CORN AND POBLANO LASAGNA



Corn and Poblano Lasagna image

Number Of Ingredients 11

4 tablespoons unsalted butter, divided
3 cloves garlic, minced, divided
2 cups fresh corn kernels (from about 2 ears), or frozen and thawed
2 cups heavy cream
1 teaspoon fresh thyme
Salt and freshly ground black pepper
1/2 cup thinly sliced white onion
1 large zucchini, thinly sliced lengthwise
4 poblano chiles, charred, peeled, stemmed, seeded and cut into 1-inch strips
12 (7 by 3-inch) no-boil lasagna sheets
2 cups shredded Oaxaca cheese, or mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt 2 tablespoons butter in a medium, heavy saucepan over medium heat. Add 2/3 of the garlic and saute for 1 minute. Mix in the corn and saute for 5 minutes. Stir in the cream and thyme. Cook over medium-low heat for 5 minutes for the flavors to incorporate. Turn off the heat and let cool slightly. Transfer to a blender and puree until smooth. Season with salt and pepper.
  • Heat the remaining 2 tablespoons butter in a small, heavy skillet over medium heat. Add the onions and saute until translucent, about 5 minutes. Add the remaining garlic and cook for 1 minute. Mix in the zucchini and poblano strips and cook for 5 minutes for the flavors to incorporate. Season with salt and pepper. Turn off the heat.
  • Spread about 1/4 of the corn mixture over the bottom of an 11 by 8-inch baking dish. Cover with a layer of 3 lasagna sheets. Spread 1/4 of the poblano mixture and 1/4 of the cheese over the pasta. Repeat the layering 3 more times. Cover with foil.
  • Bake until the pasta is cooked and tender, about 50 minutes. Remove the foil and turn up the oven temperature to broil. Broil until golden brown and bubbly, 8 to 10 minutes. Let stand for 15 minutes before serving.

3 cans (3.8 ounces each) sliced ripe olives, drained
3 cups shredded Monterey Jack cheese

Steps:

  • In each of two greased 13x9-in. baking dishes, arrange six tortillas. Layer each with 1 cup chicken, 2/3 cup kidney beans, 1 cup salsa, 1/2 cup sour cream, 1/2 cup green pepper, about 1/3 cup olives, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Repeat layers twice. , Cover and bake at 350° for 25 minutes. Uncover; bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.

Very tasty and fast. Make it a complete dinner just by adding a salad. It looks like a lot of steps, but it is easy. For a spicier dish, you can also use diced tomatoes with jalapenos. Do not use light or fat-free sour cream because it will curdle during baking. You can also add 1 cup of shredded, cooked chicken along with the black beans and corn in Steps 4 and 5. 5 large flour tortillas (10-inch)
1 1/2 cups frozen corn kernels
1 (15 ounce) can black beans
1 (14 1/2 ounce) can diced tomatoes with mild green chilies
1 (15 ounce) can tomato sauce
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon sugar
1 large egg
16 ounces regular sour cream
2 cups shredded Mexican blend cheese, divided use
1 bunch green onion (for 1/2 cup chopped)
1 (2 1/4 ounce) can sliced black olives (optional)

Steps:

