2 slices dark rye bread
¼ pound thinly sliced corned beef
3 ounces sauerkraut, drained
2 slices Swiss cheese
¼ cup thousand island dressing

Steps:

  • Place bread on baking sheet or broiling pan. Layer corned beef, sauerkraut and cheese on top of bread slices.
  • Broil on high heat for 3 to 4 minutes, until cheese has melted. Serve hot with Thousand Island dressing.

1 loaf (1 pound) day-old pumpernickel bread, cubed
1 Slow-Cooked Corned Beef Brisket, cubed
1-3/4 cups sauerkraut, rinsed and well drained
8 large eggs, beaten
3 cups heavy whipping cream
1/2 cup Thousand Island salad dressing
1 cup shredded Swiss cheese

Steps:

  • In a large bowl, combine the bread, corned beef and sauerkraut. In another bowl, whisk the eggs, cream and salad dressing; pour over bread mixture and toss to coat. Transfer to a greased 13x9-in. baking dish. Let stand 5 minutes., Cover and bake at 375° for 40 minutes. Uncover; sprinkle with cheese and bake 5-10 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

My favorite sandwich is a corned beef Reuben, but finding one in a restaurant that's done to perfection is challenging. The best one I ever had was in Montreal. This comes real close!

1 teaspoon salted butter, softened
2 slices pumpernickel bread
3 slices Swiss cheese
2 teaspoons Thousand Island salad dressing
4 slices deli sliced corned beef
¼ cup sauerkraut, drained
1 large dill pickle, sliced

Steps:

  • Preheat a large skillet or griddle over medium heat.
  • Lightly butter one side of each bread slice. Place buttered-sides down on the preheated skillet. Place 1 1/2 pieces of Swiss cheese on top of each bread slice, then spread Thousand Island on top.
  • While sandwich halves are toasting, place corned beef on one side of a microwave-safe plate and sauerkraut on the other side. Cover with a dampened paper towel and microwave on high for 90 seconds.
  • Remove bread from the skillet. Add hot corned beef and sauerkraut and close to form a sandwich.
  • Serve with dill pickle.

1/2 cup whole grain Dijon mustard
1/8 cup mayonnaise (optional, if using mayo you may want to cut the mustard back to 1/3 cup)
2 teaspoons capers
1/8 cup finely chopped sweet gherkin
8 slices pumpernickel bread
1/2 lb sliced corned beef
4 ounces thinly sliced swiss cheese
8 leaves small red leaf lettuce

Steps:

  • Combine the mustard, mayonnaise(if using), capers, and gherkins in a small bowl and spread on one side of each bread slice. Rinse lettuce leaves and pat each dry.
  • Layer the corned beef, Swiss cheese, and lettuce on 4 of the bread slices, top with the remaining bread slices, and serve. Enjoy!

This is quick and easy to make and really hits the spot when you are looking for a hearty sandwich with some gooey, melted cheese goodness.

8 slice corned beef
8 slice swiss cheese
spicy brown mustard
mayonnaise
horseradish
olive oil, extra virgin
4 slice pumpernickel bread

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Lay four slices of pumpernickel bread onto countertop. Spread all slices with spicy brown mustard. Spread horseradish onto one side of each sandwich followed by mayonnaise.
  • 3. Place two pieces of Swiss cheese onto bottom piece of pumpernickel bread then 2 pieces of corned beef and repeat with another layer of two pieces of Swiss cheese and 2 pieces of corned beef then place the top of the sandwich onto the meat and cheese layers.
  • 4. Place sandwiches onto cookie sheet pan. Brush each side of sandwich with olive oil. Bake for 15 minutes in 350 degree oven until each side is toasted and cheese is melted.
  • 5. Remove from cookie sheet pan and place on plate. Serve.
