A Southwest flavor sensation. Smoked Sausage with bell peppers, onions and garlic topped with cornbread is a crowd pleaser.

Steps:
- Preheat oven to 400 degrees F.
- Heat a 10-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
- Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
- Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 - 25 minutes.

COWBOY BBQ CHICKEN POT PIE
Steps:
- Heat oven to 400ºF.
- Heat 2 Tbsp. oil in large nonstick skillet on medium heat. Add chicken; cook 4 to 5 min. or until no longer pink, stirring frequently. Remove chicken from skillet; set aside.
- Heat remaining oil in skillet. Add peppers, red onions and corn; cook 4 to 5 min. or until crisp-tender. Add beans, barbecue sauce and chicken; mix lightly. Spoon into 8-inch square baking dish sprayed with cooking spray.
- Reserve 1 Tbsp. green onions for later use. Mix egg and sour cream in medium bowl until blended. Add muffin mix, remaining green onions and 1 cup cheese; stir just until blended. Spread evenly over chicken mixture. Place baking dish on baking sheet.
- Bake 25 min. or until toothpick inserted in center comes out clean. Top with remaining cheese; bake 5 min. or until melted. Sprinkle with reserved green onions.

VEGAN COWBOY TAMALE PIE
Yummy and Healthy! This recipe came from a cooking show done by Cinda Sanner on 3 Angel's Broadcasting Network. She has recipe books out, but I'm not sure which one has this delicious dish in it. I made this for two potlucks and everyone loved it both times. I used the vegan cornbread recipe posted on ZAAR by Vino Girl. Tastes great served with our creamy vegan mashed potatoes. Update: If you do use Vino Girl's Recipe #115929 like I do for the topping, double it to give it the thick cornbread layer like shown in my picture. Otherwise its just a thin crust.

Steps:
- In a large saucepan, steam the onion in the 1 cup of water until the onion is clear.
- Add the carrots, garlic and red bell pepper and continue to cook over medium heat for 5 minutes.
- Add the rest of the ingredients and mix well. Let simmer over low heat for 5 -10 minutes.
- Spread a 13" x 9" baking dish with a non-stick cooking spray and pour the mixture into the dish.
- Cover with you favorite cornbread recipe and bake according to the cornbread directions until the cornbread is golden brown and completely baked through. Serve hot.

- brown the ground beef and follow the directions on taco seasoning packet as though you are making tacos.
- in a casserole dish first add taco meat then sprinkle shredded cheese evenly over the meat.
- Next evenly spread the pace over cheese.
- Prepare the corn bread mix as package instructs you to and pour over meat mixture.
- Bake in a pre heated 350 oven for 30 minutes or until corn bread is cooked through.
- I serve this with sour cream and more salsa.
- you can also sprinkle the top of the corn bread before baking with green chilis.

- 1. Preheat oven 350 degrees. Brown the ground beef with onion and garlic. Season with salt and pepper. Drain. Mix in the salsa, corn, and sour cream. Place the mixture in bottom of pie plate
- 2. Top the meat mixture with the 6 slices of Muenster cheese. Add the mashed potatoes then top with the taco blend cheese.
- 3. Bake for about 30 minutes. Top with parsley for garnish.
COWBOY PIE
I found a recipe for "Cowboy Pie" in a recipe book ages ago, it was a really simple dish of baked beans, sausages and mash. My version has been a real work in progress and is a very satisfying comforting meal. Children always love it, and its a great way to get them eating a few veggies! PLease dont take the measurements as absolute, especially the bbq sauce, as there are so many different kinds, enough should be added to give it a zing! If you dont have mini/cocktail sausages, you can just use regular ones, I find it best to cook them whole first and then chop them up, as if you try to chop them and then cook them you end up with a gooey mess! You can really add whatever you like to this, although I do recommend the shredded cabbage as it gives it a nice crunch.

- Preheat oven to 180C/350°F.
- Put potato, sweet potato, and swede in saucepan of cold water, bring to boil and simmer till cooked. Once cooked drain and mash with the grated cheese, butter, milk, salt and pepper.
- Meanwhile, heat oil in pan (I find a wok works best), and brown sausages.
- Add onions, pepper, garlic and cook till onions and peppers are going soft, dont let them burn as this will affect the taste.
- Add cabbage and give good stir and cook till cabbage just beginning to go slightly soft.
- Add all the remaining ingredients and give good stir.
- Heat till bubbling and then reduce heat and allow to simmer for 5/10 mins, or till the cabbage is just beginning to wilt.
- Spoon the bean mixture into an ovenproof dish and top with the potatoes mixture.
- Put in oven for around 15 to 20 minutes.
- Serve and enjoy!

COWBOY HOT TAMALE PIE
Steps:
- 1. Brown ground beef in skillet, breaking up meat with fork.
- 2. Add seasonings and tomatoes; simmer 5 minutes.
- 3. Stir in corn and olives.
- 4. Combine cornmeal, salt and water; cook, stirring, until thick.
- 5. Add pimento.
- 6. Line greased, shallow 2-quart baking dish with part of cornmeal mush.
- 7. Pour in beef mixture and make a border of remaining mush around edge of baking dish.
- 8. Bake at 350 about 40 minutes.
- 9. Sprinkle with remaining cheese and bake 5 minutes longer.

- Heat oven to 450ºF.
- Cook and stir peppers and onions in large heavy ovenproof skillet sprayed with cooking spray on medium heat 5 min. Crumble ground beef into skillet; cook 10 min. or until evenly browned, stirring frequently.
- Add beans, tomatoes, sausage and barbecue sauce; mix well. Top with VELVEETA.
- Mix corn muffin mix, egg and milk just until blended; pour over ingredients in skillet. Place skillet in oven.
