is to know when to take them off the heat. As soon as they turn from gray-brown to rust and white, the texture goes from soft to taut and they are ready. Soft-shell crabs don't need much adornment; a squirt of citrus and some freshly ground black pepper offset the funky sea flavor beautifully. But a little garlic and something green and sprightly (here, a combination of arugula and chives) can make them even better.

Steps:

  • Make the coating: in a shallow dish, stir the all the coating ingredients together.
  • Remove the feeler underneath the crab shells on both sides; rinse the crab and dry carefully.
  • In a big skillet over medium heat, melt the butter with the vegetable oil; add in shallots and saute until lightly softened, about 1 minute.
  • Roll the crabs in the flour mixture and place them in the skillet; saute, turning once, for about 3 minutes on each side.
  • When they have finished cooking and have turned pink, add the lemon juice, garlic, parsley, and salt and pepper to taste and cook another minute or two.
  • Make sure the garlic is cooked but not browned; taste for seasoning.
  • Transfer the crabs to individual plates and garnish with lemon and parsley; serve immediately.

prepared ravioli, dough
1/4 cup fresh breadcrumb
5 tablespoons whipping cream
8 ounces cooked crabmeat
1 tablespoon butter, softened
2 egg yolks
salt
1 cup butter
2 tablespoons lemon juice
2 tablespoons capers, rinsed and squeezed dry
1 tablespoon minced parsley

Steps:

  • Filling: soak bread crumbs in 2T of the cream. Mix the bread crumbs, crab, butter and remaining cream. Beat egg yolks and then beat into mixture. Salt to taste.
  • Make sheets of pasta, placing dabs of the filling every three inches or so on the bottom sheet, spread a top sheet over and cut with a ravioli cutter or a sharp knife. Make the ravioli about 2 inches square.
  • To a large pot of boiling water add ravioli a few at a time, return to boil, lower heatand simmer until pasta is just tender, about 10 minutes. Remove with slotted spoon and drain.
  • Lemon-Caper Butter: Melt butter over lowest heat. Add other ingredients and warm until just heated through.
  • Divide raviioli among warm serving plates. Spoon on warm Lemon Caper Butter and serve immediately.

2 tablespoons olive oil
4 ounces crawfish (tail meat, cooked)
4 ounces crabmeat (fresh)
1 teaspoon garlic, peeled and minced
1 tablespoon shallot, peeled and minced
2 tablespoons red bell peppers, minced
1 teaspoon fresh basil, minced
1/4 cup dry white wine (Chardonnay, Sauvignon Blanc or Pinot Grigio)
1 tablespoon lemon juice (fresh is best)
1 tablespoon honey
3 tablespoons creole mustard
1/4 cup heavy cream or 1/4 cup whipping cream
2 tablespoons green onions or 2 tablespoons scallions, chopped
4 tablespoons unsalted butter, cold
salt, pepper and cayenne, to taste
1 egg
1 egg white
1 1/2 cups beer (one 12 ounce can)
1 3/4 cups flour
1 teaspoon baking powder
vegetable oil, for frying (about 4 cups)
salt, pepper and cayenne, to taste
16 asparagus spears, trimmed and cut into 4-inch lengths

Steps:

  • For the crab/crawfish mixture: Heat olive oil in large skillet; add next six ingredients and saute for a minute.
  • Add next five ingredients and simmer until reduced by half.
  • Add onions and butter, one tablespoon at a time, stirring constantly until all the butter is incorporated.
  • Season to taste and keep warm until served.
  • For the asparagus: Combine the first five ingredients in a bowl and mix until smooth.
  • Heat the oil in a heavy bottomed pan to 325°F.
  • Dip the asparagus pieces in batter and fry until golden.
  • Remove and drain on paper towels.
  • To serve, place 4 pieces on warmed plates; divide the crab mixture evenly over the top.

1/4 c extra virgin olive oil
4 garlic cloves, grated
1 lemon zest, grated
2 Tbsp italian parsley, chopped

  • 1. Steam crab legs with old bay seasoning for 10 minutes and remove crab meat.
  • 2. Combine remaining ingredients and melt for 1 minute in the microwave.
