For the Crust:
1 1/2 cups (7 1/2 ounces) all-purpose flour
1/8 teaspoon baking powder
3 ounces cream cheese (chilled, cubed)
8 tablespoons (1 stick) unsalted butter (chilled, cubed)
2 tablespoons heavy cream
1 teaspoon vanilla extract
1 1/2 teaspoons apple cider vinegar
For the Filling:
2 medium eggs, beaten
2 tablespoons all-purpose flour
1 cup (about 7 ounces) white sugar
2 cups cottage cheese
1/2 teaspoon zest and 2 teaspoons fresh juice from 1 lemon
1/4 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • For the Crust: Pulse flour, pinch of salt, and baking powder in a food processor until combined, about 10 short pulses. Add cream cheese and pulse until coarsely incorporated, about 8 short pulses. Add butter cubes and pulse until dough forms pea-sized balls, about 8 short pulses. Add cream, vanilla, and vinegar and continue to pulse until dough pulls away from sides, 8 to 12 short pulses. Transfer dough to a large sheet of plastic wrap and shape into a 1/4-inch thick disc. Cover with plastic wrap and refrigerate for at least 2 hours and up to 3 days. Remove from refrigerator and press into a 9-inch pie plate, using fingertips to form an even layer.
  • To Assemble: Adjust oven rack to center position and preheat oven to 350°F (180°C). Whisk together eggs, flour, and sugar using an electric handheld mixture until smooth. Fold in cottage cheese, lemon zest and juice, heavy cream, and vanilla extract. Pour into prepared pie shell. Bake until set in the middle, about 40 minutes. Let cool slightly and serve.

1/2 cup graham cracker crumbs
2 cups 4% cottage cheese
2 packages (8 ounces each) cream cheese, softened
1 cup sugar
4 large eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup all-purpose flour
2 cups sour cream

Steps:

  • Sprinkle the crumbs over the bottom and up the sides of a greased 10-in. springform pan. In a blender or food processor, puree cottage cheese; set aside. , In a bowl, beat cream cheese and sugar. , Add eggs, one at a time, beating well after each addition. Beat in lemon juice, vanilla, flour, sour cream and pureed cottage cheese. , Pour into pan. Bake at 325° for 60-70 minutes. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan; cool 1 hour longer. Refrigerate overnight. Slice with a wet knife.

COTTAGE CHEESE GERMAN STYLE

Growing up we had a neighbor from Germany that used to make this. What makes this unusual is the preparation. I don't know what it's called, but I know she used it as a dip & a dressing. It's great as a topping for baked potatoes, or with raw veggies, good bread etc. She'd have it in the evening as a snack with her glass of wine that she put Sweet Woodruff (a flower/ground cover she grew in her garden) leaves in, (also a German tradition). This is really nice to have on hand. Her original recipe called for MSG, which I omit. You can put in any amounts of your favorite seasonings, I think she just added her favorites or whatever she was in the mood for. However the caraway seeds are a desirable flavor addition which demand that this sits a bit to soften the seeds. Otherwise, it could be used right away, or kept on hand in the fridge through the week. You can also add green onion, or anything else that strikes your fancy.

1 1/2 teaspoons caraway seeds
1 teaspoon garlic powder or 1 teaspoon garlic salt
1 teaspoon lemon pepper
1/2 teaspoon ground black pepper
1 teaspoon dill weed
1 teaspoon instant minced onion (or more of fresh)
1/2 teaspoon celery seed

Steps:

  • Put 1/4 of the cottage cheese into a wire strainer, & with a spoon press the cottage cheese through the strainer into a bowl, proceed until you have pressed all of the cottage cheese through the strainer.
  • Add your herbs & spices.
  • Let set covered in the refrigerator for an hour or two or until the caraway seeds have softened.

