During the Depression, we made do with what we had. Mother always looked for ways to add variety to our meals, and these corn fritters were her special treat. Steps:
- In a bowl, combine the flour, salt, baking powder and paprika. In another bowl, beat egg yolk; stir in corn. Add to flour mixture and mix well. Beat egg white until soft peaks form; fold into flour mixture. , In a deep-fat fryer, heat oil to 375°. Drop batter by heaping tablespoonfuls into oil; fry for 3-4 minutes or until golden brown. Drain on paper towels.

- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

CORN FRITTERS WITH BEER
Steps:
- Combine the flour, corn meal, baking powder, salt and pepper in one bowl and set aside. In a separate bowl, mix the egg, egg yolk and melted butter. In a third bowl, combine the red and yellow pepper and cilantro. Combine all of these ingredients into another bowl and add the corn kernels and beer. Heat two tablespoons of butter in a pan on medium-high. Add one small scoop of batter per fritter to the pan. Let cook 2 to 4 minutes on the first side then flip and allow to cook about the same amount of time on the second side. You want the fritters to be golden brown. Even better, these corn fritters can be made in advance and then re-heated in a 300-degree oven for about five minutes or until they become crispy. Guacamole makes a great accompaniment as a dipping sauce.
BEER BATTER FOR FRITTERS

- Into a bowl sift together flour and salt. Make a well in the center, pour in the beer and add the oil in a stream, stirring constantly until smooth. Strain the batter into another bowl and let it stand, covered with plastic for 3 hours or refrigerate overnight. Just before using, stir the batter and fold in the egg whites.;

- Whisk together the cornmeal, flour, smoked paprika, baking powder, salt, pepper, buttermilk and egg. Cook's Note: If the batter is too thick, add more buttermilk.
- Add the butter to a medium nonstick skillet over medium-high heat. Once foamy, add the shallots and green onions and saute until tender, about 2 minutes. Add the corn and cook for another 2 minutes. Season with salt and pepper. Fold the cooked vegetables into the batter mixture.
- Wipe out the skillet and add 2 tablespoons canola oil. Once the skillet is hot, spoon out the batter in 1/4-cup scoops. Cook on each side until golden and crisp, about 1 1/2 minutes. Drain on a paper towel-lined platter and sprinkle with salt.
