1/2 red onion (, finely diced)
1 1/2 tbsp red wine vinegar ((Note 2))

1/2 tsp Dijon mustard
3/4 tsp mixed dried herbs ((Note 3 sub))
1/2 tsp white sugar ((optional))

Steps:

  • Shake Dressing in a jar.
  • Cucumber: Trim ends then slice about 3 mm/ 1/8" thick.
  • Place in bowl with red onion.
  • Pour over Dressing, toss gently and serve immediately.

2 tablespoons chopped fresh herbs
1 tablespoon honey

  • Whisk together the lemon juice, herbs, honey and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple of turns of freshly ground black pepper.

3 tablespoons red wine vinegar

1 clove garlic, minced

2 yellow squash, halved lengthwise

1 large red bell pepper, cut lengthwise into 4 sections and seeded
1 large red onion, sliced thickly
¼ cup olive oil, or as needed

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk shallot, red wine vinegar, white balsamic vinegar, garlic, lemon juice, Dijon mustard, parsley, chives, cilantro, and dill together in a large bowl. Slowly stream olive oil into the mixture while whisking vigorously until the oil is incorporated into a smooth and creamy dressing.
  • Arrange asparagus, corn, zucchini, yellow squash, green onions, bell pepper, and red onion onto baking sheets. Brush olive oil onto all the vegetables to coat; season with salt and pepper.
  • Cook vegetables directly on preheated grill, turning frequently, until slightly charred and just tender, about 5 minutes for green onions, 8 minutes for asparagus, zucchini, yellow squash, bell pepper, and red onion, and 10 minutes for corn. Remove vegetables to the baking sheets used for preparation and cool.
  • Cut asparagus, green onions, zucchini, yellow squash, and red bell pepper crosswise into 1-inch pieces and put into a large bowl. Quarter red onion slices; add to bowl. Cut corn kernels from cobs; add to bowl. Let vegetables cool to room temperature.
  • Drizzle vinaigrette over the vegetable mixture and toss to coat.

2 ounces cucumber, peeled, seeded, and cut into long rounds
4 celery stalks, cut into thirds lengthwise and then crosswise into 2 inch lengths
8 ounces yellow squash, julienned
4 whole carrots, scooped into small balls with the small side of the melon baller
2 tomatoes, chopped
2 ounces diced red onion
Herb Vinaigrette, recipe follows
2 large corn tortillas
Vegetable oil, for frying
Salt and freshly ground black pepper
4 tablespoons white wine vinegar
2 tablespoons peeled fresh garlic
8 tablespoons freshly squeezed lemon juice
4 tablespoons chopped lemon zest
4 tablespoons chopped fresh herbs (parsley, basil, marjoram, thyme)
1/2 teaspoon salt
2 cups extra-virgin olive oil
2 teaspoons Dijon mustard
Freshly ground black pepper

Steps:

  • To make the salad: rinse the lettuce in chilled water. Remove from water, wrap in damp paper towels and refrigerate.
  • Marinate the cucumber, celery, squash, carrots, tomatoes, and onions, separately, with the herb vinaigrette. Cover each, and refrigerate for 30 minutes.
  • Slice the tortillas into 4-inch long, thin, triangular strips.
  • In a large pan, add 1/2-inch of oil and heat. When the oil is hot, fry the tortillas until they are crisp. Remove to a paper towel-lined plate, season, and let cool.
  • Place the lettuce in a large bowl. Add the marinated vegetables and toss with some more of the Herbed Vinaigrette. Season with salt and pepper. Top with the crispy tortilla strips.
  • To make the dressing: in a small food processor, combine all ingredients and blend for 45 seconds to 1 minute until emulsified.

1 lb cauliflower
3/4 lb small red potato
1 large crisp apple (1/2 lb. or so)
8 small radishes (about 6 ounces)
1 cup red onion, 1/4-inch dice
8 ounces imported italian asiago cheese, rind removed, cut in 1/4-inch cubes
1/2 cup toasted coarsely chopped walnuts
1 teaspoon kosher salt
1/4 cup extra-virgin olive oil
3 tablespoons cider vinegar
1 tablespoon chopped fresh Italian parsley

Steps:

  • Fill a pot or saucepan with 3 quarts water, and heat it to boiling.
  • Tear off any tough leaves at the base of the cauliflower and cut out the core; break or cut the large branches in to small florets, drop them into the boiling water, and cook until tender, about 5 minutes.
  • Lift from water, and drain well in a colander; when cool, put the florets in a large bowl.
  • As soon as the cauliflower is out of the pot, return the water to a boil and drop in the potatoes; cook them at a gentle boil just until a knife blade pierces the center easily--don't let them get mushy.
  • Drain and briefly cool the potatoes; peel them while still warm, cut into 1/4-inch dice, and put them in the serving bowl with the cauliflower.
  • Peel and core the apples; cut into 1/4-inch dice, and add to the salad bowl.
  • Trim the radishes, quarter them in wedges, and drop into the bowl along with the diced onion, cubes of Asiago, and toasted walnuts.
  • Sprinkle the salt over the salad pieces and toss; drizzle the olive oil and vinegar over the salad and toss; sprinkle on the parsley and toss once more, and serve.