1 ½ cups white sugar
2 tablespoons cornstarch
3 tablespoons all-purpose flour
2 (8 ounce) packages cream cheese, softened
1 pound small curd cottage cheese
½ cup butter, softened
4 medium eggs
1 ½ tablespoons lemon juice
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease the bottom and halfway up the sides of a 9 inch springform pan. Mix together the sugar, cornstarch, and flour and set aside.
  • Combine the cream cheese and cottage cheese; beat with an electric mixer at high speed until smooth and fluffy. Beat in the softened butter. Gradually add the sugar mixture, beating until combined. Add the eggs one at a time, blending well and scraping down the bowl after each addition. Stir in the lemon juice and vanilla and mix just until smooth.
  • Pour the batter into the prepared pan and bake for 1 hour and 10 minutes. Turn off the oven and let the cheesecake rest in the oven with the door closed for 2 hours. Remove and cool on a wire rack. Chill for 4 hours or overnight.

1 tablespoon beef bouillon granules
2 teaspoons onion salt

1 can (14-1/2 ounces) chicken broth
1 pound smoked kielbasa or Polish sausage, chopped
2 large eggs
1-1/2 cups 4% small-curd cottage cheese
9 lasagna noodles, cooked and drained
1 jar (16 ounces) sauerkraut, rinsed and squeezed dry
2 cups shredded Monterey Jack cheese, divided

Steps:

  • In a large saucepan, melt butter. Stir in the flour, bouillon, onion salt, 1 teaspoon pepper and white pepper if desired until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add sausage; heat through. Combine the eggs, cottage cheese and remaining pepper. , Spread 1 cup sausage mixture in a greased 13x9-in. baking dish. Layer with three noodles, a third of the sausage mixture, half of the cottage cheese mixture and sauerkraut and 3/4 cup Monterey Jack. Repeat layers. 16 oz large curd cottage cheese
1 c white sugar or splenda
3 Tbsp all purpose flour
1 tsp lemon juice, fresh
1 pinch salt
3 egg yolk
3 egg white
2 can(s) evaporated milk (12 oz)
2 tsp pure vanilla extract
cinnamon
2 9 inch pie crust shell (i use deep dish)

Steps:

  • 1. Place cottage cheese in a strainer and let drain about 20 minutes or until most of the liquid is drained.
  • 2. Preheat oven to 425 degrees
  • 3. In a large bowl combine cottage cheese, sugar (or Splenda), flour, lemon juice, vanilla, salt, egg yolks, & evaporated milk. Mix well
  • 4. In a separate bowl beat egg whites with an electric mixer until firm. Fold firm egg whites into the batter until smooth.
  • 5. Pour batter into pie crusts and sprinkle with cinnamon. Use a little or a lot depending on your taste. I use a lot.
  • 6. Bake for 15 minutes at 425 degrees, then reduce oven to 350 degrees and bake for an additional 35 - 40 minutes or until knife inserted in the center of each pie comes out clean.
  • 7. Cool on racks, then refrigerate. Flavor improves if served a day after baking.

1 large egg

1 cup sugar, Granulated
4 large eggs
1/2 teaspoon lemon, rind of, Grated
1/2 teaspoon vanilla extract, Real only
1 cup sour cream
1 cup raisins

Steps:

  • CRUST: In a large mixing bowl, blend all the ingredients, cutting in the butter and working the mixture with your hands until it is well mixed and workable.
  • Divide the dough into 2 equal portions.
  • Use one half to line the bottom of a greased 9-inch springform pan, the other half to line the sides of the pan.
  • Either roll out the dough or press it in with your fingers.
  • Chill before filling.
  • CHEESECAKE: Preheat the oven to 375 degrees F.
  • Press the cottage cheese through a sieve.
  • Combine the cornstarch and the baking soda and set aside.
  • In a large mixing bowl, combine the cottage cheese with the sugar, eggs, lemon rind and vanilla.
  • Beat until very smooth.
  • Add the dry mixture to the cheese and blend well.
  • Stir in the sour cream and raisins.
  • Pour the cheese mixture into the prepared crust and bake for one hour, or until done.
  • The center will remain soft.
  • Turn off the oven and prop the door open.
  • Allow the cake to cool to room temperature.