  • Preheat the oven to 400 F; Spray a 13-by-9-inch baking pan with cooking oil spray; Set aside.
  • Stack the tortillas on a cutting board, and slice through them lengthwise into 3 strips each (The strips will not be uniform because of their circular shape; This is OK) Set aside.
  • Pour the corn and black beans into a colander, and rinse with warm tap water to begin defrosting the corn and rinse the beans; Set aside to drain.
  • In a small bowl, stir together the tomatoes with their juice, the tomato sauce, chili powder, cumin, garlic powder and sugar; Spoon about half of the sauce into the bottom of the dish; Cover the sauce with 5 of the tortilla strips (it's fine if they overlap somewhat).
  • Break the egg into a medium-size mixing bowl, and beat with a whisk or fork until foamy; Add the sour cream and 1 cup of the cheese; Stir to mix well; Spoon half of the sour cream mixture evenly over the tortilla layer and spread it out with the back of a spoon; Scatter half of the corn and black beans over the sour cream mixture.
  • Place 5 more tortilla strips evenly over the corn and black bean layer; Top with the remaining sour cream mixture, and the remaining black beans and corn; Place the remaining tortilla strips over the dish; Pour the remaining tomato sauce mixture over the tortillas, and spread it evenly with the back of a spoon to moisten all of the tortilla strips.
  • Cover the dish with foil, and bake for 30 minutes, or until hot and bubbly.
  • While the dish bakes, rinse and trim the green onions; Slice the green onions thinly, using all of the whites and enough of the tender green tops to make 1/2 cup; Set aside.
  • If using the black olives, drain them well, and set aside.
  • After baking lasagna, scatter the green onions and olives, if using, evenly over the dish; Return the dish to the oven, uncovered, for 5 more minutes.
  • Remove the dish from the oven, and scatter the remaining cup of Mexican cheese evenly over the dish.
  • Return the dish, uncovered, to the oven, and bake until the cheese melts, about 3 minutes.
  • Remove the lasagna from the oven, and let it stand 10 minutes; Slice into squares and serve.

Steps:

  • Brown meat and drain off fat stir in one can enchilada sauce then set mixture aside.
  • In bowl pour in 2 cans enchilada sauce,.

  • To began start with a corn tortilla and dip the entire tortilla into the enchilada sauce one at a time.
  • Place the shell onto bottom of baking pan and continue this until bottom of pan is covered.
  • Then place a layer of the meat mixture.

1 1/2 cups Old El Paso™ salsa (any variety)

1 can (4.5 oz) Old El Paso™ chopped green chiles
12 corn tortillas (6 inch)
1 1/2 cups shredded Monterey Jack cheese (6 oz)

Steps:

  • Heat oven to 375°F. Cook frozen corn as directed on bag, using minimum cook time. In large bowl, mix corn, chicken, salsa, sour cream and chiles.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange 6 tortillas on bottom and up sides of dish, overlapping slightly. Top with half of the chicken mixture. Continue layering, ending with chicken mixture. Top with cheese.

1/2 cup thinly sliced onions
2 cups fresh corn kernels (from about 2 ears) or frozen corn, thawed
1 teaspoon chopped fresh thyme
3 cloves garlic, minced
About 1 tablespoon chopped canned chipotle chiles in adobo, plus 1 tablespoon adobo sauce
1 large zucchini, thinly sliced into rounds
2 tablespoons all-purpose flour
1 1/2 cups heavy whipping cream
Salt and freshly ground black pepper
One 22-ounce package frozen cheese ravioli, thawed
2 cups shredded Oaxaca cheese or mozzarella

Steps:

  • Melt the butter in a medium heavy saucepan over medium heat. Add the onions and saute until translucent, 5 minutes. Add the corn and saute another 5 minutes. Add the thyme and garlic and saute until fragrant, 1 minute. Add in the chipotle chiles and zucchini and cook over medium-low heat until the flavors incorporate, 5 minutes. Stir in the flour. Add the cream and bring just to a simmer; stir in the adobo sauce. Season with salt and pepper and remove from the heat.
  • Preheat the broiler to high.
  • For assembling the lasagna: Spread about one-quarter of the zucchini-corn mixture over the bottom of a large gratin or 9-by-13-inch baking dish. Top with the ravioli in an even layer. Pour over the remaining zucchini-corn mixture. Top with the cheese.
  • Broil until the top is browned and bubbly, about 8 minutes.

