COUNTRY CHICKEN CASSEROLE

Chicken breast, hash browns, fried onions and cheese. Now that's country cookin' for ya! This is a wonderful easy recipe, especially if want a filling meal, but don't have time to stay in the kitchen. This is my mother-in-law's favorite dish, and it heats up well for leftovers.

3 cups shredded hash brown potatoes
1 (6 ounce) can French-fried onions, divided
6 slices processed American cheese
4 skinless, boneless chicken breast halves - cut into bite size pieces
1 (10.75 ounce) can condensed cream of chicken soup
¾ cup milk
1 (15 ounce) can corn

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Stir hash browns and 1/2 of the onions together in a 9x13 inch baking dish, then lay cheese slices on top and layer chicken over cheese. In a small bowl, mix soup and milk together and pour mixture over chicken.
  • Bake in preheated oven for 30 to 35 minutes, or until chicken is cooked through and juices run clear. Pour corn onto chicken and stir to combine all ingredients, then bake for an additional 20 minutes.
  • Sprinkle remaining onions over all and bake for another 5 minutes, or until onions are golden brown. Let sit 5 minutes before serving.

1 cup uncooked long-grain rice
1 cup sliced celery
3/4 cup chopped onion
2 tablespoons butter or 2 tablespoons margarine, melted
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper
6 skinless chicken breast halves (I use bone-in)
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
2/3 cup mayonnaise or 2/3 cup salad dressing
1/4 cup milk
1 (16 ounce) can baby carrots, drained
paprika

Steps:

  • Prepare rice according to package directions.
  • Mix together the rice and next 6 ingredients; spoon into a lightly greased 13x9 inch baking dish.
  • Top with chicken breast halves.
  • In a small bowl, add the soup, mayo, and milk; stir to combine.
  • Spoon mixture over chicken breasts.
  • Bake, uncovered, at 350° for 45 minutes.
  • Take out of the oven, add carrots, and sprinkle with paprika.
  • Bake 15 more minutes.

This is really easy to make and with cream cheese and butter it's really rich. I have served after a funeral with tons of requests for the recipe. Because of the richness I have never made this for a dinner but always at a gathering. You could reduce the butter to 1 1/2 sticks with success, but why do it? It's really good this way. I have seen a couple other chicken casseroles using crackers, but none with all of these ingredients which really make this special. It looks really creamy, but it turns out great.

1 ½ pounds skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken and mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
2 (8 ounce) packages cream cheese, softened
1 (8 ounce) container sour cream
½ cup mayonnaise
4 tablespoons all-purpose flour
2 (16 ounce) packages buttery round crackers (such as Ritz®), crushed
1 cup butter
1 tablespoon poppy seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish lightly with cooking spray.
  • Bring a large pot of salted water to a boil. Add chicken breasts and boil until no longer pink in the centers, about 20 minutes. Let cool enough to handle; shred with 2 forks.
  • Mix condensed soups, cream cheese, and sour cream together in a large bowl.
  • Mix mayonnaise and flour together in a separate bowl; add to cream of chicken mixture. Mix in shredded chicken thoroughly. Spread into the prepared baking dish.
  • Bake in the preheated oven until golden, 30 to 40 minutes. Remove; leave the oven on.
  • Place crackers and butter in a pan over low heat. Cook until golden, about 10 minutes. Place on top of chicken mixture and sprinkle with poppy seeds.

1 large egg
1 tablespoon water
3/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese

1 lb pizza dough
AP flour, for dusting
¾ cup ranch dressing, divided
2 ¾ cups shredded low-moisture mozzarella, divided
1 cup thick cut bacon, cooked, chopped
2 cups cooked chicken, cut into 1/2-inch pieces
thinly sliced chive, optional

Steps:

  • Preheat the oven to 400˚F (200˚C). LIne a baking sheet with parchment paper.
  • Use a knife or bench scraper to divide the dough into 4 equal pieces (about 4 ounces each). Lightly dust a clean surface with flour, then use a rolling pin to roll one portion of dough out to a roughly 7 x 10-inch rectangle (it doesn't need to be perfect) with a shorter end closest to you.
  • Use a spoon to spread about 2 tablespoons of ranch dressing over the center of the dough rectangle, leaving a 2-inch border around the edges. Sprinkle ½ cup of mozzarella over the ranch dressing, followed by ¼ cup of bacon, then ½ cup chicken. Sprinkle another tablespoon of mozzarella and chives on top, if desired.
  • Gently lift one of the longer sides of the dough up and over the filling, trying to wrap it as far over the filling as possible. Tuck a short end up and over the filling, as if rolling a burrito, and repeat with the other short end. Lift the other long side of dough up and over the filling as tightly as possible without tearing the dough, then lightly pinch and press the edges of the dough together to seal. Set the chicken bake seam-side down on the prepared baking sheet and repeat with the remaining ingredients to make 3 more chicken bakes.
  • Use a pastry brush to generously brush the remaining ranch dressing over the tops of the chicken bakes, then sprinkle each with 1-2 tablespoons of mozzarella.
  • Bake the chicken bakes until the tops are golden brown and bubbly and the dough has puffed up, 15-18 minutes. Let cool on the baking sheets for 5-10 minutes before serving.
