I love chicken cordon bleu! I also love egg rolls. If you love both of these as much as I do, you will never make chicken cordon bleu the traditional way again! This is the best of both worlds.

3 tablespoons butter, divided
2 pounds boneless, skinless chicken breast halves, sliced into thin strips
salt and ground black pepper to taste
2 tablespoons all-purpose flour
2 cups milk
1 cup shredded Swiss cheese
1 egg
1 (16 ounce) package egg roll wrappers
1 (8 ounce) package thinly sliced deli ham
1 (8 ounce) package thinly sliced Swiss cheese, slices cut in half
½ cup vegetable oil for frying

Steps:

  • Melt 1 tablespoon butter in a skillet. Cook chicken strips until no longer pink in the center, about 10 minutes. Season with salt and pepper. Transfer chicken to a plate.
  • Melt the remaining butter in the same skillet over medium-low heat. Whisk in flour until smooth. Cook, whisking constantly, until well combined, about 1 minute. Increase heat to medium. Add milk gradually. Cook, stirring constantly, until thickened and bubbling, about 7 minutes. Add shredded cheese, salt, and pepper. Cook and stir the sauce until the cheese melts, about 2 minutes. Remove from heat.
  • Beat egg with 1 tablespoon water in a small bowl.
  • Lay 1 egg roll wrapper on a work surface. Fold 1 piece of ham in half and place in the center of the wrapper. Top with a half-slice of Swiss cheese and a chicken strip. Cover with another half-slice of Swiss cheese and folded piece of ham. Brush the edges of the wrapper with the egg mixture; fold wrapper in half over the filling and seal the edges. Repeat with the remaining wrappers.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Place egg rolls in the hot oil; fry until crispy, about 3 minutes. Drain on paper towels.

12 slices deli cut chicken breast
12 slices shaved ham
12 slices baby lace Swiss cheese
12 egg roll skins
1/2 teaspoon corn starch
1 teaspoon water
clarified butter or a butter spray
Mustard or dipping sauce of your choice.

Steps:

  • Preheat oven to 300º F. Mix the water and corn starch to make a paste. Place an egg roll skin on a sheet of waxed paper and layer it with chicken, ham and cheese leaving 3/4" of shin uncovered. Starting from the covered end roll it up and put a little paste on the end to seal. Repeat with remaining slices. Spray a cookie sheet with a nonstick spray. Spray or coat egg rolls with butter. Place egg roll on cookie sheet and bake for 10 to 15 minutes or until skins are golden brown and crisp. Serve with mustard or favorite dipping sauce.

These delicious golden egg rolls disappear at parties...but my kids love them all year-round. I often freeze a batch and let them microwave a couple for after school snacks.

1/2 pound cubed cooked chicken breasts
1/2 pound frozen breaded chicken tenders, thawed and cubed
1 cup shredded Swiss cheese
1/3 pound cubed deli ham
1/2 cup honey mustard
1/4 cup sliced ripe olives, drained
24 egg roll wrappers
Oil for frying
HONEY MUSTARD DIPPING SAUCE:
1/2 cup mayonnaise
3 tablespoons honey mustard

Steps:

  • In a large bowl, combine the first six ingredients. Place about 1/4 cup filling in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filing. Moisten remaining corner with water; roll up tightly to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels. , In a small bowl, combine mayonnaise and mustard. Serve with egg rolls.
