BEEF AND NOODLE CASSEROLE

When I was working on the local election board in the '50s, one of my co-workers gave me this beef noodle casserole recipe, and it has been a family favorite ever since. It's quick to make for unexpected company or easily doubled for a potluck.

1-1/2 pounds ground beef
1 tablespoon butter
1 large onion, chopped
1 cup chopped green pepper
1 tablespoon Worcestershire sauce
6-1/4 cups uncooked wide egg noodles, cooked and drained
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In the same skillet, melt butter over medium-high heat. Saute onion and pepper until tender. Stir in the beef, Worcestershire sauce, noodles and soups. , Transfer to a greased 3-qt. baking dish; top with cheese. Bake, uncovered, at 350° for 45-50 minutes or until heated through.

FRIED CABBAGE IS EXCELLENT IN THIS CASSEROLE....HAD I HAD SOME, I WOULD HAVE USED THAT INSTEAD OF THE GREEN BEANS..
12 oz egg noodles, prepared as directed on bag or box
12 oz canned, corn beef
3 - 10 oz cans, cream chicken soup
2 can(s) green beans ( drained) - or vegetable of your choice (optional)
1 - 6 oz can. french fried onions - i used bread crumbs today, with butter and seasonings, - was out of the onions
1 tsp dried mustard
1/2 tsp paprika
salt and pepper to taste
4 oz quick melting cheese, i use velveeta
HALVING THIS RECIPE WOULD EASILY SERVE 4 ( WHICH IS WHAT I DID )

Steps:

  • 1. Cook the noodles according to package directions. Drain.
  • 2. Preheat the oven to 350 degree F. Butter the bottom and sides of the baking dish. In a large bowl, combine the noodles, soup, mustard salt, pepper, paprika and corned beef. Stir until evenly mixed.
  • 3. Fold in green beans, or preferred veggie.
  • 4. Place slices of cheese - or break cheese into pieces and evenly place on top of casserole.
  • 5. Top with fried onions or crumb mixture. Bake for 40 - 45 minutes, or until golden and bubbly.
  • 6. Enjoy!

8 ounces medium egg noodles
4 tablespoons butter, divided
1 cup chopped onion
2 1/2-3 cups diced corned beef, about 12 ounces
16 ounces frozen chopped spinach, thawed, excess water squeezed out
3 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk (low fat is fine)
1/8 teaspoon black pepper
1/4 teaspoon dried leaf thyme
2 cups shredded sharp cheddar cheese
1/2 teaspoon salt (to taste)
1/2-1 cup French fried onion rings (optional) or 1/2-1 cup buttered bread crumb (optional)

Steps:

  • Using a large saucepan or stock pot, cook noodles following package directions; drain well. Put noodles back in the pot and set aside.
  • In a medium saucepan, melt 2 tablespoons of butter over medium-low heat; cook onion for 2 minutes. Add corned beef and cook until lightly browned. With a slotted spoon, transfer beef mixture to the pot with noodles. Add the squeezed spinach to the pot and set aside.
  • In the same medium saucepan, melt remaining 2 tablespoons butter over medium-low heat; stir in flour until well blended and bubbly. Stir in chicken broth and milk. Cook, stirring constantly, until thickened and bubbly. Add pepper and thyme. Stir in the cheese, cooking until melted. Add salt to taste. Pour sauce over the noodle and corned beef mixture; stir until well blended. Spoon the noodle mixture into prepared baking pan. If desired, top with crumbled French fried onion rings or buttered bread crumbs. Bake for 30 minutes, or until hot and lightly browned.
