We like to eat healthy when we can without sacrificing taste. This is our way of indulging once in while. It also works great to make ahead for company!!

1 lb cinnamon raisin bread, cubed
3/4 c dried cranberries
1 pt egg substitute
4 c skim milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 pkg al fresco country style chicken breakfast sausage, sliced into rounds
confectioners' sugar

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
  • 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
  • 3. Pour the egg mixture over the bread cubes.
  • 4. Stir and press the bread cubes into the egg mixture to coat.
  • 5. Refrigerate for 1 hour or overnight.
  • 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3/4 cup mayonnaise
1/2 cup milk
3 tablespoons honey
2 tablespoons Dijon mustard
4 cups cubed fully cooked ham or cubed cooked chicken
1 package (26 ounces) frozen shredded hash brown potatoes
3 cups frozen sliced carrots, optional

Steps:

  • In a large bowl, combine the first five ingredients. Stir in the ham, hash browns and carrots if desired. Transfer to a greased 13-in. x 9-in. baking dish. , Cover and bake at 350° for 45-50 minutes. Uncover; bake 15-20 minutes longer or until bubbly.

1 medium onion, chopped
1 (16 ounce) can whole tomatoes, undrained
3 lbs country-style pork ribs
3/4 cup firmly packed brown sugar

Steps:

  • Spread sauerkraut evenly in a 13- x9- x2-inch baking dish. Top with onion, tomatoes, and ribs. Sprinkle with brown sugar.
  • Cover and bake at 325 degrees Fahrenheit for 2 hours and 15 minutes. Uncover and bake an additional 45 minutes or until meat is tender. Serve with a slotted spoon.

One of our family favorites. Is a good way to get my boys to eat vegetables. My husband went to a small country school in Australia for primary school, Ballendella, in Rochester, Vic. The school just closed this last year. This recipe is from a cookbook the school put out in 1991.

2 -3 lbs chicken pieces
1/2 cup seasoned flour
1 tablespoon butter
1 onion
2 carrots
1 parsnip
7 ounces mushrooms, drained
4 slices bacon
2 (10 3/4 ounce) cans campbells condensed chicken vegetable soup

Steps:

  • Coat the chicken with seasoned flour. I use Kentucky Kernel flour. Melt the butter in large fry pan and brown the chicken pieces. Transfer to a 9x13 baking dish.
  • Peel and slice the onion, chop parsnip, and carrot.
  • Chop the bacon and add to pan that cooked the chicken. If too greasy drain off some grease. Cook bacon for a few minutes on its own.
  • Add above vegetables to bacon and cook 5 minutes, making sure bacon is cooked. Add mushrooms at end of 5 minutes. I find they spit if you add with rest of vegetables.
  • Add soup and bring to a boil. Add T parsley.
  • Remove from heat and pour over chicken.
  • Cover and bake in 350 degree oven for 1 hour.

⅓ cup roasted red peppers, drained and chopped
1 cup bread crumbs
2 tablespoons melted butter

Steps:

  • Heat oven to 350 degrees F. Coat 11x7 baking dish with nonstick cooking spray.
  • In a large bowl, whisk together soup, sour cream and salt. Stir in Hash Browns, onions, cheese and red peppers until well mixed. Spoon evenly into baking dish.
  • In a medium bowl, mix together breadcrumbs and butter. Sprinkle evenly on top of Hash Brown mixture.

Rich, hearty and stick to your ribs! This is a meal for a cold night and can be made the day before and re-heated (which allows the flavours to develop). Serving with a bread is greatly recommended to sop up all the gravy from the plate. You may need more than one slice :)

2 lb stewing beef, chopped
1 onion, chopped
2 large carrots, peeled and chopped
4 large potatoes, peeled and chopped
1 medium sized sweet potato, peeled and chopped
1 tsp minced garlic
1 can cream of mushroom soup
1 sachet french onion soup mix
1 Tbsp worceshire sauce
1 c water
3 celery stalks, chopped
1 c frozen peas or frozen green beans
1 Tbsp gravy base mixed to a thin paste with 3 tablespoons water

Steps:

  • 1. In a casserole dish add everything EXCEPT the gravy base and peas/beans. Bake in a 300oF/150oC oven for 2 hours stirring once.
  • 2. After two hours, add the gravy mix as per the ingredients and peas. Stir well and bake for a further 10 minutes.
  • 3. Serve with crusty bread and butter and a green salad.

2 pound(s) pkg oreida potatoes o'brien (thawed)
1 can(s) cream of mushroom soup
1 stick(s) butter (melted)
1 package(s) shredded velveeta cheese
1 small container of sour cream
1/2 teaspoon(s) salt
pinch(es) black pepper
1 package(s) crushed ritz or towne house crackers

Steps:

  • Preheat oven to 350 degrees. Grease or spray oblong casserole dish.
  • Spread thawed potatoes on bottom of casserole dish evenly. Sprinkle salt and pepper over potatoes.
  • In a mixing bowl, combine soup, butter and sour cream and mix well. Pour mixture over potatoes.
  • Layer shredded cheese over mixture and cover top with crushed crackers.
  • Bake for about 45 minutes or until top is golden brown and bubbly. Let set for 10 to 15 minutes before serving.