2/3 cup sugar
1 tablespoon ground star anise
2 tablespoons ground coriander seed
1/2 teaspoon cayenne

2 cups shelled walnut halves
For the salad
1 pound mixed lettuces, washed and dried
1/4 cup Aged Sherry-Walnut Vinaigrette

Steps:

  • Make the spiced walnuts:
  • Preheat oven to 350°F. In a medium bowl, stir together the sugar, spices, and salt. Toast the walnuts lightly on a sheet pan in the oven, for about 4-5 minutes. While the nuts are toasting, heat the spiced sugar in a 10-inch skillet over medium heat. When the sugar just begins to melt around the edges, toss in the warm nuts, straight from the oven. Shake the pan vigorously over the burner until all the nuts are coated in sugar - it will cling in somewhat uneven patches, but that is the effect I like. Pour the nuts onto a plate or baking sheet to cool - don't be tempted to try one until they have really cooled down, since sugar at this temperature will give you a burned tongue to remember!
  • Make your salad:
  • Toss the salad greens with the spiced walnuts and the vinaigrette and top with a generous slice of ham and 1 ounce of cheese per person, according to the seasons (see Weighing Your Options).

1 small shallot
1/4 cup fresh parsley, loosely packed
1 small sprigs fresh tarragon
3 fresh basil leaves
1 sprig rosemary, stem removed
3 tablespoons white wine vinegar
1 tablespoon light agave nectar
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2 teaspoons dijon-style mustard
1/2 cup safflower oil (or olive oil)
1/2 English cucumber, cut into 1/4-inch thick half moons
2 heads romaine lettuce, roughly chopped
1/2 vidalia onion, finely diced
1 kohlrabi, peeled and finely diced

Steps:

  • Mince the garlic and shallot in a food processor. Scrape down sides and the add parsley, tarragon, basil and rosemary. Pulse to chop.
  • Add the vinegar, agave nectar, salt, pepper, mustard, and 1 tbls. water. Pulse again. With the machine running, slowly pour in the oil in a thin stream.
  • Place the cucumber, lettuce, onion, and kohlrabi in a large bowl. Drizzle with vinaigrette and toss to coat. Enjoy!

I've been looking for more salad ideas for the summer, and this one from Cooking Live on the Food Network got my attention! Just your basic spinach salad.

2 tablespoons red wine vinegar or 2 tablespoons sherry wine vinegar (or a combination)
1 clove garlic, peeled
salt
6 tablespoons extra virgin olive oil
pepper
3/4 lb salad greens, about

Steps:

  • Measure the vinegar into a small bowl.
  • Crush the garlic clove and add it to the vinegar, along with 1/2 teaspoon salt.
  • After 10 minutes or so, whisk in the olive oil and a little freshly milled pepper.
  • Taste and adjust the seasoning.
  • Make the vinaigrette no more than a couple of hours before serving.
  • Pick over the salad greens, discarding any tough outer leaves, or any that are wilted or blemished.
  • (If you are using young head lettuces, trim the root ends with a sharp paring knife to free the leaves.) Fill a large basin with cold water and gently submerge the greens, allowing sand and grit to sink to the bottom.
  • Lift the lettuces from the water and drain them in a colander, then dry them in a salad spinner.
  • Wrap the leaves in clean cotton toweling and refrigerate in an airtight container.
  • To serve, put the greens in a wide salad bowl and season with a small pinch of salt.
  • Remove the garlic clove, whisk the vinaigrette, toss the greens lightly with just enough dressing to make the leaves glisten.
  • (Your hands make the best salad-tossing tools.) Serve immediately with garlic toast or croutons.

juice ½ lemon
3 tbsp olive oil
1 heaped tbsp capers
2 spring onions , finely sliced
1 head Lollo Rosso lettuce
1 Baby Gem lettuce

Steps:

  • Cook the eggs in a pan of boiling water for exactly 8 mins. Lift from the pan, cool under the cold tap, then peel and halve.
  • Whisk together the lemon juice, olive oil, capers and spring onions. Toss together most of the dressing with the leaves. Place on a serving dish, top with the halved eggs and drizzle over the remaining dressing. Serve on its own or with slices of ham.

1 tablespoon champagne vinegar
1 tablespoon grainy Dijon mustard
Coarse salt and freshly ground pepper
3 to 4 tablespoons extra-virgin olive oil
1/2 cup walnut halves, toasted and finely chopped
8 cipollini onions (about 4 ounces), peeled and halved if desired
1/2 cup balsamic vinegar
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter
1 medium apple (preferably Golden Delicious), cored and cut into 1/2-inch-thick slices
8 slices French cooked ham or boiled ham
1 head Bibb or Boston lettuce, leaves separated
3 ounces Gruyere cheese, thinly sliced
8 slices rustic bread, for serving

Steps:

  • Make the dressing: Whisk champagne vinegar, mustard, and 1/2 teaspoon salt in a medium bowl. Gradually add oil, whisking until emulsified. Stir in walnuts. Season with pepper. Set aside.
  • Stir onions, balsamic vinegar, and 1/2 teaspoon salt in a skillet; season with pepper. Bring to a boil. Reduce to a simmer. Cook, stirring occasionally, until onions have absorbed most of the liquid, 8 to 10 minutes. Drain. Let onions cool.
  • Melt butter in a medium skillet over medium-high heat. Add apple; cook, flipping once, until just beginning to brown and soften, 1 to 3 minutes per side. Remove from heat; set aside.
  • To serve, arrange 2 slices of ham on each of 4 plates. Toss lettuce with dressing; divide among plates. Arrange cheese and apple slices on top, evenly dividing among plates. Garnish each plate with 2 onions. Serve with bread.
