NO-BAKE "COW PILE" COOKIES

Number Of Ingredients 7

2 cups sugar
1 stick unsalted butter
1/3 cup cocoa powder
1/2 cup milk
1 teaspoon pure vanilla extract
1/2 cup peanut butter, crunchy or creamy
2 1/2 to 3 cups old fashioned rolled oats

Steps:

  • In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a slow boil and simmer until the sugar is completely dissolved. Remove from the heat.
  • Stir in the peanut butter and 2 1/2 cups oats. The mixture should be thick; stir in additional 1/2 cup oats if too runny. Let the mixture stand for about 10 minutes to cool.
  • Line a baking sheet with wax paper or parchment paper. Drop the mixture by heaping tablespoonful onto the lined sheet. Let the cookies stand at room temperature for 1 hour to firm up. Store in an airtight container.

2 tablespoons salted butter
1/4 cup packed brown sugar
Pinch kosher salt
1/2 cup toasted slivered almonds
1/2 cup roasted peanuts
1 teaspoon ground cinnamon
2 cups granulated sugar
2 1/2 sticks (1 1/4 cups) salted butter, softened
2 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup semisweet chocolate chips
1 cup dried cranberries, dried cherries or raisins

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and line a plate with wax paper.
  • For the nuts: Melt the butter in a skillet and add the brown sugar and a pinch salt. Cook until the butter starts to bubble, about 3 minutes, then add the almonds and peanuts and stir to coat the nuts completely. Sprinkle over the cinnamon and stir until incorporated. Transfer to the lined plate and set aside to cool.
  • For the dough: Cream together the granulated sugar and butter in a stand mixer fitted with the paddle attachment, scraping the sides once, until fluffy. Add the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • Sift together the flour, cocoa powder, baking soda and salt, then add in batches to the mixer, mixing until just combined after each addition. Gently stir in the chocolate chips, dried cranberries and reserved cooled nuts.
  • Using a 1/3-cup scoop, add portions of the dough to the lined baking sheets, spacing them about 3 inches apart.
  • Bake until the middles of the cookies are set, about 20 minutes. They will be fragile at this stage, so let them cool for 10 minutes, then move them to a cooling rack to cool completely.

3 Tbsp cocoa
1/2 c milk
1 stick butter or margarine
dash(es) salt
3 1/2 c quick cooking oatmeal
1/2 c peanut butter, crunchy or plain
1 tsp vanilla flavoring

  • 1. Mix first 5 ingredients in 3 qt sauce pan. Stir until well blended. On Medium heat, heat to a rolling boil. Boil for 3 minutes.
  • 2. Remove from heat and add oatmeal, peanut butter and vanilla. Stir until peanut butter is melted and all ingredients are well blended.

The story goes like this: If a housewife looked out the window and saw the preacher coming up the mountain on his horse, she could whip up a batch of these cookies in the amount of time it would take him to reach the front door. True or not, it's a good story - and a great cookie that's a cinch to put together. Combine all the ingredients in a pot over medium heat, then drop spoonfuls on a sheet pan and chill until set. Be sure to use quick-cooking oats, not instant, when making these cookies. The less-processed oats provide delightful texture and chewiness.

3 cups/280 grams quick-cooking oats
2/3 cup/160 milliliters smooth or crunchy peanut butter (not natural)

Steps:

  • Line two large sheet pans with parchment paper. In a pot, combine the sugar, milk, butter, cocoa powder and salt. Bring ingredients to a rolling boil over medium heat, stirring constantly and being careful not to let the mixture burn, then cook until the cocoa powder and sugar have fully dissolved, about 1 minute. Remove from heat.
  • Add the oats, peanut butter and vanilla. Stir until well combined, then let cool for about 15 minutes. Drop heaping tablespoonfuls onto the prepared sheet pans, gently pressing the center to flatten slightly. (You should have about 36 cookies.) Chill for a few hours until firm.