4 Tbsp butter, divided
3 clove minced garlic, divided
2 c corn kernals, frozen & thawed
2 c half and half
1/2 tsp dried thyme
1/2 c thinly sliced sweet onion
4 poblanos, charred, peeled, stemmed, seeded & cut into 1" strips
1 lb cooked & shredded chicken
6 7 x 3 inch no-boil lasagna sheets
2 c low moisture mozzarella, shredded
salt & pepper, to taste

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly spray a 13 x 9 glass baking dish with nonstick spray.
  • 2. Over medium heat, melt 2 T. butter in a large pan. Add 2 of the cloves of minced garlic and the corn; saute for about 5 minutes. Stir in the half & half; cook for about 5 minutes more. Stir in thyme. Remove from heat and allow to cool. Pour into a blender (or use a submersion hand blender) and puree until smooth.
  • 3. In a separate skillet over medium heat, melt the remaining butter. Saute the onions until translucent, about 5 minutes. Add the remaining clove of minced garlic and cook for a minute or so more. Stir in the poblanos and cooked chicken; cook for about 5 minutes to allow flavors to blend. Remove from heat.
  • 4. Place 1/3 of the corn sauce in bottom of prepared pan. Place 3 sheets of (uncooked) lasagna noodles across the sauce. Spread half the poblano mixture across the noodles; cover with 1/2 of the cheese. Repeat except put final sauce on before last of the cheese. Cover with foil.
  • 5. Bake until pasta is cooked, about 50 minutes. Remove foil, increase heat to 375 and bake until cheese is melted and lightly browned, about 5-8 minutes. Remove from oven and let stand for about 15 minutes before serving.

1/2 cup cheese, mozzarella

Steps:

  • Use part-skim mozzarella and nonfat ricotta.
  • Preheat oven to 325 degrees.
  • Spray 9"x13" baking dish with nonstick vegetable spray.
  • In mixing bowl, combine mozzarella, corn, ricotta, egg, oregano, salt, and pepper.
  • Line bottom of baking dish with 3/4 c sauce.
  • Layer half of noodles and top with half of cheese mixture.
  • Repeat and pour remaining sauce over top.
  • Carefully pour water around edges and sprinkle with mozzarella.

I am always looking for something new. Thankfully, my husband likes to try new things too. I found a recipe that sounded good, but I tweaked it a little to make it mine and to make it a main dish meal. We loved it and our guests did too.

  • 6. Note: The no-boil lasagna noodles work perfectly as long as you put the corn sauce down first and make sure that all noodles are covered and not left exposed. They need liquid to soak up in order to cook properly.

4 tablespoons unsalted butter
3 cloves garlic, minced
2 cups fresh corn kernels (from about 2 ears), or frozen and thawed
2 cups heavy cream
1 teaspoon fresh thyme
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/2 cup thinly sliced white onion
4 poblano chiles, charred, peeled, stemmed, seeded and cut into 1-inch strips
1 large zucchini, thinly sliced lengthwise
Twelve 7-by-3-inch no-boil lasagna sheets
2 cups shredded Oaxaca cheese, or mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt 2 tablespoons butter in a medium, heavy saucepan over medium heat. Add two-thirds of the garlic and the corn and saute for 5 minutes. Stir in the cream. Cook over medium-low heat for 5 minutes for the flavors to incorporate. Turn off the heat and let cool slightly. Transfer to a blender and season with the thyme and some salt and pepper, and puree until smooth.
  • Heat the remaining 2 tablespoons butter in a small, heavy skillet over medium heat. Add the onions and saute until translucent, about 5 minutes. Add the remaining garlic and cook for 1 minute. Mix in the poblano strips and zucchini and cook for 5 minutes for the flavors to incorporate. Season with salt and pepper. Turn off the heat.
  • Spread about one-quarter of the corn mixture over the bottom of an 11-by-8-inch baking dish. Cover with a layer of 3 lasagna sheets. Spread one-quarter of the poblano mixture and one-quarter of the cheese over the pasta. Repeat the layering three more times. Cover with foil.
  • Bake until the pasta is cooked and tender, about 50 minutes. Remove the foil and turn up the oven temperature to broil. Broil until golden brown and bubbly, 8 to 10 minutes. Let stand for 15 minutes before serving.

