Number Of Ingredients 11

1 cup chicken broth
3/4 cup uncooked couscous
1/2 cup dried cherries
1/2 cup chopped carrot
1/2 cup chopped cucumber
1/4 cup sliced green onions
1/4 cup pine nuts, toasted
3 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
Salt and pepper to taste

Steps:

  • In a large saucepan, bring broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork; cool. , In a bowl, combine the couscous, cherries, carrot, cucumber, onions and pine nuts. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and toss to coat. Serve immediately.

My family loves couscous and this fruity variation is one of our favorites. This is also delicious with other dried fruit such as cranberries and apricots.

1 cup chicken broth
¼ cup water
¼ cup dried sour cherries
1 tablespoon butter
1 pinch salt
ground black pepper to taste
1 cup uncooked couscous

Steps:

  • In a 2 quart saucepan, combine chicken broth, water, dried cherries, butter, salt, and pepper. Cook over high heat until boiling.
  • Stir in couscous, cover, and remove from heat. Let stand 5 minutes. Fluff with a fork, and serve immediately.

Unique picnic side dish. I've made this several times when bringing a side dish to summer barbecues. Every time, there's at least one person that asks me for the recipe. The original recipe also calls for 1 cup chopped onions, but I leave this out.

3 cups chicken broth or 3 cups water
2 cups couscous
2 cups dried tart cherries
2 cups carrots, coarsely chopped
1 1/2 cups cucumbers, chopped
1/2 cup balsamic vinegar
3 tablespoons olive oil
2 tablespoons Dijon mustard
salt and pepper, to taste
toasted slivered almonds, for garnish (optional)

Steps:

  • Bring broth or water to a boil in a medium saucepan; stir in couscous.
  • Cover and remove from heat.
  • Let stand for 5 minutes.
  • Uncover and stir with a fork until all grains are fluffy.
  • Let cool for 10 minutes.
  • In a large bowl, combine cooked couscous, dried cherries, carrots, and cucumber.
  • In a small bowl, combine vinegar, olive oil, and mustard, mix well.
  • Pour over couscous mixture and toss to coat.
  • Season with salt and pepper if desired.
  • Garnish with toasted almonds.
  • Serve chilled or at room temperature.

1 cup water (or a combination) or 1 cup chicken broth (or a combination)
3/4 cup couscous, uncooked
1/2 cup dried tart cherry
1/2 cup carrot, coarsely chopped
1/2 cup cucumber, chopped unpeeled
1/4 cup green onion, sliced
1/4 cup pine nuts, toasted (optional)
3 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
1 tablespoon Dijon mustard
salt and pepper, to taste

Steps:

  • Bring water or broth to a boil in a medium saucepan; stir in couscous.
  • Remove from heat; let stand, covered, 5 minutes.
  • Fluff with a fork; let cool 10 minutes, uncovered.
  • Put cooked couscous, dried cherries, carrots, cucumber, green onions and pine nuts in a large bowl; mix well.
  • Combine vinegar, olive oil and mustard in a small container; mix well.
  • Pour over couscous mixture; stir to coat all ingredients.
  • Season with salt and pepper, if desired. Serve chilled or at room temperature.

1 1/2 cups boiling water
1 cup whole wheat couscous
2 tablespoons raisins
2 tablespoons craisins
1 (19 ounce) can chickpeas
3 green onions, chopped
1 medium red bell pepper, diced
1/4 cup parsley, finely chopped
1/3 cup dried apricot, finely diced
1/2 cup lemon juice
1/4 cup vegetable oil or 1/4 cup olive oil
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
2 teaspoons hot pepper sauce
salt and pepper

Steps:

  • Put the cous cous into a large bowl and pour boiling water over top. Cover loosely with lid and let sit 10 minutes. Fluff with a fork.
  • Meanwhile, chop all your veggies and then add everything to the cous cous and stir well. Serve immediately or let sit in the fridge for a few hours. It tastes better the next day!
