These cheesy zucchini patties are an excellent way to use up that abundance of zucchini from the garden. Serve with a bit of tomato sauce or sour cream dabbed on top.

2 cups grated zucchini
2 eggs, beaten
¼ cup chopped onion
½ cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
salt to taste
2 tablespoons vegetable oil

Steps:

  • In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
  • Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

A good veggie main made up of just four ingredients - so what are you waiting for? Get grating those courgettes!

2 medium courgettes, grated
2 tbsp self-raising flour
25g parmesan, finely grated
1 tbsp olive oil
170g tub roasted red pepper hummus, to serve

Steps:

  • In a bowl, combine the grated courgette, flour and parmesan. Shape into walnut-size balls, then flatten.
  • Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper hummus.

These were vaguely meant to be courgette fritters, I didn't have any feta so used some cream cheese I had instead - they are quite soft, almost blini-like. Great served with tzatziki. I used mint as I had some, I'd swap that for dill or maybe chives? The courgette I had was quite a large one, use more than one if your courgettes are smaller.

1 courgette, grated
100 g reduced-fat cream cheese
2 tablespoons flour
2 eggs, lightly beaten
fresh mint leaves, chopped finely
salt

Steps:

  • Stir everything together to make a batter.
  • Heat a non-stick frying pan or griddle.
  • Plop spoonfuls of the mixture onto the hot pan and flatten slightly - mine were about 3 inches (8cm) across. (You'll probably need to do two batches.).
  • Cook for 4 or so minutes without disturbing, then flip to cook other side - should be nicely browned.

Number Of Ingredients 8

2 medium zucchini (about 3/4 pound)
2 tablespoons grated red onion
2 extra-large eggs, lightly beaten
6 to 8 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Unsalted butter and vegetable oil

Steps:

  • Preheat the oven to 300 degrees F.
  • Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)
  • Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

50g plain flour
2 eggs
50ml milk
1 courgette , grated
1 tbsp oil
sweet chilli sauce , to serve

Steps:

  • Tip flour into a bowl. Make a well in the centre, break in eggs, then gradually whisk together, adding milk, a little at a time, to make a smooth batter. Stir in courgette and season well. Heat oil in a non-stick frying pan. Add tablespoons of mixture to make fritters, and cook for 2-3 mins on each side until lightly golden. Serve with sweet chilli sauce.

Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

1 cup Bisquick or 1 cup other baking mix
1/2 cup shredded mozzarella cheese or 1/2 cup cheddar cheese
1/8 teaspoon salt
2 eggs, beaten
2 cups shredded zucchini
2 tablespoons chopped onions
1 tablespoon butter

Steps:

  • Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
  • Blend well. Melt butter in a large skillet.
  • Spoon heaping tablespoons of zucchini mixture into skillet.
  • Fry for 3 to 5 minutes per side, until golden brown.
  • Place browned patties on a paper towel.
  • Add more butter to skillet when necessary for additional batches.
  • Serves 5 to 6.

My sister gave me this recipe and I, in turn, have given it to many of my friends. These patties have a nice flavor and are compatible with just about any entree.

1/2 cup shredded cheddar cheese
1/3 cup biscuit/baking mix
2 tablespoons grated onion

Steps:

3 1/2 cups grated zucchini
3 tablespoons grated onions
2 tablespoons minced parsley
1/3 cup freshly grated parmesan cheese
1 cup soft breadcrumbs
1/4 teaspoon pepper
3/4 teaspoon salt
2 eggs, well beaten
fine breadcrumbs
melted butter

Steps:

  • Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.
  • Combine zucchini, onion, parsley, cheese and 1 cup bread crumbs with salt, pepper and eggs.
  • Shape into patties and cover with fine bread crumbs.
  • Place on well greased cookie sheet and brush with melted butter.
  • Bake for 30-40 minutes or until golden brown.
  • You can fry these patties in a skillet with butter, if desired.
