3 cups all-purpose flour
1-1/2 teaspoons salt
3/4 teaspoon baking powder
1 cup shortening
8 to 10 tablespoons ice water
FILLING:
1 pound beef top round steak, cut into 1/2-inch pieces
1-1/2 cups finely chopped onion
1-1/2 cups cubed peeled potatoes (1/2-inch cubes)
1-1/2 cups chopped peeled turnips (1/2-inch cubes)
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter
1/2 cup evaporated milk, optional
Ketchup

Steps:

  • In a large bowl, mix flour, salt and baking powder; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes., Preheat oven to 375°. In another large bowl, combine beef, onion, potatoes, turnips, salt and pepper. Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 9-in. circle. Mound 1-1/2 cups filling on half of circle; dot with 1 tablespoon butter. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Place on a parchment-lined rimmed 15x10x1-in. baking pan. Repeat with remaining dough, filling and butter. Cut slits in tops of pasties. Bake 50-60 minutes or until golden brown. (If desired, pour milk into slits halfway through baking time.) Serve with ketchup., Freeze option: Freeze cooled pasties in a freezer container. To use, reheat pasties on a parchment-lined baking sheet in a preheated 375° oven until heated through.

1/2 pound ground beef
2 tablespoons all-purpose flour
1/2 to 1 teaspoon seasoned salt
1 tablespoon minced fresh parsley
1 teaspoon beef bouillon granules
1/4 cup water
1 cup diced peeled potatoes
1/2 cup diced carrots
2 tablespoons finely chopped onion
2 packages (11 ounces each) pie crust mix

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add flour, seasoned salt and parsley; stir until well coated. Dissolve bouillon in water; stir into meat mixture. Add potatoes, carrots and onion. Cover and cook over medium heat until vegetables are crisp-tender. Cool. , Meanwhile, prepare pie crusts according to package directions. On a floured surface, roll each pie crust into a 12-in. square. Cut each square into four 6-in. squares. Place about 1/3 cup meat mixture in center of each square. , Moisten edges of pastry with water and fold over meat mixture to form a triangle. Press the edges with a fork to seal. Make a 1-in. slit in the top of each triangle. Place on 2 ungreased baking sheets. Bake at 400° until golden brown, 20-25 minutes.

PASTY PASTRY FOR CORNISH MINERS' PASTIES



Pasty Pastry for Cornish Miners' Pasties image

This goes with Recipe #230311 and makes the most outstanding pastry crust ever! Lard is the preferred "shortening" and closest to the "original" recipe. But regular shortening will work, too. Although butter would make it very rich, I've NEVER used butter in this. The crust is very light and flakey--but sturdy enough to hold the pasty ingredients; turns a beautiful golden-brown when brushed with milk prior to baking. This recipe can also be used for quiches (weighted down with beans) and pies.

3 cups flour
1 1/2 teaspoons salt
3/4 teaspoon baking powder
1 cup shortening or 1 cup lard
3/4 cup ice water (the colder the better!)

Steps:

  • Mix dry ingredients in mixing bowl.
  • Cut in shortening with a pastry blender until the mixture resembles coarse crumbs.
  • Add ice water a little at a time, tossing with a fork to make a pastry-like dough.
  • Add a bit more water if it seems dry and won't hold together when squeezed lightly.
  • Gather into a ball, press firmly now, then wrap with plastic wrap and chill while preparing the pasty ingredients (see Recipe # ).
  • Roll dough out on a lightly floured surface (or on top of a piece of plastic wrap which can easily be folded over and then peeled off once the pasty ingredients are loaded).
  • Edges of pasty should be brushed with a smidgen of water and then crimped VERY firmly with a fork (and I fold them and crimp again -- so none of the liquid seeps out).
  • Brush tops of finished pasties with milk to enhance the crust (it will bake to a beautiful golden brown).
  • NOTE: Like pastry dough, pasty dough should be handled as LITTLE as possible to ensure flakiness. So, *handle with care* !

AUTHENTIC CORNISH PASTIES



Authentic Cornish Pasties image

This is a delicious, simple pasty (pronounced "pass-tea" ) recipe. No gravy is needed, as it makes its own. The crust is sturdy but good. These have no turnips or swedes; you can add them if you like. My husband hates them, so I leave them out. Prep time is estimated, as I've never paid attention to how long it takes. Note: if measuring the flour by volume rather than weight, be sure to stir it first, or you will end up with too much flour, and thus a tough, dry crust.

