Number Of Ingredients 7

1 large or 2 small courgettes
4 spring onions
2 tsp rapeseed oil
1 crushed garlic clove
3 large eggs
good pinch dill fronds
4 tbsp Greek yogurt

Steps:

  • Heat oven to 220C/200C fan/gas 7, then put an empty muffin tin inside. Coarsely grate 1 large or 2 small courgettes and slice 4 spring onions. Heat 2 tsp rapeseed oil in a frying pan and fry the spring onions for about 3 mins. Stir in 1 crushed garlic clove and the grated courgette and cook for another 1 min, then set aside to cool.
  • Beat 3 large eggs, a good pinch dill fronds and 4 tbsp Greek yogurt together in a jug, then season. Stir in the courgette mixture. Take the muffin tin out of the oven and drop in eight muffin cases, divide the egg mixture between the cases and bake for 15-18 mins until set and golden. Serve hot or cold with salad.

Easy to make and ready in 20 minutes, this vegetarian frittata is the perfect summer lunch. Courgette, spring onions and goat's cheese are an irresistible flavour combination

3 tbsp olive oil
1 courgette, sliced
2 cloves garlic, thinly sliced
a large pinch dried chilli flakes
4 eggs, beaten
100g goat's cheese
1 spring onion, thinly sliced
leafy green salad, to serve

Steps:

  • Preheat the grill. Heat the olive oil in a 20cm ovenproof frying pan and add the sliced courgette. Fry for 4-5 minutes over a high heat or until browned. Add the garlic and dried chilli flakes, and cook for 1 minute.
  • Lower the heat to medium. Tip in the eggs, and season generously. Cook until set around the edges.
  • Dot the top with the goat's cheese and slide under the hot grill. Cook until browned on top then scatter with the spring onions and serve with a leafy green salad.

1 ½ pounds zucchini, grated
1 teaspoon salt
¼ cup all-purpose flour
¼ cup grated Parmesan cheese
1 large egg, beaten
2 cloves garlic, minced
kosher salt and ground black pepper to taste
2 tablespoons olive oil

Steps:

  • Toss zucchini and salt together in a large colander and place in sink to drain for 10 minutes.
  • Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
  • Mix flour, Parmesan cheese, egg, garlic, kosher salt, and pepper together in a large bowl. Stir in zucchini.
  • Heat olive oil in a large skillet over medium-high heat.
  • Scoop batter by the tablespoon into the hot skillet and fry until golden brown, about 2 minutes per side.

One day I wanted to serve zucchini as a side dish-but I didn't have the time to slice and deep-fry it. So I came up with these fritters instead! They go especially well with barbecued ribs or pork chops and corn on the cob. I'm an avid recipe clipper. Vegetable oil
1/2 cup 2% milk
1 large egg, lightly beaten
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 of 1-ounce package ranch-style dip mix
2 cups (8 ounces) shredded zucchini
Ranch dressing, optional

Steps:

  • In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. , Meanwhile, combine milk and egg in a bowl. Stir together dry ingredients and add to egg mixture; blend well. Fold in zucchini. Drop batter by rounded teaspoonfuls into hot oil. Fry until deep golden brown, turning once. Drain thoroughly on paper towels. If desired, serve with ranch dressing.

2 medium courgettes, grated
2 tbsp self-raising flour
25g parmesan, finely grated
1 tbsp olive oil
170g tub roasted red pepper hummus, to serve

Steps:

  • In a bowl, combine the grated courgette, flour and parmesan. Shape into walnut-size balls, then flatten.
  • Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper hummus.
