Creamy Corn Cups (

4 ears sweet corn, husked and silks removed
4 tablespoons mayonnaise or Mexican sour cream
4 tablespoons unsalted butter, softened
6 tablespoons crumbled queso fresco or mild feta cheese
Ground chili powder, for sprinkling
Salt, for sprinkling
Lime wedges, for serving, optional

Steps:

  • Bring a large saucepan of salted water to a boil over medium-high heat. Add the corn and cook until tender, about 5 to 7 minutes. Using tongs, transfer the corn to a platter and allow them to cool slightly. Using a serrated knife, remove the kernels from the corn. Divide the corn between 4 individual cups or small glasses. Put 1 tablespoon mayonnaise and 1 tablespoon butter in each glass. Sprinkle with cheese, chili powder, and salt. Serve with the lime wedges, if desired.

1 box corn muffin mix (recommended: Jiffy)
1/2 cup shredded Mexican cheese blend
1 (7-ounce) jar chopped pimentos
2 tablespoons freshly chopped cilantro leaves
6 poblano peppers, halved lengthwise and seeded
1 tablespoon olive oil
1/2 cup sliced red onion
1 fennel bulb, thinly sliced
4 roasted chicken breast halves
1 (14-ounce) can peaches, undrained
1 tablespoon freshly chopped rosemary leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Prepare corn muffin mix according to package directions, adding cheese, pimentos and cilantro when you add other ingredients. Arrange poblano pepper halves on prepared baking sheet and fill each pepper with an equal amount of corn muffin mix.
  • Bake 18 to 20 minutes, until a wooden pick inserted in 1 muffin comes out clean.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and fennel and saute 3 to 5 minutes, until soft. Add chicken, peaches and rosemary and bring to a simmer. Cook for 5 minutes, until chicken is heated through and sauce thickens.
  • Serve chicken with poblano corn muffins on the side.

3/4 cup butter
1 cup almonds, nibs toasted

Steps:

  • Preheat the oven to 150ºC.
  • In a saucepan, melt butter & honey (3/4 cup + 2 tablespoons) over low heat, stirring constantly until butter is melted.
  • Remove from heat & let cool.
  • Add corn flakes and mix evenly.
  • Add in toasted almond nib & mix evenly.

1 pound (about 36) small to medium shrimp, peeled and deveined, shells reserved
2 1/3 cups corn kernels (from 4 ears corn), cobs reserved
1 medium onion, quartered
10 strips orange zest, each 3 inches long (from 1 orange), orange reserved and halved
1 bay leaf
10 whole black peppercorns
6 cups water
1 cup white wine
2 tablespoons extra-virgin olive oil
2 teaspoons rice vinegar (not seasoned)
Coarse salt and freshly ground pepper
1 head Bibb lettuce, leaves separated
2 firm, ripe Hass avocados, halved, pitted, peeled, sliced lengthwise, and cut into small pieces
1 cup fresh mint, leaves torn if large

Steps:

  • Bring shrimp shells, corncobs, onion, orange zest, bay leaf, peppercorns, water, and wine to a simmer in a large pot. Cook for 15 minutes. Strain through a fine sieve; discard solids. Return liquid to pot, and bring to a boil. Add shrimp and corn kernels, and cook until shrimp are opaque, 2 to 3 minutes. Strain, reserving 1 tablespoon cooking liquid. Refrigerate until chilled, up to 2 hours.
  • Whisk together reserved poaching liquid, oil, and vinegar in a large bowl. Season with salt and pepper. Juice 1 orange half into bowl. Add shrimp and corn, and toss to coat. Refrigerate until chilled, 10 to 15 minutes.
  • Arrange lettuce leaves on each of 4 plates. Top with a scoop of shrimp-corn mixture. Top with avocado and mint, and drizzle with juices from bowl. Juice remaining orange half over tops, and season with salt.

1 (14 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
1 1/2 cups water
1 pinch salt
1/2 teaspoon freshly grated nutmeg (approx)

Steps:

  • Cut the corn from the cob and place it in the blender with the water. Blend well then strain the mixture through a sieve and extract as much juice as possible using the back of a spoon to press down on the mixture.
  • Put the corn juice in a saucepan along with the evaporated and condensed milk and salt.
  • Simmer over a medium heat for about 10 minutes stirring constantly until the mixture becomes creamy and slightly thickened.
  • Pour into 6 custard cups or ramekins, grate the nutmeg lightly over the top and allow to cool.
  • Refrigerate for at least 4 hours before serving.