1 medium potato, peeled and cut into 1/4 inch dice
1 medium onion, finely chopped
1/2 lb chuck or 1/2 lb round steak, cut into 1/2 inch cubes
salt & pepper
1 pinch dried thyme (optional)
8 ounces flour (scant 2 cups)
2 ounces cold butter, diced
2 ounces vegetable shortening or 2 ounces lard, chilled and diced
cold water (add ice cubes to keep very cold)
1 eggs, beaten (to glaze) or 1 milk (to glaze)

Steps:

  • Preheat oven to 425* F.
  • Combine potato, onion, meat, and seasonings; mix together well.
  • Cut butter and shortening into flour in a bowl until mixture resembles fine crumbs. Add about 2 tablespoons cold water and mix with a fork to form a firm dough (add more water if necessary, until mixture just holds together).
  • Turn dough out onto a floured surface and knead lightly a few times. Cut into quarters, and roll each quarter out into a 6-7 inch circle. Trim by using a small plate placed over pastry and cutting around edge with a small, sharp knife.
  • Divide filling between each circle of pastry. Wet edges with water and fold pastry into a semi-circle, pressing edges together. Flute edges with fingers to form a tight seal.
  • Place pasties onto a baking sheet and brush with egg or milk. Bake at 425* F for 40-45 minutes, or until golden and heated through. May be served hot or cold.

4 cups all-purpose flour
1 cup vegetable shortening
6 tablespoons ice water (or more)
1 teaspoon salt
8 ounces lean ground beef
6 ounces boiling potatoes, peeled and cut into 1/2 inch dice
1 medium onion, finely chopped
4 -5 tablespoons beef gravy or 4 -5 tablespoons beef stock
1 teaspoon dried herbs (thyme, marjoram, sage)
salt and pepper
milk

Steps:

  • Combine ½ cup flour, shortening, 6 tbsp ice water and salt in large bowl and beat well with large whisk or wooden spoon.
  • Using fingertips, blend in remaining flour until mixture resembles coarse meal.
  • If too dry, add up to 2 tbsp more ice water, a few drops at a time.
  • Gather dough into ball.
  • Refrigerate at least 1 hour.
  • Combine beef, potatoes, onion and herbs and season generously with salt and pepper.
  • Stir in enough beef gravy to bind mixture.
  • Roll dough out on lightly floured surface to thickness of 1/8 of an inch.
  • Using 5-6 inch in diameter, round cutter, cut 10 circles.
  • Preheat oven to 400°F.
  • Lightly grease baking sheet.
  • Mound meat mixture lightly in center of each circle; brush border with milk; fold dough in half over filling, pinching edges together to seal.
  • Brush pastries with milk.
  • Arrange on prepared sheet.
  • Bake 10 minutes, reduce oven temperature to 340F and continue baking until pasties are light brown, about 45-50 minutes.
  • Serve hot or at room temperature.

These are SO good, I really should make them more than once a year! Upper Michigan (USA) has several small towns that were originally populated by Cornish miners who worked the mines there. Walking down Main Street in these towns will usually take you past a mom-n-pop cafe' where you can buy a pasty similar to this recipe. This makes 6 LARGE or 8 MEDIUM pasties--adjust the water** & butter depending on the size you choose. Recipe Recipe #230316 will complete your trip down a Cornwall Main Street.

Number Of Ingredients 13

1 lb ground beef (turkey or venison)
2 cups diced potatoes
2 cups diced carrots
1 cup diced turnip
1 medium onion, chopped
2 teaspoons salt
6 -8 tablespoons butter
6 -8 tablespoons water (see ** description)
2 tablespoons milk (more or less)
1 (10 ounce) can cream of mushroom soup (or leftover beef or chicken gravy)
0.5 (10 ounce) can milk
thyme, to taste
tarragon, to taste

Steps:

