What a deliciously cheesy hash brown casserole. A potato lovers dream! They're creamy and tart with a bit of sweetness from the oven. A crunchy Corn Flake top puts it over the top. So simple to make, it would be a great breakfast or dinner side dish.

Number Of Ingredients 9

1 bag(s) frozen hash brown potatoes (2 lbs)
2 c shredded cheddar cheese
1/2 c melted butter
1 1/2 tsp salt
1 small onion (chopped)
1 can(s) cream of chicken or cream of mushroom soup, 10.75 oz.
1 c sour cream
2 c crushed Corn Flakes
1/4 c melted butter

Steps:

  • 1. As mentioned above, thaw hash browns (or use refrigerator style hash browns).
  • 2. In a large bowl, mix together hash browns, cheddar cheese, 1/2 cup melted butter, salt, onion, soup, and sour cream. Stir until evenly mixed.
  • 3. Spray a 9 x 11 or 9 x 13-inch pan or casserole dish with Pam or lightly grease the dish. This helps with clean up.
  • 4. Pour mixture from the bowl into the pan and spread evenly with a spoon. Do not pack down tightly.
  • 5. In a small bowl, mix together Corn Flakes and 1/4 cup melted butter. Mix together and spread on top of casserole.
  • 6. Bake at 350 degrees F for 45 minutes without a lid. The top should be lightly browned when done.

3 cups frozen sliced carrots, optional

Steps:

  • In a large bowl, combine the first five ingredients. Stir in the ham, hash browns and carrots if desired. Transfer to a greased 13-in. x 9-in. baking dish. , Cover and bake at 350° for 45-50 minutes. Uncover; bake 15-20 minutes longer or until bubbly.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions, white and green parts
1/2 pound smoked ham slices, 1/2-inch diced

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley, scallions and ham. Reheat on top of the stove or over a hot charcoal grill.
  • Cook's Note: Use any leftover potatoes in Potato Basil Frittata (see recipe) for lunch.
  • You can peel and dice the potatoes early and keep them in the refrigerator in a bowl of cold water. Drain them and dry them well with paper towels before frying.

1 package (32 oz.) frozen cubed hash brown potatoes, thawed
1 lb. Velveeta, cubed
2 cups sour cream
1 can (10 3/4 oz.) condensed cream of chicken soup, undiluted

3 tablespoons chopped onion
1/4 teaspoon paprika
2 cups cornflakes, lightly crushed

Steps:

  • In a large bowl, combine the hash browns, cheese, sour cream, soup, 1/2 cup butter and onion. Spread into a greased 13x9-in. baking dish. Sprinkle with paprika. Combine cornflakes and remaining butter; sprinkle on top. Bake, covered, at 350° until heated through, 40-50 minutes. Uncover, bake until top is golden brown, 10 minutes longer. If desired, garnish with savory. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking.
