A delicious and versatile shredded chicken salad recipe that tastes so much like Costco's. Great for baby and bridal showers, picnics, meal prep, it's naturally Whole30, paleo, and low carb friendly.

3 pounds boneless skinless chicken breasts (or 2 ¼ pounds cooked chicken, see Notes)
1 32-ounce carton chicken broth (or chicken stock)
1 ¼ cup mayonnaise (plus more to taste)
2 cups finely diced celery
¾ cup finely minced sweet onion
1 teaspoon freshly ground black pepper (or use 2 teaspoons Everything Seasoning, see Notes)
1 ½-2 teaspoons salt

Steps:

  • Cook the chicken: place the chicken breasts in a wide skillet and cover with chicken broth. Bring to a boil then reduce heat to a simmer; cover and cook about 20-25 minutes or until chicken breasts are cooked through and reach 160º F internally. Remove from skillet but reserve broth.Alternately, use 2 ¼ pounds (36 ounces) cooked chicken with the skin removed.
  • Shred the chicken using your selected method from Notes.
  • Place all ingredients but chicken broth in a large bowl (mayonnaise, celery, sweet onion, salt, and black pepper) and stir together.
  • Add chicken broth, 1 tablespoon at a time, to the mixture until the desired texture and creaminess is reached. I use about 4-6 tablespoons of chicken broth. Add more mayo to taste, if desired.

Rotisserie chicken (1/2 bird)
1 cup sour cream
1/2 cup mayo
4 stalks celery, chopped finely
1/3 cup sweet onion, chopped finely
Salt 1 teaspoon
Sugar 1 teaspoon
1 tablespoon Lemon juice
1 teaspoon Parsley
White vinegar - 1 tbsp

Steps:

  • 1. Remove chicken from the bones - remove the skin as well (not great in this salad) 2. You will use about 1/2 of the chicken from a Costco rotisserie chicken. You want to chop it up finely - I used a food chopper, and it worked great. 3. Chop celery and sweet onion very finely - again, I used a food chopper. 4. In a separate bowl, mix together mayonnaise, sour cream, salt, sugar, lemon juice, parsley, and vinegar. 5. Combine chicken, celery, and onion in a large bowl. 6. Fold in the dressing and combine together. 7. Refrigerate a few hours for best results!

Make a homemade version of the famous Costco Chicken Salad, but without any of the preservatives or questionable ingredients. This easy shredded chicken salad is great served on top of lettuce or toast. This recipe is gluten-free with dairy-free options.

1 3-pound cooked rotisserie-style chicken, cooled and pulled apart into medium-sized pieces, bones and skin removed
½ cup mayonnaise
½ cup sour cream (for dairy-free diets, use a dairy-free version)
2 tablespoons white wine vinegar
½ lemon, juiced (about 1 tablespoon)
½ teaspoon sea salt
2 teaspoons sugar (leave out for sugar-free diets)
6 celery ribs, finely diced
½ white onion, finely diced

Steps:

  • Place the cooked and cooled chicken in a food processor fitted with the "S" blade. Turn it on for about 15-20 seconds to shred the chicken. Or, you can also just use a sharp knife to finely chop the chicken for the salad. The Costco version is finely shredded.
  • Place the finely shredded or chopped chicken in a large mixing bowl. Set aside.
  • Then, in a medium bowl, combine the mayonnaise, sour cream, vinegar, lemon juice, onion, salt, and sugar. Stir to combine until smooth.
  • Pour the mayonnaise mixture over the chicken. Add the celery and onion and stir to combine.
  • Serve immediately, or cover and chill until you're ready to serve.
