Quick, easy and delicious mashed potatoes with corn and carrots.

Steps:
- Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
- Stir in corn and butter. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

COWBOY MASHED POTATOES
These are soooo good! Do not be afraid of the jalapeno, they do not end up at all spicy. (in fact, I often add more then one!) You will never go back to boring mashed potatoes again! I got this recipe from allrecipes, and was shocked that it has not been posted here.

My family's been making this tasty side dish for years, and I was surprised not to find something similar already here. Goes great with grilled meats, burgers, or sausages. Use any color of bell peppers you have, or a combo.

Steps:
- Peel potatoes, if desired (I like to leave the peel on) and cut into 1/2" dice.
- Heat olive oil in large skillet (you can reduce the amount of oil if using a non-stick skillet). Add the potatoes, spreading into a single layer. Don't stir yet! Let them get golden brown on one side.
- Stir the potatoes, and let them brown on another side. Stir again, adding the pepper and onion. Continue to cook until the onions and peppers are tender. If the potatoes are not done, reduce heat to low and cover the skillet until they're done.
- Add salt and pepper to taste, and serve.

I grew up eating these potatoes. My Dad made them all the time. Now we make them. We put them on a charcoal pit with wood so they have a smokey flavor. They can be done on a gas grill or even over an open fire.

- 1. Make a pouch with foil..arrange cubed potatoes and onions.place slices butter ontop..salt, pepper and garlic powder to taste.

My family loves spicy food. This is my version of a recipe I found in a Marlboro Man Cookbook several years ago. It's been a keeper ever since.

- 1. Wash (5-6 medium) potatoes and remove any bad spots. Slice them into wedges the size of steak fries. cut onion in half then half again and slice.
- 2. Combine potatoes, onion, minced garlic, jalepeno rings, jalepeno juice, BBQ sauce and grill seasoning in baggie. Let marinade for 30-40 minutes
- 3. Tear a large (24x18) piece of heavy duty foil, spray with nonstick cooking spray, pour potato mixture onto foil and dollop butter all around potatoes, season to taste with salt and pepper.
- 4. fold foil packet leaving a small air space for steam. place on campfire over hot coals or in preheated bbq grill cooking for 30-40 minutes turning halfway through cooking time. these are done when fork tender.

- Preheat oven to 350. Butter a 9X13" pan. Break up the potatoes and spread them on the bottom of the pan. Top the potatoes with the onion. Mix the soup, sour cream and cheese together. Pour over the top of the onions and potatoes. Mix the melted butter and cornflakes. Spread over top of the mixture. Cover with foil and bake 50 minutes. Remove the foil and allow to bake and brown 10 minutes. Serve.
