Corned Beef Sliders are slices of tender, Guinness braised corned beef topped with crisp coleslaw on a slider roll. They're perfect for gatherings or using up leftover corned beef!

1 pint Guinness beer
3 cups water
1/4 cup brown sugar
1 large onion (peeled and sliced into thick rounds)
3 lb. corned beef brisket (with spice packet)
12 ounces organic coleslaw blend or shredded cabbage tossed with my [3-Ingredient Creamy No Mayo Coleslaw Dressing]
12 slider rolls (gluten-free or regular)
Serve with whole grain mustard or horseradish (if desired)

Steps:

  • Place the Guinness, water and brown sugar into the pot and stir. Add the onion, followed by the corned beef and the spice packet. Cook the corned beef in the Instant Pot or Crock Pot according to the instructions for this Corned Beef and Cabbage recipe.
  • When the corned beef has finished cooking, allow to rest for 10 minutes. When cool enough to handle, slice against the grain.
  • Spread some whole grain mustard or horseradish on the top slider buns. Place the corned beef on the slider buns, top with coleslaw, and place the top half of the bun over the coleslaw. Secure with toothpicks, serve and enjoy!

3 cups coleslaw mix
1/2 medium red onion, chopped (about 2/3 cup)
1/8 teaspoon celery seed
1/4 teaspoon pepper
1/3 cup coleslaw salad dressing
SANDWICHES:
1 boneless beef chuck roast (2 pounds)
1 teaspoon salt
1/2 teaspoon pepper
1 can (6 ounces) tomato paste
1/4 cup water
1 teaspoon Worcestershire sauce
1 small onion, diced
1 cup barbecue sauce
12 slider buns or dinner rolls, split

Steps:

  • Combine coleslaw, onion, celery seed and pepper. Add salad dressing; toss to coat. Refrigerate until serving., Sprinkle roast with salt and pepper; transfer roast to a 5-qt. slow cooker. Mix tomato paste, water and Worcestershire sauce; pour over roast. Top with onion. Cook, covered, on low 6-8 hours or until meat is tender., Shred meat with 2 forks; return to slow cooker. Stir in barbecue sauce; heat through. Serve beef on buns; top with coleslaw. Replace bun tops.

3 tablespoons sour cream
4 teaspoons mayonnaise
1 tablespoon horseradish sauce
1 teaspoon prepared mustard

4 slices rye bread
1/2 pound thinly sliced corned beef
8 slices Swiss cheese

Steps:

  • Place coleslaw mix in a small bowl. Combine the sour cream, mayonnaise, horseradish sauce, mustard and salt. Pour over coleslaw mix and toss to coat., Place bread slices on an ungreased baking sheet. Broil 4 in. from the heat until toasted, 2-3 minutes on each side. 1 cup very thinly sliced savoy cabbage (you can substitute green cabbage)
1 tablespoon rice vinegar or white wine vinegar
1/2 teaspoon sugar
1/4 teaspoon celery seeds
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
2 teaspoons ketchup
2 teaspoons drained sweet pickle relish
1/4 teaspoon paprika
8 slices rye or marbled rye sandwich bread
8 thick slices Swiss cheese
1 pound leftover corned beef, coarsely chopped
3 tablespoons unsalted butter, at room temperature

Steps:

  • For the slaw: Put the cabbage in a bowl, sprinkle the vinegar, sugar, celery seeds and salt and pepper to taste over the top and toss well. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • For the sandwiches: In a small bowl, stir together the mayo, ketchup, relish and paprika. Spread the dressing on one side of each slice of bread. Put a slice of cheese on each piece of bread; divide the meat among 4 of the slices. Top each sandwich with some slaw and invert the remaining cheese-covered bread slices onto each sandwich. Spread 1/2 tablespoon of the butter on the top of each sandwich.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet or griddle over medium heat. Arrange the sandwiches buttered-side up in the skillet and cook until the bottoms are golden, about 4 minutes. Carefully flip the sandwiches and cook until the undersides are golden brown and the cheese is melted, about another 4 minutes. Slice the sandwiches diagonally and serve.

1 1/2 to 2 ounces sliced corned beef
1 1/2 to 2 teaspoons Guinness mustard (ingredients below)

COLESLAW:
1 (16-ounce) bag coleslaw mix
2 tablespoons onion, diced
2/3 cup mayonnaise
3 tablespoons buttermilk
1/3 cup white sugar
1 tablespoon white vinegar
1 tablespoon lemon juice

1/4 teaspoon ground black pepper
1/2 teaspoon poppy seeds
GUINNESS MUSTARD:
1/2 cup whole grain Dijon mustard
3 tablespoons regular Dijon mustard
3 tablespoons Irish stout beer (like Guinness)
1 tablespoon shallot, minced
1 1/2 teaspoons light brown sugar
pinch of ground nutmeg
pinch of ground allspice

Steps:

  • To prepare the cabbage slaw, combine the coleslaw mix and onion in a large bowl. Whisk together the mayo, buttermilk, sugar, vinegar, lemon juice, salt, black pepper, and poppy seeds in a medium-sized bowl until fully combined. Pour the dressing mixture over the coleslaw mixture and toss to coat. Chill at least 2 hours before serving. To prepare the mustard, whisk all the ingredients together in a small bowl until well blended. Cover and refrigerate for 2 to 3 hours. To assemble the sliders, spread the mustard on both sides of the roll. Spoon a dollop of slaw onto the bottom half of each roll, followed by one or two slices of corned beef. Place the other half of the roll on top.

3 cups shredded cabbage

10 slices rye bread
2 tablespoons Dijon mustard, or to taste
1 pound deli sliced corn beef, or more to taste

Steps:

  • Prepare coleslaw: whisk vinegar, Dijon, horseradish, salt, and pepper together in a large bowl. Continue to whisk while adding oil in a stream; whisk until dressing has emulsified.

4 large red potatoes, quartered

3 cups water

1 corned beef brisket with spice packet (2-1/2 to 3 pounds), cut in half
1 small head cabbage, cut into wedges

Steps:

  • Place the onion, potatoes and carrots in a 6- to 7-qt. slow cooker. Combine the water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet; pour over vegetables.