2 eggs, slightly beaten
1/4 cup grated parmesan cheese

guacamole (optional, condiment)

Steps:

  • Preheat oven to 375°F.
  • Brown meat in a large skillet; drain. Add corn, tomato sauce, salsa, chili powder, and cumin. Simmer, stirring frequently, 5 minutes.
  • In a mixing bowl combine cottage cheese, eggs, Parmesan cheese, oregano, and garlic salt; mix well.
  • Arrange 6 tortillas on bottom and up sides of lightly greased 13x9x2-inch baking dish, overlapping as necessary. Top tortillas with half of the meat mixture. Spoon cottage cheese mixture over meat. Arrange remaining tortillas over cottage cheese, overlapping as necessary. Top with remaining meat mixture.

1 1/4 teaspoons cumin powder
1 teaspoon dried oregano
1/8 teaspoon allspice

1/2 teaspoon hot sauce
1/4 teaspoon agave nectar
2 medium garlic cloves, minced
1/3 cup onion, diced
1 (14 ounce) can black beans, drained and rinsed
6 corn tortillas
1 large avocado, sliced thin
3/4 cup corn
1 1/2 tablespoons lime juice (about 1 lime)
1/2 cup tortilla chips, crushed
1/2-3/4 cup cheddar cheese, grated (soy or regular)
1/4 cup cilantro

Steps:

  • Preheat oven to 400 degrees F (205 C). Saute onions for about 5-7 minutes in a small spray of non-stick spray. Add garlic, cook for 1 minute. In a large bowl, combine tomato sauce, chili powder, cumin, oregano, allspice, salt, pepper, hot sauce, agave nectar, garlic, onion, and beans and stir to mix well.
  • Lightly oil an 8x12-inch baking dish. Pour half of mixture into baking dish and tip back and forth to distribute evenly. Place half of tortillas on top of mixture (use 2 whole tortillas and cut a third to cover spots, or cut them all into strips). Place avocado slices on top of tortillas and season with a pinch of salt. Distribute corn kernels over avocado, then drizzle with lime juice. Top this layer with remaining tortillas, spread with remaining sauce, and sprinkle with crushed tortilla chips, then cheese.
  • Cover with foil and bake for 20 minutes, then uncover and bake another 7-10 minutes, until the cheese is melted and the casserole is bubbling at edges. Remove from over and sprinkle with cilantro.

12 corn tortillas, divided
1 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 375.
  • 2. Brown meat, drain.
  • 3. Add corn, tomato sauce, picante sauce, chili powder and cumin.
  • 4. Simmer, stirring frequently, 5 minutes.
  • 5. Combine cottage cheese, eggs, parmesan cheese, oregano and garlic salt.
  • 6. Mix well.

This is one of those, "I haven't got paid yet...what's in the pantry?" dishes! My husband likes to call them "Brand X" dishes. Anyway, it turned out GREAT!! This would go great with a TexMex meal!

1 can(s) corn, drained
1 pkg frozen corn, thawed
1 red bell pepper
1/2 onions
2 Tbsp garlic, minced
1 can(s) red enchilada sauce
1 c sour cream
2 c cheddar cheese, shredded
20 corn tortillas
salt and pepper to taste
3 Tbsp veggie oil

Steps:

  • 1. Heat oven to 350 degrees. Heat veggie oil in pan add bell pepper and onion. Saute on medium heat for 7-10 minutes, until soft.
  • 2. When bell pepper and onion are soft, add the minced garlic. Stir for 1 minute, Then add the frozen and canned corns. Stir until the veggies are heated through.
  • 3. Next, add the enchilada sauce. Mix the veggies well. Then add the sour cream and stir until everything is nicely combined. Turn off heat
  • 4. In a 9X13 casserole dish, add a couple of tablespoons of corn mixture to the bottom and spread evenly. Take 6 tortillas and cut them in half. Layer them on the bottom of the dish. Spoon over corn mixture, then 1/2 cup of cheese. Repeat layers until you end with corn mixture. Then top with the rest of the cheese.
  • 5. Put it in the oven for 30 minutes.
