We added Cheddar and chives to this classic and quick side that goes from mixing bowl to oven in less than 10 minutes. It bakes up golden brown and puffy -- perfect for a potluck or holiday gathering.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

1 (14 ounce) can whole kernel corn, drained
2 cups shredded Cheddar cheese
2 eggs, beaten
½ cup butter, melted
¼ cup all-purpose flour
¼ cup diced bell pepper
2 tablespoons white sugar
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 5x7-inch casserole dishes.
  • Stir cream-style corn, whole kernel corn, Cheddar cheese, eggs, butter, flour, bell pepper, sugar, salt, and black pepper together in a large bowl; divide between prepared casserole dishes.
  • Bake in the preheated oven until a toothpick inserted into the center of either casserole comes out clean, about 45 minutes.

1 (16 ounce) can whole corn (drained)
1 (8 1/2 ounce) package Jiffy corn muffin mix
2 eggs, beaten
1/2 cup vegetable oil
3/4 cup milk
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups shredded cheddar cheese

Steps:

  • Mix corns with dry muffin mix; add beaten eggs.
  • Stir in oil and milk, mix well.
  • Add sugar and salt.
  • Pour into lightly greased 13x2x9 inch oblong cake pan.

10 slices bacon, cut-up and cooked
1 medium sized yellow onion, chopped
1 1/2 cups bell peppers, chopped (green or mixed)
1/2 cup sliced mushrooms
1 (2 lb) package frozen corn, thawed
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Mrs. Dash seasoning mix
3 fresh tomatoes, peeled and chopped

Steps:

  • Preheat oven to 350 degrees.
  • Fry bacon; cut or crumble to small pieces.
  • Remove from pan, drain most of grease.
  • Add diced onion, then peppers, mushrooms.
  • Saute till onion is cooked.
  • Add salt, pepper and seasoning mix to corn.
  • Add bacon and sauteed vegetables to corn.
  • Add chopped tomatoes to corn.
  • Blend all together and bake uncovered in large baking dish at 350 x 30 minutes.

1 can(s) creamed corn, undrained; 14.75 oz
1 can(s) corn, drained; 15.25 oz.
1 box Jiffy cornbread mix (8.5 oz) or use the below substitution
2 large eggs
1 stick butter, melted
3 c shredded cheddar cheese
1 c sour cream
COPYCAT JIFFY MIX
2/3 c all-purpose flour
1/4 tsp salt
1 Tbsp baking powder
3 Tbsp sugar
1/2 c cornmeal

Steps:

  • 1. Preheat oven to 350 F. To make corn casserole, combine all the ingredients in a bowl, except for half of the cheese.
  • 2. Grease a 13x9 baking dish.
  • 3. Pour corn casserole into the baking dish.
  • 4. Bake at 350 F until center is set and casserole is slightly golden, about 35-40 minutes.
  • 5. Sprinkle with remaining cheese.
  • 6. Bake for an additional 5-10 minutes.
