Johnny cake is served throughout The Bahamas so it's not uncommon to find a variety of distinctive tastes. Different places and different islands have different recipes. This version is served at the Cricket Club, and is a standard, simple version.

1 c flour
3/4 c cornmeal
3/4 tsp salt
1 egg, beaten
5 tsp baking powder
1/3 c sugar
2 Tbsp vegetable oil
1 c milk

Steps:

  • 1. Preheat oven to 350F.
  • 2. Mix all dry ingredients together. Add egg, milk and oil to dry mixture and blend well.
  • 3. Pour into 8 inch square pan. Bake 30-35 minutes until slightly brown on top.
  • 4. Serve hot or cold with butter, honey or preserves.

3 cups milk
3 large eggs
2 cups all-purpose flour
3 cups yellow cornmeal
3 teaspoons salt
3 teaspoons baking powder
1 teaspoon baking soda
10 tablespoons unsalted butter, melted
nonstick cooking spray, for greasing
2 tablespoons olive oil
1 large yellow onion, diced
2 lb ground beef
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons paprika
2 teaspoons garlic powder
2 teaspoons chili powder
2 teaspoons cumin
28 oz crushed tomato, 1 can
1 cup shredded mexican cheese blend
sour cream, for serving
scallion, thinly sliced, for serving

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a liquid measuring cup or medium bowl, whisk the eggs and milk until well-combined.
  • In a large bowl, add the flour, cornmeal, salt, baking powder, and baking soda, and whisk to combine.
  • Make a well in the center of the dry ingredients, then pour in the wet ingredients and whisk until smooth. Add the melted butter and stir to combine.
  • Grease a 9x13-inch (23x33-cm) glass baking dish with nonstick spray and line with parchment paper.
  • Pour the cornbread batter into the pan, smoothing the top with a spatula.
  • Bake for 25 minutes, or until a toothpick comes out clean. Let cool for about 10 minutes.
  • In a large pan, heat the olive oil over medium heat. Add the onion and cook until softened, stirring frequently, about 5 minutes.
  • Add the ground beef and break apart with a wooden spoon into small pieces. Add the salt, pepper, paprika, garlic powder, chili powder, and cumin. Cook, stirring frequently, until the ground beef is cooked through, about 5 minutes.
  • Add the crushed tomatoes and stir. Simmer for 10 minutes.
  • Using the bottom of a utensil with a handle that is about 1-inch (2 cm) in diameter, poke multiple holes in the cornbread.
  • Pour the chili over the cornbread and smooth the top with a spatula. Sprinkle the cheese over the chili.
  • Bake for 3 minutes, or until the cheese is melted.
  • Slice and serve with sour cream, scallions, and cilantro.

Growing up, Corn bread was a staple at our house. But Johnnie cake was a real treat, especially slathered in real butter. We even ate the leftovers for breakfast, crumbled in milk.

1 cup - self rising yellow corn meal
2 cups - self rising flour
1/4-1/2 cup(s) sugar (the recipe calls for 1/2, i use 1/4)
1 cup - milk
2 large - eggs, beaten
1/2 stick - butter, melted
2 Tb. - fat melted (bacon, butter, or oil, your choice)

Steps:

  • Pre Heat oven to 350. Mix the dry ingredients, then add the melted butter, stir. Then add milk and beaten eggs. Stir just until everything is moist.(batter should be lumpy.)
  • Grease the skillet, then pour batter into it.
  • Place in the oven, and bake for 50-60 minutes, or until golden brown, and a toothpick comes out clean when tested.
  • Take from oven, let sit 10 minutes, then cut, and enjoy!

SWEET CREAM CORN BREAD OR NEW ENGLAND JOHNNY CAKE

This is New England johnny cake- healthier version..serve it up with baked beans or 13 bean soup...or just eat plain with plenty of butter...this smells totally awesome as it gets close to being baked..

3/4 c. - cornmeal ( i prefer to use white but didn't have any on hand)
1/2c&1/8c. - sifted flour
1/2c&1/8c. - quinoa flour
1tbsp. - baking powder
1/2 tsp. - salt
2 - eggs,beaten
1c. - heavy cream
1/4 c. - sugar( if you prefer a sweeter corn bread add a 1/2 cup instead of 1/4)

Steps:

  • This is an awesome corn bread..and where as corn bread isn't really healthy..this is just a tad bit healthier then most..really deliscious and yummy fresh out of the oven with some butter on it..
  • DIRECTIONS: I could go step by step ...but why complicate this so rediculously simple recip..
  • Sooo..sift all dry ingredients together..
  • Add eggs and cream..beat vigorously til smooth..add a couple more splashes of heavy cream..stir together til mixed ..spray with bakers joy( or grade and flour( lightly) ) pour into a 9" square pan..bake at 425° for 20° minutes..( check it at 15 min..depending on your oven it may take up to 30° min. But I doubt it..

This recipe was given to me by a friend from the Dominican Republic. It is absolutely addicting!! It is more a cake than it is a bread, but either way it will disappear quickly.

1 can(s) 15.25 oz cream corn
1 can(s) 15.25 oz regular corn - drained
1 box(es) jiffy corn bread (see below if you dont want to use a mix)
8 ounce(s) sour cream
1 stick(s) butter - melted
2 - large eggs
TOTALLY FROM SCRATCH INGREDIENTS IN PLACE OF JIFFY CORN BREAD MIX
2/3 cup(s) ap flour
1/2 cup(s) corn meal
1/3 cup(s) sugar, granulated
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt

Steps:

  • Drain your regular corn and melt your butter. Add a little bit of melted butter to your 8x8 glass baking dish and coat the pan well. Preheat oven to 325
  • In a large mixing bowl combine regular corn, creamed corn, eggs and sour cream mixing well.
  • Add the package of corn bread flour and mix well. Note: If making totally from scratch add the flour, corn meal, sugar, baking soda and salt to a medium sized bowl. wisk it all together. Then add the flour/corn meal mixture to the wet ingredients. Mix well
  • Add the remaining melted butter blending it good with the batter. Pour into your 8x8 baking dish and bake in the oven for 45 minutes.
  • After 45 minutes turn the heat on the oven to 350 and bake another 15 minutes or until done. You will know that its done when you insert a toothpick in and it comes out clean. Can serve this warm or cold.
  • PLEASE NOTE: Do not over bake or it will turn out very dry. If you need to bake longer do it only in 5 minute increments before checking again.