  • Prepare pastry according to Recipe #230316 , set aside; preheat oven to 350.
  • Mix meat, vegetables and salt in large bowl; divide into 6-8 portions; set aside.
  • Divide pastry into 6 (large) or 8 (medium) equal pieces; roll each into a large circle, about 1/4-inch thick.
  • On one half of each circle, place equal amount of meat-veg mixture.
  • Carefully lift and fold pastry over filling (half circle); moisten edges of pastry with water & pastry brush; use a fork to crimp the edges to prevent liquid (added later) from oozing out. If there is a thin edge of crust, fold it over on itself to make a nice crust.
  • Transfer each pasty to a large baking sheet (I use two).
  • With a paring knife, poke a hole straight into JUST the top crust, shaped like an X, each leg should be about a half-inch long, then fold the little corners back (like a flower).
  • Melt butter and water in the microwave; pour equal amounts into each pasty (through the little flower-hole you've created in the previous step).
  • More butter-water can be added about half-way through the baking, if you didn't use it all at this point.
  • Brush tops of pasties with the milk.
  • Pop it all into the oven; bake for one hour; tops should be GOLDEN BROWN (you won't be able to let them in there much longer anyway--as the aroma is BEYOND this world!).
  • Serve with gravy made from the soup & a bit of milk; add your favorite herbs (thyme & tarragon are our favorites); just heat the soup & milk, sprinkle in the herbs & spoon over the pasty or into the little hole.
  • ALSO -- you might want to let these "rest" for a few minutes before eating---the insides will be VERY hot!
  • TIPS ON EATING THESE: Miners would've carried these in a lunch pail (wrapped in a dishtowel!) -- we serve 'em on plates and slather on the gravy AFTER cutting them open to release the steam & heat; the crust is especially delish with the gravy!

2 tablespoons vegetable oil
2 carrots, peeled and diced small
1 medium onion, peeled and diced small
2 medium potatoes, peeled and diced small
2 to 3 cloves garlic, chopped
1 1/2 pounds ground beef
Salt and freshly ground black pepper
2 teaspoons Irvine Spices Jerk Seasoning
4 tablespoons tomato paste
3 sheets puff pastry dough (often sold in 17 or 18-ounce packages containing 2 (9 or 10-inch square sheets puff pastry)
3 eggs, beaten, for egg wash

Steps:

  • Heat oil in a skillet and saute the carrots, onion, potatoes, and garlic until al dente. Add ground beef and brown. Drain fat from pan and season with salt and pepper and jerk seasoning. Stir in tomato paste to bind mixture, and let cool.
  • Preheat oven to 375 degrees F.
  • Roll out puff pastry dough and, using a circle cutter, cut out 16 to 24 (3-inch) diameter dough circles and place on a lightly greased baking sheet. Place a spoonful of meat mixture on 1 side of each pastry circle. Fold each into a half-circle and seal edges by pinching the dough together. Brush surface of pastry with egg wash. Bake until golden brown, about 6 to 8 minutes.

In the 18th century it was a staple diet for working men, like Miners & Farm Workers, across Cornwall because of its size & shape, which was easy to carry around, the pasty protecting the the wholesome food...

filling:
3/4lb. chuck steak, lean
1 medium onion, chopped
1 medium carrot, chopped
2 large potatoes
2 Tbsp water or stock
salt & pepper
short pastry:
12oz. plain or self-raising flour (12 heaped tablespoons)
pinch salt
6oz. margarine
3 Tbsp water
beaten egg or milk to glaze

Steps:

  • 1. Pre-heat the oven to fairly warm - Gas Mark 6 : 400F/204C. Have ready a baking sheet & a plate or saucepan lid about 6 inches in diameter.
  • 2. Wipe the chuck. Steak with a clean, damp cloth, preferably muslin & cut into small pieces. Peel the potatoes & cut into small, diced pieces. Mix the chuck steak, potatoes, onion & carrot together in a mixing bowl with the water or stock & season well. Put to one side.
  • 3. Make the Short Pastry: Sieve the flour & salt into a mixing bowl. Rub in the margarine until it looks like fine bread crumbs. Mix in the water to form a firm dough.
  • 4. Roll out thinly & cut into round by placing the plate or saucepan lid on top the pastry & cut round with a pointed knife. Form the scraps into a ball & repeat. Place the filling in the centre of each round.
  • 5. Brush the pastry edges with water. Bring the edges up & over the filling & press gently together all round to seal. Flute the edges or fold & twist neatly with the finger tips.
  • 6. Place on the baking sheet & brush with beaten egg or milk. Bake in the pre-heated oven for 30 minutes; then turn the oven down to Gas Mark 3: 335F/168C & bake for a further 40-45 minutes.

