1 can creamed corn
1 can whole kernel corn, drained
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1 egg white
2 tablespoons milk
Salt and pepper, to taste
3 cups vegetable oil

Steps:

  • In a medium bowl, stir together the creamed corn and the drained whole kernel corn. Line a baking sheet with aluminum foil, and coat with vegetable oil or cooking spray. Drop spoonfuls of the corn mixture onto the sheet, and freeze until firm, about 3 hours. When the freezer time is up, heat one to two inches of oil in a large deep skillet. While the oil is heating, mix together the cornmeal, flour, egg white, milk, salt and pepper in a medium bowl. Dip the frozen corn nuggets into the batter. Quickly fry in hot oil until golden brown. Remove, place on paper towels to drain.

1/2 cup flour
2 eggs
1 teaspoon baking powder
1 teaspoon salt
2 cups shucked corn
1 cup milk or 1 cup water
1/2 teaspoon cinnamon (optional)
1/4 cup sugar (optional)

Steps:

  • Preheat oil to 400 degrees.
  • Mix the dry ingredients.
  • Toss in the shucked corn.
  • Using a fork, stir in the egg.
  • A little bit at a time, mix in the liquid until the dough forms a ball.
  • Let sit for 10 min, then check to see if it needs a bit more liquid.
  • You are aiming for a very stiff, but not at all dry, dough.
  • Shape into balls, and drop a few at a time into the oil.
  • Fry until golden brown.

4 cups yellow cornmeal, or more as needed
1 ½ cups enriched flour, or more as needed
1 cup white sugar
2 ½ teaspoons salt

Steps:

  • Mix corn, cornmeal, flour, sugar, and salt together in a large bowl until it forms a paste. If the mixture is runny, add equal amounts of flour and cornmeal to reach a paste-like consistency.
  • Cover a sheet of waxed paper with a light dusting of flour. Place a tablespoon of the corn mixture on the waxed paper and roll into a ball. Repeat with remaining batter, adding more flour to the wax paper as needed.

3 pounds halibut fillet, cut in 1-by-2-inch pieces
3 cups yellow cornmeal (not self-rising)
1 teaspoon garlic powder
1 teaspoon onion powder

Vegetable oil, for frying
1 cup mayonnaise
3 tablespoons hot sauce
1 teaspoon cayenne pepper
Juice of 1/2 lemon
4 ears corn
3 large heirloom tomatoes (yellow, pink or orange), diced
4 Roma tomatoes, diced
1/2 red onion, diced
1 green bell pepper, diced
1/4 cup chopped fresh parsley
1/4 cup vinegar
1/4 cup vegetable oil
3 teaspoons sugar
1/4 cup lemon tea

Steps:

  • For the fish nuggets: Mix the buttermilk, iced tea, eggs, garlic powder, onion powder, hot sauce and some salt and pepper in a large bowl. Add the halibut and toss to coat. Let stand for 45 minutes.
  • Mix together the cornmeal, garlic powder, onion powder and some salt in a large bowl. Toss the fish nuggets in the breading and then fry in 350-degree oil for 3 to 4 minutes, until golden brown and cooked through. Drain on paper towels.
  • For the firecracker sauce: Combine the mayonnaise, hot sauce, cayenne and lemon juice in a bowl and mix together.
  • For the corn-tomato salad: Roast the corn on a grill. Cut off the kernels and let cool.
  • Place the heirloom and Roma tomatoes, red onions, bell peppers and parsley in a bowl. In a separate bowl, whisk together the vinegar, oil, sugar, lemon tea and some salt and pepper. Add the corn to the tomatoes, pour dressing over and toss.
  • Serve the fish nuggets over the corn-tomato salad. Drizzle with firecracker sauce.

1 medium cauliflower
1 large potato, cooked and peeled
2 medium eggs
4 ounces Gouda or cheddar cheese, grated
Kernels from 2 corn cobs (or 3/4 cup frozen kernels?no need to defrost)
1/2 teaspoon sea salt
3/4 cup all-purpose flour
1 cup panko bread crumbs
2 tablespoons sesame seeds
4 tablespoons oil

Steps:

  • Preheat the oven to 375�F and line a baking sheet with parchment paper.
  • Steam the whole cauliflower until tender but not completely soft, 11 to 13 minutes. Cut into florets and reserve the stem and stalks for other uses.
  • In a large bowl, mash the cooked potato, add the florets and continue mashing until the cauliflower is broken into small bits but still retains some texture.
  • Crack in the eggs and add the cheese, corn kernels and salt. Mix well, then stir in the flour to create a thick, slightly sticky mass. Cover with plastic wrap and chill for 30 minutes.
  • Using wet hands to keep the mixture from sticking to you, shape a heaped tablespoon of the mixture into a ball or nugget and put it on the prepared baking sheet. Repeat with the rest of the mixture.
  • In a shallow bowl, mix the bread crumbs with the sesame seeds. Coat the nuggets in the mixture, then return them to the baking sheet.
  • Drizzle the nuggets with the oil and bake until golden, 12 to 15 minutes.
  • Serve at once, with any dip you like and a side salad. The nuggets may be refrigerated for four days or frozen for up to three months.
