1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon butter
2 cups whole kernel corn
1/4 cup diced tomato
1 teaspoon salt
1/8 teaspoon pepper
Cayenne pepper to taste

Steps:

  • In a large saucepan or cast iron skillet, saute onion and green pepper in butter until tender. Stir in the corn, tomato, salt, pepper and cayenne. Cover and simmer for 5-10 minutes or until heated through, stirring occasionally. ,

This is a cornbread recipe I came up with after experimenting with tons of different cornbread recipes. I could not find one I really enjoyed so I finally made up one of my own. This is a great moist cornbread with a little spice! Delicious

1/3 cup butter
2 eggs
1 1/2 cups flour
1 cup cornmeal
3 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder
1 1/2 cups low-fat buttermilk
1 cup creamed corn
3 tablespoons diced jalapenos
4 1/2 ounces diced green chilies (drained)
1/2 cup cheddar cheese (grated)
2 tablespoons butter (for cake pans)

Steps:

  • Preheat oven 375 degrees.
  • Mix 1/3 cup butter and eggs in a large bowl.
  • In another bowl, sift flour, cornmeal, baking powder, salt, chili powder, cayenne pepper, and garlic powder.
  • Add flour mixture to butter mixture. Add buttermilk, creamed corn, jalapenos, green chilis, and cheese.
  • Place 1 tbsp butter in each 9 inch pan. and bake for 5 minutes. Take out of oven and pour batter evenly between pans.
  • Bake for 35 minutes or do toothpick test to see if done.

1 cup cream-style corn
1 cup shredded cheddar cheese
1/2 cup vegetable oil
1/2 cup buttermilk
1 teaspoon baking soda

2 tablespoons bacon drippings

Steps:

  • Mix first 9 ingredients together in a bowl.
  • Put bacon drippings in a 9x9 in glass pan or a iron skillet.

1/4 cup diced zucchini
1 jalapeno, finely diced
2 tablespoons unsalted butter
1/2 teaspoon thyme
1/2 teaspoon cumin

1 (15 ounce) can cream-style sweet corn
1/2 cup heavy cream
1/2 cup evaporated milk
3 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal
1/2 cup shredded cheddar cheese

2 cups Italian bread, cubed

Steps:

  • Heat oven to 350 degrees.

This bread goes very well with chili or any kind of soup. I think it makes a great combination on a cold winter day.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup 2% milk
1/3 cup sugar
1/3 cup butter, melted
1 egg
3/4 cup cornmeal
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, egg, cornmeal, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cornbread is the perfect accommpaniament to a bowl of chili or soup. This recipe has a bit of 'kick' to it due to adding jalapeno peppers, and some chili oil. I threw a chili cook-off at my house, and this recipe was a big hit.

1 c yellow cornmeal
1 c all purpose flour
1/4 c sugar
1 Tbsp baking powder
1 tsp salt
1 c buttermilk
1/3 c vegetable oil
1 egg
1 can(s) jalapeno peppers, diced
1 can(s) whole kernel corn, drained
1/2 c red bell pepper, chopped
1 Tbsp chili oil

Steps:

  • 1. Preheat oven to 400 degrees. Grease a 9x13 baking dish.
  • 2. In a frying pan, over medium-low heat, sauté the bell pepper in a chili infused oil for about 10 minutes; set aside.
  • 3. In a large bowl, combine all other ingredients and blend well; add the sauted peppers.
  • 4. Pour mixture into prepared baking dish.
  • 5. Bake for 20-25 minutes, or until a toothpick poked into the center comes out clean.