1 recipe whole wheat pastry for a double crust
¼ cup butter
1 onion, thinly sliced
1 carrot, sliced thin
1 turnip, peeled and diced
1 large potato, peeled and diced
¼ pound mushrooms, chopped
2 tablespoons water
1 teaspoon yeast extract spread
¼ cup milk
1 egg
¼ pound shredded Cheddar cheese
salt and pepper to taste
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Divide pastry dough into four equal portions and roll each one out in a square shape. Set pastry aside to rest.
  • Place a large skillet over medium heat. Add butter or margarine and allow to melt. Add onion and saute for 5 minutes, until translucent and beginning to brown. Add carrot, turnip, potato, mushrooms, and water. Lower heat and cover skillet. Allow mixture to cook for 10 minutes, stirring occasionally.
  • In a small bowl, dissolve yeast extract in milk. Whisk in 1 egg. Stir this mixture into cooked vegetables. Continue to stir until mixture thickens. Add cheese, and salt and pepper to taste. Set aside to cool.
  • Place 1/4 of filling on one half of each pastry square. Fold pastry diagonally and seal edges. Brush tops of pastry with beaten egg.
  • Place pasties on a baking sheet and bake in preheated oven for 30 minutes, until pastry is golden brown.

I saw these made on television last night and the recipe really intrigued me. They were originally made by wives for their husbands to take to work out in the fields or mines. They are a whole meal-in-one pastry making them both sweet and savory. Maybe they are the original TV dinner LOL. The crust would be more authentic and tastier using lard, but taste better using the lard/butter combo. The wives would also make some of the pastry into letters and apply to the top of the clanger their husband's initials so they were easy to identify. They can be made with chicken as well.

2 cups all-purpose flour
1/2 teaspoon salt
1 cup lard (or 1/2 cup lard and 1/2 cup butter) or 1 cup shortening (or 1/2 cup lard and 1/2 cup butter)
1/2 cup cold water
1 tablespoon oil, plus

1 small onion, finely diced
2 garlic cloves, minced

1 rutabagas (a combination of the two is very good) or 1 potato, diced (a combination of the two is very good)
1/2 lb lean ground beef, and
1/2 lb ground pork (or 1 lb steak, cut in small pieces)
5 green onions, chopped
1/2 cup frozen peas
salt and pepper
1 cup fruit pie filling
1/4 cup butter
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F.
  • Pastry: Mix flour and salt in a large bowl. Cut in lard or shortening until mixture is crumbly. Stir in water, mixing just until dough forms a ball. Place dough in refrigerator and make filling.
  • Filling: Heat a large skillet over medium-high heat with the vegetable oil. Saute onions until soft. Add carrots, potatoes and/or rutabagas and saute for 10 minutes. Add Garlic and cumin, saute for 2 minutes.
  • Add ground beef, ground pork, and green onions to skillet. Saute until meat is just cooked through. Drain grease. Stir in frozen peas. Add salt and pepper to taste.
  • Divide dough into 6 portions and roll out each into 9" circles.
  • Divide the meat mixture between the pastry rounds and dot with some butter or margarine. At one end of the pastry add some of the fruit pie filling. Damp the edges, draw the edges of the pastry together to form a seam across the top and flute the edges with the fingers. Brush with milk.
  • Place on a baking sheet and bake in the oven at 400°F for 45 minutes or until top is golden brown.

The Coal Miner's Fast Food - Cornish Pasties image

Posted for Zaar World Tour. This is a recipe with deep and interesting historical significance... nothing says "Cornwall" more than the Cornish Pasty. It was the meal of choice for coal miners, as it was a ultimate own pre packaged "fast food" of it's day, that was practical to eat by holding the crust in coal stained fingers, economical to make and filling. Recipe is adapted from "Favourite English recipes- Traditional fare from around the Counties'. If you make it before I do, I would very much appreciate your feedback. Please Note: Americans know Swede as "rutabaga" and the Scottish call it "neeps". A websearch tells me that Swede is a fairly recent root vegetable, and is thought to have originated around the 17th century in Bohemia and is the result of a cross between a cabbage and a turnip. It's popular in colder European countries and is a hardy vegetable similar in texture to turnip. ZWT REGION: England.

