1 pound ground beef
4 tablespoons chopped onion, divided
3 tablespoons chopped sweet red pepper, divided
2 tablespoons chopped green pepper, divided
1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1/2 cup salsa
4 tablespoons sliced ripe olives, divided
4 tablespoons sliced pimiento-stuffed olives, divided
2 tablespoons chopped green chiles
1 teaspoon chopped seeded jalapeno pepper
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1/4 cup shredded cheddar cheese
2 tablespoons sour cream
2 to 3 teaspoons minced fresh parsley
Tortilla chips

Steps:

  • In a large skillet, cook the beef, 3 tablespoons onion, 2 tablespoons red pepper and 1 tablespoon green pepper over medium heat until meat is no longer pink; drain. Stir in the soup, salsa, 3 tablespoons ripe olives, 3 tablespoons pimiento-stuffed olives, chiles, jalapeno, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Transfer to a serving dish. Top with the cheese, sour cream and parsley; sprinkle with the remaining onion, peppers and olives. Serve with tortilla chips.

3 (11-ounce) cans sweet corn with diced peppers, drained (also called Fiesta corn)
1 (7-ounce) can chopped green chilies
1 (6-ounce) can chopped jalapeno peppers, drained
1/2 cup green onions, chopped
1 cup mayonnaise
1 cup sour cream
1 teaspoon pepper
1/2 teaspoon garlic powder
1 (16-ounce) package shredded sharp cheddar cheese
2 to 3 bags of Frito Scoops or other tortilla chips

Steps:

  • In a large bowl, mix all ingredients except for the chips. Cover and chill two hours to overnight. Serve with Frito scoops or your favorite tortilla chips.

Cowboy Caviar (Tangy Black Bean Dip) image

I got this recipe from a cookbook that came free in the mail (from a cigarette company of all things)!! I modified it slighty, and I've gotten nothing but compliments on it. I do tend to go heavier on the garlic & sometimes add a bit more vinegar than what's called for. It sets real nice if chilled overnight, but if time's an issue, chilling isn't totally necessary. I like to serve it in a bright colored bowl.

2 (15 ounce) cans black beans (drained & rinsed well)
2 -4 garlic cloves, cut
1 medium onion, cut up
1/2 teaspoon salt

1/3 cup parsley
1/3 cup olive oil
3 -5 tablespoons red wine vinegar
1 (7 ounce) can whole kernel corn (rinsed well)

Steps:

  • Place all ingredients except corn in a food processor. Process in an on-off manner for about 1 minute.
  • Transfer to large bowl & stir in corn manually.
  • Refrigerate overnight to allow flavors to blend. Serve with chips, crackers or toast.

12 ounces hot Italian sausage links, casings removed
2 (8 ounce) packages cream cheese, at room temperature
1 cup sour cream
4 ounces sharp Cheddar cheese, grated
2 cups frozen sweet corn, thawed and drained
1 (14 ounce) can fire-roasted diced tomatoes with green chiles
1 (4 ounce) can diced Hatch green chiles
½ cup diced fresh jalapeño peppers
½ cup sliced green onions
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
2 tablespoons grated sharp Cheddar cheese
1 pinch cayenne pepper, or to taste
1 teaspoon sliced green onion, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place sausages in a dry pan over medium heat until they start to sizzle. Use a spoon or flat wooden spatula to break them up as they cook. Continue to cook until browned and crumbly, 10 to 12 minutes. Remove from the heat. Drain grease if desired.
  • Combine cream cheese, sour cream, 4 ounces grated Cheddar, thawed corn, cooked sausage, fire-roasted tomatoes with chiles, Hatch chiles, jalapeño peppers, green onions, salt, pepper, and cayenne in a large bowl; mix until thoroughly combined. Transfer into a baking dish and smooth out the top. Top with remaining Cheddar, and cayenne.
  • Place the baking dish on a sheet pan and bake in the center of the preheated oven until cheese is melted and dip is bubbling around the outside, about 30 minutes.
  • Sprinkle green onions over top before serving.

1 (2 1/4 ounce) can sliced black olives, drained
6 green onions, sliced
2 cups shredded cheddar cheese

3/4-1 cup mayonnaise
1/2 package low salt taco seasoning (optional)

Steps:

  • Mix corn, Rotel, olives, onions and cheese in a large bowl until well combined.
  • Combine sour cream and 3/4 cup mayonnaise in a bowl, stirring to combine well. Mix in taco seasoning (if desired.).
  • Add sour cream mixture to corn mixture, stir well. You can add more mayonnaise for a creamier consistency.
  • Cover and chill at least 3 hours.
  • The longer you chill this the better it is.

15 ounce can blackeyed peas or white beans ((rinsed and drained))
15 ounce can white shoepeg or sweet corn ((drained) )
3-4 diced tomatoes ((about 1 cup))
1 red bell pepper ((chopped))
2 avocados ((seeded and diced))
1/2 cup chopped green onion
3/4 cup cilantro
lime juice (, to taste )
1/4 cup olive oil
1/4 cup red wine vinegar
1-2 teaspoons sugar (, optional)
1 teaspoon minced garlic
3/4 teaspoon ground cumin
3/4 teaspoon kosher salt

Steps:

  • Combine the corn and beans into a medium-sized bowl.
  • Dice the green onion, bell pepper, avocados and tomatoes, then mix them in the bowl. Then chop the cilantro finely and mix that in.
  • Add more salt and lime to taste and gently stir together.
  • Whisk together the olive oil, red wine vinegar, sugar, garlic, ground cumin and salt in a small bowl. Then pour about half of the dressing over the bean salad. Stir gently and add more as needed.
  • Serve with tortilla chips, over a salad with grilled chicken or rolled up in a tortilla. Store leftovers in an airtight container for up 2-3 days.

1 can (15 oz) Progresso™ black beans, drained and rinsed
1 can (14.5 oz) black-eyed peas, drained and rinsed
1 can (7 oz) white shoepeg corn, drained and rinsed
4 Roma tomatoes, seeds removed and diced
3 ripe but firm avocados, diced
4 green onions, sliced thin (or half of a purple onion, diced)
1/2 cup zesty Italian dressing
1/2 bunch cilantro, chopped finely
Juice of 1-2 limes
Ground pepper and salt to taste

Steps:

  • Drain and rinse the black eyed peas, black beans, and corn. Add to a large bowl.
  • Dice the tomatoes, making sure the seeds and insides are removed. You want to do this to make sure that there isn't too much liquid in the dip. Add the diced tomatoes and cilantro to the bowl.
  • Slice the green onions finely and add to the bowl.
  • Dice the avocado and squeeze a little of the lime juice over the avocados so they don't brown as quickly. Squeeze the rest of the lime juice into the bowl.
  • Add the Italian dressing and stir to coat all the ingredients. Add salt and pepper to taste.
  • Chill in the refrigerator until cold and flavors have marinated together. This is best served the same day as prepared. Serve with tortilla chips.

This is my sisters recipe. She likes to make this for Christmas Eve. This recipe makes a full crock pot but can be cut in half. You can vary this recipe to make it hotter or milder. You can use either hot or regular sausage according to taste. I use regular. You can use hot or mild Ro-tel. I use one mild and one extra spicy.
