The flavors of Cordon Bleu in a oven-baked, breaded chicken strip. Easy enough for a weeknight, can be prepped in the time it takes the oven to preheat, make a quick salad or vegetable while the chicken cooks for an easy meal.

1 1/2 lbs chicken tenders
6 slices deli ham, smoked, cut in half lengthwise
0.5 (13 2/3 ounce) package baby swiss Cheez-It crackers, crushed into coarse crumbs
1 egg
1 tablespoon water
pepper

Steps:

  • Preheat oven to 400°F.
  • Spray a large rimmed baking sheet with no-stick spray, or line with no-stick foil.
  • Place egg & water in a shallow dish, blend with fork until well mixed.
  • Place cracker crumbs in another shallow dish and stir in pepper.
  • Wrap each chicken strip with a half piece of ham, secure with toothpick if needed.
  • 6. Roll in cracker crumbs, then in egg mixture, then again in cracker crumbs.
  • Place on cookie sheet.
  • Bake 15-25 minutes, turning halfway through. Chicken should register 165° on instant read thermometer.

This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

2 boneless skinless chicken breast halves (6 ounces each)
2 slices deli ham
2 slices Gruyere or Swiss cheese
1/4 cup butter, melted
1/2 cup dry bread crumbs
1/2 teaspoon salt
1/8 teaspoon paprika

Steps:

  • Flatten chicken to 1/4-in. thickness; top each with ham and cheese. Roll up and tuck in ends; secure with toothpicks., Place butter in a shallow bowl. In another shallow bowl, combine the bread crumbs, salt and paprika. Dip chicken in butter then roll in crumb mixture., Transfer to a greased 8-in. square baking dish. Bake at 350° for 40-45 minutes or until chicken is no longer pink. Discard toothpicks.