5 ounces lard (140g) or 5 ounces shortening (140g)
1 pinch salt
water, to mix
1 lb lean beef (450g)
1 lb potato (450g)
1 lb swede (450g)
1 small onion
1 ounce butter (30 g OR 2 tablespoons)
pepper (to taste)
salt (to taste)

Steps:

  • Pre heat oven to 400 F (200 C) (gas mark 6).
  • Rub the shortening into the flour and salt and add just enough water to make a firm pastry dough.
  • Divide the pastry into 4 equal pieces and roll each piece out until is about 7 inches (18 cm) around. Cut the meat into small very cubes, removing all of the fat.
  • Cut the potatoes, swede and onion into very small pieces and add to the meat. Place 1/4 of the mixture into the centre of each of the pastry circles and add salt and pepper to taste. Top each with 1/4 of the butter.
  • Use a little water to dampen the edges of the pastry and bring the sides of the pastry circle up to meet each other so that the weight of the filling flattens out the bottom a little and you can crimp the edges together at the top.
  • Pinch the edges firmly together and the result will look like a little pie with a Mohawk !
  • Cook on a floured baking tray for 45 minutes.

4 1/2 cups all-purpose flour
1 cup shortening
1 1/4 cups ice water
1 teaspoon salt
5 1/2 cups thinly sliced potatoes
2 carrots, shredded
1 onion
1/2 cup diced rutabaga
1 1/2 lbs lean ground beef
1/2 lb ground lean pork
1 tablespoon salt
1 teaspoon ground black pepper
1 1/2 teaspoons msg (MSG)
1 beef bouillon cube
1/2 cup hot water

Steps:

  • Whisk together flour and salt in a large bowl. Cut shortening. Make a well in the center of the mixture, and quickly stir in ice cold water. Form dough into a ball. Set aside.
  • Dissolve the bouillon cube in the hot water. Combine uncooked vegetables, uncooked meats, salt, pepper, monosodium glutamate (MSG), and bouillon.
  • Roll out pastry dough into 6 x 8 inch rectangles. Place about 1 1/2 cups of filling in the center of each rectangle. Bring 6 inch sides together, and seal. Cut a slit in the top of each pasty. Place on dull, not black, baking pans.

2 cups flour
1 pinch salt
3 ounces lard or 3 ounces shortening
1/3-1/2 cup water
1/4 lb beef or 1/4 lb chicken liver
1 celery rib
1/2 ground beef
1 small carrot
salt & pepper
1 small turnip
2 potatoes, raw sliced
1 egg, beaten
1 small onion

Steps:

  • Mix flour and lard, then add salt and water. Work into smooth dough and rest under a cover or in fridge for 30 minutes.
  • Meanwhile, prepare the filling:.
  • Chop liver coarsely in a blender and mix with beef.
  • Add salt and pepper and let rest for 10-20 minutes.
  • Peel onion and pare potatoes, carrot and turnip; slice thinly, and blanch in boiling water for 2-3 minutes with thinly sliced celery.
  • Drain and season with salt and pepper.
  • Roll out dough to 1/8 inch thickness; cut into 3 large squares.
  • Put a layer of vegetables on half of each square and top it with meat mixture.
  • Brush edges of dough with egg and fold plain half over the meat.
  • Pinch edges together tightly.
  • Bake for 1 hour: first for 2-3 minutes at 400°F, then at 325°F for 1 hour.

2 teaspoons confectioners' sugar
1 teaspoon salt
3 ounces cold, unsalted butter, cut into pieces
4 ounces lard or vegetable shortening, cut into pieces
1 egg yolk
6 tablespoons cold water
10 ounces chuck steak, trimmed and cut into scant 1/4-inch dice
1 small onion, very finely chopped
1 medium carrot, cut into 1/4-inch dice
1 small Idaho potato, cut into 1/4-inch dice
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 egg, lightly beaten
2 1/4 cups all-purpose flour

Steps:

  • For the pastry: Sift the flour, confectioners' sugar, and salt into a mixing bowl and add the butter and lard. Using your fingers, 2 knives, or a pastry blender, cut the butter and lard into the dry ingredients until mixture resembles fine crumbs. In a small bowl, whisk the egg yolk and water together and add to the flour mixture. Mix quickly, but thoroughly, until mixture just comes together to form a dough. Knead briefly until pastry is smooth with no cracks; the trick to making this delicate pastry easy to work with is kneading it just enough so that it can be rolled out and manipulated without breaking but yet retains its lovely crumbly texture. Press into a flattened disk shape and wrap in plastic. Refrigerate for at least 30 minutes and up to overnight before proceeding.
  • Remove the pastry from the refrigerator and unwrap. Allow to soften slightly, then place on a lightly floured work surface and roll the pastry to a thickness of 1/4-inch. Using a small plate or saucer as a guide, cut out 6 (6-inch) rounds. (Scraps may be combined and reformed if you cannot get 6 rounds out of the first batch.) Stack the pastry rounds onto pieces of plastic wrap or parchment paper (with pieces between each round to keep them from sticking together) and refrigerate while you prepare the filling.
  • For the filling: Preheat the oven to 400 degrees F.
  • Remove the pastry circles from the refrigerator. In a mixing bowl, combine the meat, onion, carrot, potato, salt and pepper and mix until thoroughly combined. Place the pastry circles on a clean work surface and place about 1/2 cup of the filling in the center of 1 side of the pastry. Using the beaten egg, brush the edges of the pastry and then bring the unfilled side over the filled side so that edges meet. Press edges together to seal and then crimp using your fingers or a fork. Repeat with the remaining turnovers and then transfer to a baking sheet. Brush the tops of the turnovers with the remaining egg and then cut several slits into the top of each pastry. Bake for 20 minutes, or until pastry is golden brown around the edges. Reduce the heat to 350 degrees F and continue to bake until the pasties are golden brown. Remove from the oven and allow to cool for 10 to 15 minutes before serving.

400g beef skirt, excess fat trimmed, cut into small chunks
140g potato , diced
140g/5oz swede , diced
100g/4oz onion , finely chopped
3 tbsp chopped parsley
1 tbsp Worcestershire sauce
350g plain flour , plus extra for dusting
1 ¼ tsp baking powder
85g cold butter , cut into small pieces
3 tbsp extra virgin rapeseed oil
1 large egg , separated

Steps:

  • To make the filling, mix everything together in a bowl with ¾ tsp black pepper and 1 tbsp cold water. Stir in a pinch of salt and set aside. Heat oven to 200C/180C fan/gas 6. Line 1-2 baking sheets or trays with baking parchment.
  • To make the pastry, put the flour, baking powder and butter in a food processor. Pulse until the mixture resembles fine breadcrumbs. Tip in the oil, egg yolk and 5 tbsp cold water. Pulse again until the dough just starts to come together, adding another ½-1 tbsp water, or as needed. If you gently press the dough and it sticks together, you know it's the right consistency. Tip out the dough onto the work surface and gently press it into a smooth ball.
  • Cut the pastry into 6 equal pieces. For each pasty, lightly and briefly shape one piece of the pastry to a smooth ball. (Keep the other pieces wrapped in cling film until needed.) Press the ball down to make an even flattened round. Then roll the pastry out on a lightly floured surface, as thinly as you can, to a circle just over 20cm in diameter, keeping the round shape with your hands as you roll. As you're rolling the pastry thinner than usual, handle it carefully to prevent it breaking, and keep the work surface and rolling pin lightly dusted with flour to prevent the pastry sticking. Use the base of a 20cm loose-bottomed cake tin (or similar) as a guide to cut around to neaten the pastry edges (step 1). Spoon a sixth of the filling down the centre of the pastry circle and lightly press down with your hand to contain and flatten it slightly. Dampen the pastry edges with water (step 2) and carefully bring one side of the pastry over to join the other side (step 3), tucking in the filling to keep it inside as you do so. Press the joins together to seal, then make a thin decorative edge by rolling or curling the pastry edge over all the way around. Press down to seal. Repeat with the remaining pastry and filling. Sit each pasty on the baking sheet or tray, then pierce a small hole in the top of each one for the steam to escape. Beat the egg white to loosen, then brush a little over each pasty to glaze (step 4).
  • Bake for 15 mins, then lower the oven to 180C/160C fan/gas 4. Brush with more egg white, and bake a further 35 mins until the pastry is crisp and golden, covering loosely with foil if they are browning too quickly. Remove with a wide spatula and leave to cool slightly on a wire rack. Serve warm or cold.