  • Stack the tortillas and cut off the edges so the tortillas are square. Then, quarter the squares so you have 12 small tortilla pieces.

1 cup shredded process Swiss or Gruyere cheese (4 ounces)

Steps:

1/2 teaspoon light-brown sugar
3/4 teaspoon chopped fresh thyme leaves
Coarse salt
6 ears corn, shucked
1/2 jicama, peeled and cut into 1/2-inch pieces (2 cups)
2 small poblano chiles, seeded, stemmed, and cut into 1/2-inch pieces (1 cup)
1/2 cup packed fresh cilantro leaves
3 tablespoons extra-virgin olive oil
4 1/2 ounces queso fresco, crumbled (1 cup)
1 tablespoon fresh lime juice
1 cup sour cream

Steps:

  • Stir together paprika, sugar, thyme, and 1 1/2 teaspoons salt.
  • Char corn over the flame of a gas stove or in a broiler, turning with tongs, until blackened and blistered, about 3 to 4 minutes each. Let cool, then cut kernels into a large bowl. Toss with jicama, chiles, cilantro, oil, cheese, and lime juice. Season lightly with salt.

4 Tbsp unsalted butter
6 Tbsp crumb;ed queso fresco or mild feta cheese

  • 1. Bring a large saucepan of water sugared(about 3 Tablespoons sugar.) to a boil over medium-hi heat. Add the corn and cook until tender about 7 minutes. Using tongs, transfer the corn to a platter and allow them to cool ever so slightly. Using a serrated knife or a corn remover utensil, remove kernels from the cob. Place corn in a bowl with the Crema Mexicana, butter, and cheese, Divide mixture between 4 individual small glasses or cups. Sprinkle chili powder and salt on top to taste. 8-10 corn tortillas
3 tbsp vegetable oil
100g small shelled prawns
juice 1 lime
½ mango , peeled, deseeded and finely diced
2 tbsp finely diced red onion
1 red chilli , finely diced
handful coriander , finely chopped and some whole leaves reserved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Using a 6cm pastry cutter, cut out circles from the tortillas. Heat the tortilla circles from the tortillas. Heat the tortilla circles for 5 secs in a microwave, then press into a mini muffin tin. Brush with the oil and bake for 8-10 mins until golden and crisp. Remove and leave to cool completely.
  • Chop the prawns into small pieces and marinate in the lime juice for 5 mins. Put the prawns and lime juice in a bowl with the mango, red onion, chilli and coriander. Season, mix together and use to fill the corn cups just before serving. Top with coriander leaves.

Number Of Ingredients 10

1/2 cup vinegar
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon celery seed
2 cans (15-1/4 ounces each) whole kernel corn, drained
3 tablespoons canola oil
2 tablespoons chopped sweet red pepper
4 bacon strips, cooked and crumbled
4 medium sweet red peppers, halved lengthwise and seeded

Steps:

  • In a small saucepan, combine the first five ingredients; bring to a boil. Reduce heat; cover and simmer for 2 minutes. Cool. , Transfer to a bowl. Add corn, oil and chopped red pepper; toss to coat. Cover and refrigerate for 2 hours. Drain; stir in bacon. Spoon into pepper halves.

1 tablespoon butter
2 oz cream cheese
4 Libby's® Whole Kernel Sweet Corn Vegetable Cups (drained)
1/3 cup red bell pepper (diced)
1 small serrano pepper (seeded and diced)
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/2 cup cheddar cheese (shredded)
sea salt (to taste)
freshly cracked pepper (to taste)

Steps:

  • Heat a medium-sized skillet over medium heat and add the butter and cream cheese. Stir until melted, about 1-2 minutes.
  • Add the Libby's® Whole Kernel Sweet Corn Vegetable Cups, bell pepper, and serrano pepper and cook until heated through. Stir in the chili powder and paprika, then add the cheddar cheese and stir until melted, about 1-2 minutes more. Season with salt and pepper and serve immediately, or spoon back into cups and store in the fridge until ready to serve. To reheat, microwave on high for 30-60 seconds, or until bubbly and hot.
