2 tablespoons vegetable oil
1/2 cup unsweetened applesauce
3 large eggs
1/2 cup buttermilk
1 cup yellow cornmeal
1 cup all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup shredded cheddar cheese, optional
diced jalapeno or 1/2 cup canned corn (drained), optional

Steps:

  • Preheat your oven to 375 degrees Fahrenheit and prepare an 8-inch by 8-inch square cake pan by lining it with parchment paper. Spray the parchment paper with vegetable oil cooking spray, if desired.
  • Combine the vegetable oil, applesauce, eggs and buttermilk in a large bowl with a wire whisk until smooth.
  • Add the cornmeal, flour, salt and baking powder and mix with a rubber spatula until combined.
  • Add the cheese, jalapenos and corn (if using), and stir to combine.
  • Pour the batter into the prepared baking dish and bake for 35-40 minutes until the cornbread is golden brown on top and a toothpick inserted into the middle comes out clean.
  • Enjoy with your favourite soups, stews, or chili, or eat it alone with butter and jam.

2 eggs
1 1/2 cups buttermilk
1/2 cup vegetable oil
1/2 cup applesauce
1/3 cup honey
2 teaspoons salt
1 cup cornmeal
2 1/2 cups flour (may use a combination of white and wheat)
4 teaspoons baking powder
1 teaspoon baking soda

Steps:

  • Combine dry ingredients and set aside.
  • Mix eggs, buttermilk oil, applesauce, and honey.
  • Gently fold in dry ingredients, mix just until blended.
  • Batter will be lumpy.
  • Pour into greased 9x13 pan.
  • Bake at 400 degrees for about 20 minutes or until lightly browned.
  • Also makes 12 muffins, if desired.

1 cup cornmeal
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar
3/4 cup milk
2 large eggs
1/4 cup unsweetened applesauce

Steps:

  • Preheat oven to 425°.
  • Lightly grease an 8x8 inch baking pan.
  • In a bowl, mix together flour, cornmeal, baking soda, baking powder, salt, and sugar.
  • In a separate bowl, stir together milk, eggs, and applesauce.
  • Fold the wet mixture into the dry ingredients and mix together well.
  • Pour the mixture into baking pan.

1/3 cup(s) vegetable oil
2 tablespoon(s) vegetable oil coats pan
1 box(es) self rising krusteaz honey cornmeal
2/3 cup(s) milk
2 medium eggs
2 tablespoon(s) unsweetened applesauce
3 tablespoon(s) butter
2 tablespoon(s) sugar

Steps:

  • Preheat oven to 375-400 degrees F.
  • Lightly grease a cast iron pan, muffin cup or a skillet for best result ( standard muffins fill 2/3 full-bake for 14-16 minutes)
  • In large bowl Mix all dry ingredients thoroughly
  • With wooden spoon stir together Honey Cornmeal, eggs, liquid ingredients & beat into a smooth batter
  • Pour batter into skillet or pan
  • Bake approx. 25 minutes or until lightly brown (muffins cool 5 minutes, gently loosen from pan. Cool completely and store in tightly covered container)
  • Remove from oven then cover to retain heat if desired (on a personal note: best when eaten cool)
  • Slice into wedges & Serve anytime (try this sweet cornbread with your favorite jam for breakfast)

APPLE CORNBREAD



Apple Cornbread image

A different twist on corn bread, this is sweet and very moist. It's been a favorite with hubby and the kids around here for years. If you dice the apples very finely, they almost disappear into the batter; leave them larger for chunks of fruity flavor. This is also good with cinnamon mixed into the batter (I usually do that more for a breakfast/brunch than dinner). Originally submitted by Nancy Kirkland in a church cookbook from Maryland.

1 cup cornmeal
1 cup flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup shortening, melted
1 apple, finely diced (I peel ours, but you can leave it unpeeled if you have organic apples)

Steps:

  • Mix dry ingredients; set aside.
  • In another bowl, combine milk, egg, and shortening (you may want to warm the milk slightly to keep the shortening from clumping back up, but not too much or you'll cook the egg).
  • Add cornmeal mixture to wet ingredients.
  • Add apple and stir gently; batter will be very thick.
  • Pour into greased 9x9" pan and bake at 425 for 20-25 minutes.
  • (To make sure it cooks through in the middle, since it is a heavier-than-usual cornbread batter, you may want to check about 20 min-- if the center still seems uncooked, cover with foil to prevent overbrowning and increase cook time as needed).