Originating in Cornwall, the Cornish pasty is sold all over the UK, in supermarkets, bakers, and pubs - it's the perfect take-out (or, as they say there, take-away) food. This recipe was published by the Vegetarian Society for National Vegetarian Week 2006, and I'm passing it on to Zaar for our 6th World Tour! Enjoy, and remember to pronounce with a long 'a' in 'pastie', like 'fast', which is how they'll be devoured ;)

1/2 cup margarine (a vegan type!)
2 tablespoons margarine (a vegan type!)
1 cup white flour (a little generous)
1 teaspoon salt
1/2 cup water, very cold
1/4 cup soymilk, as needed
200 g potatoes, peeled and chopped into chunks
1/2 medium onion, peeled and cut into chunks
125 g swede, peeled and cut into chunks (can use turnip if swede is unavailable)
2 -3 teaspoons light vegetable stock powder (rounded teaspoons)
1/3 cup kidney bean, rinsed and drained
ground black pepper, to taste

Steps:

  • Preheat oven to 190C / 375F / Gas mark 5. Grease a baking sheet, or line with baking paper (not greaseproof).
  • To make the filling: put all ingredients except the kidney beans into a food processor and process until very finely chopped. Turn into a bowl and stir in the kidney beans. Add plenty of pepper to taste.
  • To make the pastry: Grate 120g margarine (or 60g margarine and 60g white fat) into 225g flour and the salt. Stir and cut through well with a large blunt knife to break up the fat and margarine a little.
  • Using the blunt knife to stir, gradually add enough water to make a soft dough. Do not make too sticky. Using a little of the remaining flour, gently roll out the pastry until about 1cm thick. Fold the pastry into thirds by bringing the bottom edge up to about two thirds, and the top edge down to cover. Then fold the sides in the same way. If not using straight away, wrap in foil and store in the fridge for up to 24 hours.
  • To form the pasties: Roll out the pastry to about 1cm thick and cut into 4 rounds about the size of a large tea plate. Pile filling into the centre of each circle and top with a piece of the remaining margarine. For each pasty, dampen the edge of the pastry with a little water, then fold pastry over the filling to form and half circle. Try to stuff as much filling in as you possibly can.
  • To make the traditional edging, beginning at the right side, use the forefinger and thumb of your right hand to pinch the pastry together while using the forefinger and thumb of your left hand to fold over the section of pastry next to it. Move along to the next section of pastry, and repeat. Continue in this way along the edge of the pastry, making a rope-like join.
  • Place the pasties onto the prepared baking sheet. Brush each one with soy milk, and prick with a fork to let the steam escape.
  • Bake in the preheated oven for about 45 minutes until golden brown. Serve piping hot. The pasties should not split open, but if they do, it's not a problem, they are merely called 'laughing pasties'!

MY FAVORITE CORNISH PASTIES



My Favorite Cornish Pasties image

The Upper Peninsula of Michigan became the home of many Cornish emigrants. As a result many Michiganders both living in the upper and lower penisulas grew up eating cornish pasties. My favorites are made with ground beef and with carrots instead of rutabegas. This is the recipe which is made the most often near my home. Some folks enjoy this cold...I love it best smothered in rich beef gravy. Some folks also like it served with a white Sausage Gravy. Some local churches actually make these once a year as a fund raiser. They offer them to eat on the premises and also take orders for take outs. They almost always sell out with some folks coming too late to get any.

1 lb lean ground beef (uncooked)
1 large potato (peeled and cubed)
1 large carrot (cut into small cubes)
1 large onion (chopped)
1 teaspoon salt
1 1/4 teaspoons pepper
4 pie crusts
1/4 cup milk
1 quart leftover beef gravy, heated

Steps:

  • Mix uncooked meat, vegetables and spices well together in a bowl.
  • Lay one pie crust flat on the lightly floured counter.
  • Put 1/4 of the filling mixture on one half of the crust, leaving at least a 1 1/2 inch area along the edge free for filling so that you can use this area for sealing.
  • Gently moisten the bottom edges on the sealing area with the milk using your fingertips.
  • Fold over the other half of the crust on top of the filling and bring the edges of the top half and the bottom half together and press to seal.
  • Fold the edges in towards the center once or twice.
  • Crimp the edges well.
  • Coat the entire top of the pastie with milk and place on a slightly greased large sheet pan.
  • Repeat with the other 3 crusts.
  • Bake for 425 degrees for about 15 minutes then reduce the temperature to 350 degrees for another 30 minutes, or until golden brown.
