We have some definite themes goin on here as I wind down entering my treasure trove of long-lost & newly found recipes. Here's another breakfast dish using Brie that seems to warrant a spec brunch occasion for 4 in my book. Times were estimated. Enjoy!

Number Of Ingredients 8

6 large eggs
1 tablespoon cold water
1/4 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons butter (1/2 stick)
8 ounces crabmeat (fresh or canned, cleaned of all debris & divided in half)
4 green onions (thinly sliced & divited in half)
6 ounces brie cheese (rind removed, cut in sml pieces & divided in half)

Steps:

  • Preheat broiler.
  • Whisk 1st 4 ingredients in lrg bowl to blend. Melt 1 tbsp butter in 10-in flame-proof non-stick omelette pan over med-high heat.
  • Pour 1/2 of egg mixture into pan & cook till almost set, tilting pan & lifting egg mixture w/rubber spatula to allow uncooked portion to run underneath (about 1-2 min).
  • Spoon 1/2 of crab over rt half of omelet. Sprinkle 1/2 of green onions & 1/2 of cheese over crab. Season w/salt & pepper.
  • Place pan under broiler til cheese begins to melt & egg is almost cooked (about 15-20 seconds).
  • Fold lt side of omelet over filling. Slide omelet onto plate & keep warm.
  • Wipe pan w/paper towel & repeat Steps 3-6 w/rest of ingredients, forming 2 omelets. Serve omelets immediately.

Oh my, this entry from my treasure trove of lost and newly found recipes (source unknown) looks like it would definitely be a crowd-pleasing brunch dish. Despite evidence to the contrary, I reduced the calories and fat content with the use of half-and-half instead of whipping cream which I thought was pure excess, especially when combined with low-fat milk. (Times have been estimated). Enjoy!

1 (8 ounce) brie cheese, round
1 lb pork sausage
6 slices white bread
1 cup parmesan cheese (grated)
7 large eggs (divided according to directions)
3 cups half-and-half cream (divided according to directions)
2 cups low-fat milk
1 tablespoon fresh sage (chopped, or 1 tsp dried sage)
1 teaspoon seasoning salt
1 teaspoon dry mustard

Steps:

  • Trim rind from Brie and discard.
  • Cut cheese into small cubes and set aside.
  • Cook sausage in a large skillet over med-high heat, stirring until it crumbles and is no longer pink; drain well.
  • Cut crusts from bread slices.
  • Place crusts evenly in the bottom of a lightly greased 13x9-inch baking dish.
  • Layer evenly with bread slices, sausage, Brie and Parmesan cheese.
  • Whisk together 5 eggs, 2 cups half-and-half, low-fat milk, sage, seasoning salt, and dry mustard.
  • Pour evenly over cheeses.
  • Cover and chill mixture for 8 hours.
  • In the morning, preheat oven to 350°F.
  • Whisk together remaining 2 eggs and 1 cup half-and-half.
  • Pour evenly over chilled mixture.
  • Bake for 1 hour or until casserole is set.

4 eggs
1 tablespoon onion, minced
2 tablespoons butter
1 tablespoon celery, finely chopped
3/4 cup lobsters, diced or 3/4 cup crabmeat

Steps:

  • Beat the eggs and cook in an omelet pan over medium heat.
  • While eggs are beginning to cook in another pan sauté' the onions in the butter, add celery and lobster or crabmeat to onions and simmer for 3 minutes.
  • Before folding the omelet, spread it with the filling mixture.
  • Fold and serve garnished with parsley.

My treasure trove of long-lost, but newly found recipes will soon be exhausted. I am down to the last few that happen to all be breakfast dishes that esp appeal to me. As w/many of the others, I have no clue about the orig source of this recipe. (Times have been estimated. Prep time includes time to prepare ingredients & crisp the bacon. Cook time refers to cooking the omelets only.) Enjoy!

Number Of Ingredients 8

2 tablespoons butter
2 tablespoons green onions (chopped)
4 eggs
1/4 cup milk
3/4 teaspoon pepper
2 ounces brie cheese (skin removed & chopped)
4 slices bacon (cooked crisp & crumbled)
3 tablespoons pecans (chopped)

Steps:

  • Over med-low heat, melt butter in a 10-in ovenproof skillet or omelet pan, tilting pan to coat bottom & sides. Saute onion till tender (about 3 min).
  • While onion is cooking, combine eggs, milk & pepper.
  • Increase heat to med-high. Pour egg mixture into skillet & cook till edges begin to set.
  • Using a fork, gently pull edges of the eggs away from the sides of the pan so the uncooked egg mixture flows under the cooked edges. Continue till most of the egg mixture is set & the surface of the omelet is just slightly wet.
  • Sprinkle cheese, bacon & nuts over the top of the omelet. Fold in half, cut into 2 pieces & serve immediately.
  • NOTE: Brie cheese & fresh fruit are often paired & serving this omelet w/your choice of fresh fruit was suggested.

It seems that I often have crabmeat left over after making crab cakes or other crab dishes. This is a great way to use it up the following morning. This recipe can be halved.

6 ounces flaked crabmeat (, backfin recommended)
2 tablespoons shredded parmesan cheese
salt
freshly ground black pepper
6 eggs
2 tablespoons water
1 ounce butter
2 tablespoons heavy whipping cream

Steps:

  • Mix the flaked crabmeat with the cheese and season with salt and pepper.
  • Lightly beat the eggs in a bowl with the water and salt and pepper.
  • Melt the butter in a small skillet and when the froth subsides, pour in the eggs.
  • Place the crab and cheese on top of the eggs just when the eggs are beginning to set.
  • Pour on the cream while the eggs are still liquid and transfer under a hot broiler for a few minutes until the top is golden brown.
  • Do not fold, but slide on to a hot plate and serve immediately.
