KING CRAB APPETIZERS
These crab tartlets have long since been a family favorite and are requested often at holiday get togethers.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 tartlet pans.
- Divide rolls in half and press into the prepared tartlet pans. Set aside.
- In a large bowl, combine cream cheese, crab, mayonnaise, Parmesan cheese, Cheddar cheese, green onions and Worcestershire sauce. Spoon 1 teaspoon of mixture into tarts and garnish with paprika.
- Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes, or until light brown. These freeze wonderfully. Just reheat before serving.

CURRY CRAB APPETIZERS
We live in WA State, where Dungeness crab is readily available. Canned crab is okay, but fresh is so much better. Serve on small crackers or melba toast.

Steps:
- Use fresh crab if possible.
- If not, canned or frozen crab meat is acceptable, but not as good.
- Place crab in bowl, add onion, green pepper, and lemon juice; gently mix, trying not to break up the crab pieces.
- At this point, begin adding mayo to obtain the texture you seek- it should hold together, but not be mushy.
- The mayo should just serve as a binder.
- Then begin to add curry powder to taste; we like it very spicy, so I use about 2 Tblspn curry per pound of crab meat.
- Start small, taste& add more if you want it hot& spicy.

CRAB ON A MUFFIN APPETIZERS
Simple, delicious, cheesy, freezes well. Can be served as an appetizer or for a luncheon, depending how you slice it. Be sure to take a copy of the recipe along, cause everyone will want a copy -- no kidding!

- Melt butter in skillet.
- Add Old English cheese until all is melted.
- Remove from heat, add mayonnaise, parsley and Old Bay.
- Gently fold in crab meat.
- Cut muffins in half.
- LIGHTLY toast muffins (just until they start to toast).
- Cut the muffins into 1/4ths, for appetizers.
- Spread the crab/cheese mixture onto each 1/4th.
- You may freeze at this point.
- To cook, bake at 350°, for 20 minutes, till bubbly.
- For luncheon, spread the mixture on the muffin half and cook as directed.

- Remove cartilage from cooked crabmeat.
- Combine mayonnaise, mustard, lemon juice and crabmeat.
- Toast bread, then cut off the crusts.
- Spread crabmeat mixture on each slice of toast.
- Combine cheese and crumbs.
- Sprinkle cheese mixture on top of crabmeat.
- Cut slices into 6 pieces, each.
- Place on a broiler pan 3" from heat.
- Broil for 2 minutes until brown.

- Preheat oven to 400 degrees F.
- in a medium bowl combine crab, cheese, onions, Worcestershire sauce and dry mustard; mix well.
- In a large saucepan combine butter and salt; bring to a boil then remove from heat, and add flour, beating until mixture forms a ball.
- Add in eggs one at a time, beating after each.
- Blend in crab mixture, mix well.
- Drop by small teaspoonfuls onto ungreased baking sheet (at this point, puffs can be frozen on baking sheet).
- Bake 15 minutes, then reduce heat to 350 degrees F, and bake for 10 minutes more.
- Note: unbaked puffs can be frozen on a baking sheet, and transfered to plastic freezer bags; bake WITHOUT defrosting at 375 until crisp.

- Pre-heat oven to 375 degrees.
- Separate each biscuits into 5 equal pieces.
- Press onto the bottom, and up the sides of 24 ungreased miniature muffin cups.
- Fill each cup with 2 tsp crab and one tsp Swiss cheese.
- In a small bowl, combine the egg, milk, dill weed and salt. Spoon about 1 1/2 teaspoons into each cup.
- Bake for about15-20 minutes, or until edges are golden brown.
- Let stand for about 5 minutes before removing from pan. Serve warm.
- Note: the computer and I fought over the tube of refridgerated buttermilk biscuits. The recipe states 1 (16.3 oz) tube of large buttermilk biscuits.

- Heat oven to 350°F.
- Trim rind from outside edge of cheese.
- Cut crosswise into 6 strips. Trim rind from each strip.
- To form 30 pieces, cut the 4 longest strips each into 6 cubes.
- Cut the 2 shortest strips each into 3 cubes.
- In small bowl, combine crab meat, mayonnaise, pimiento and shallot.
- Arrange tartlet shells on large cookie sheet. Spoon crab mixture evenly into tartlet shells, about 1 teaspoons each. Top with cheese cube.
- Bake 5 minutes or until cheese is soft and melted.
- Sprinkle with chives.

- Combine butter and oil; set aside.
- Saute onion, peppers, and garlic in 2 tbsp reserved butter mixture in a medium saucepan over medium heat, stirring constantly until tender. Remove from heat. Gently stir in crabmeat and next 3 ingredients.
- Place on tortillas on baking sheets; brush 1 side of each tortilla with remaining butter mixture. Turn tortillas over; spread crabmeat mixture evenly over half of each tortilla, and sprinkle with cheese. Fold tortillas in half.
- Bake at 475 degrees for 4 minutes or until golden. Cut each tortilla into thirds. Serve warm.

- In a food processor whirl egg white, onion, sherry, ginger, sesame oil and fish and puree until smooth.
- Spoon into a bowl and add the crab.
- With a spoon spread an equal portion of puree over the meat on each claw.
- Set aside.
- Pour oil in pan, around 2 inches deep and heat to medium high, 3 or 4 at a time, cook to golden brown, around 4 or 5 minutes.
- Drain on paper towels.
- Serve when you can handle pincers, or chill overnight and reheat in oven.
- Whisk together lime, soy sauce and jalapeno to dip claws in.
