1 1/3 cups quick oats
1/2 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup chopped pecans
1 cup chocolate chips
1 1/3 cups flour, mixed with
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Layer ingredients in order given in a 1- quart wide mouth canning jar.
  • Press each layer firmly in place before adding next ingredient.
  • Recipe for Cowboy Cookies (to be attached with the mix):.
  • Empty jar of cookie mix into a large mixing bowl,.
  • Blend mix together.
  • Add: 1 stick butter melted, 1 large egg, slightly beaten, and 1 tsp vanilla.
  • Mix until completely blended.
  • Shape into balls the size of walnuts; place 2 inches apart on sprayed baking sheets.
  • Bake at 350° for 11-13 minutes until edges are lightly browned.
  • Cool 5 minutes on baking sheet.
  • Remove cookies to racks to finish cooling.
  • Makes 3 dozen cookies.

A naturally-sweetened and whole grain cowboy cookie mix in a mason jar. Make the mix for a fun gift, or bake the cookies on the spot.

1 cup whole white wheat flour
1 tsp cinnamon
1 tsp allspice
1/2 tsp baking soda
1/4 tsp salt
1 cup old-fashioned rolled oats ((105g))
3/4 cup coconut sugar ((123g))
1/2 cup dried cranberries ((70g))
1/2 cup pecans (chopped (58g))
1/2 cup organic semi-sweet chocolate chips ((93g)*)
11 TB butter (softened**)
2 eggs
2 tsp pure vanilla extract (***)
1 jar Cowboy Cookie Mix (see recipe above)
quart-size mason jars (These are super expensive on Amazon. Check home stores and grocery stores for the best price. )

Steps:

  • In a small bowl, whisk together the flour, cinnamon, allspice, baking soda, and salt. Pour the mix into a quart-size mason jar (any quart-size, or slightly larger, wide mouth jar will work). I highly recommend using a funnel to pour the flour and remaining ingredients into the jar. Add the oats and sugar. Gently tap the bottom of the jar on a hard surface to compact the ingredients without compromising the individual layers. Add the cranberries and chopped pecans. Gently tap the bottom of the jar to compact the ingredients again. Finally, add the chocolate chips, tapping the jar if more room is needed. Place a lid on the jar and attach the gift tag instructions (download the printable gift tags, here).
  • Preheat the oven to 350F. In a large bowl, using a hand-mixer, beat the softened (to room temperature) butter. Mix in the eggs and vanilla extract. Pour the contents of the mason jar into the bowl, and mix everything together. Scoop the dough onto a baking sheet (I use an ice cream scooper). Bake the cookies for 12-14 minutes.

1/2 c brown sugar, firmly packed
1/2 c white sugar
1/2 c chopped pecans
1 c semi-sweet chocolate chips
1 1/3 c flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt

  • 1. Layer the ingredients in a 1 quart jar in the order given. Press each layer firmly in place before adding the next layer.

1 1/3 cup all purpose flour, spooned into measuring cup and leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup M&Ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 to 1/2 cup pecans, chopped

Steps:

  • Start with a 1 quart smooth Ball jar. I found these at Hobby Lobby craft store. Layer the ingredients in this order: Flour, baking powder, baking soda and salt Oats M&Ms Chocolate chips Brown sugar White sugar Chopped pecans Pack each level down really tightly. I mean it. Pack it in, or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. I'd rather sacrifice nuts than chocolate, you know. The ingredients should be flush to the top of the lid when you seal it up. DIRECTIONS ON TAG: Stir all the dry ingredients in a large mixing bowl. Add 1 slightly beaten egg, 1/2 cup butter melted slightly in the microwave, and 1 teaspoon vanilla. Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated. Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350°F oven. I got about 26 to 28 cookies out of these.
