Pronounced (co-key-saint-jock) is a delicious appetizer or main course. It's easy to make and is simply a white sauce infused with seafood. You can add lobster or crab; serve in individual baking dishes or on a real scallop shell (sold in gourmet shops). It's fun and so good!

1/4 cup melted butter
1/4 cup flour
1 teaspoon prepared mustard
1 teaspoon salt
1/2 teaspoon pepper
2 cups whole milk
1/2 cup grated parmesan cheese
1 minced shallot
1/2 cup sherry wine or 1/2 cup white wine
4 tablespoons butter
2 tablespoons chopped parsley (fine)
1 lb bay scallop
1 lb shrimp
1/2 package grated swiss cheese
1/2 cup breadcrumbs

Steps:

  • On stovetop melt 1/4 cup butter.
  • Add flour, mustard, salt and pepper.
  • Stir to bring together, slowly add milk.
  • Cook slow approximately 10 minutes to thickened.
  • Add parmesean cheese.
  • Continue cooking till smooth and flour has absorbed all the milk. It will be like velvet.
  • In another pan, saute shallots in butter and sherry, wine or brandy.
  • Add seafood, parsley and barely cook 2-3 minutes.
  • Remove from heat, add to sauce.
  • Fill shells with mixture, top with cheese and breadcrumb and sprinkle paprika for color.
  • Bake in 400 degree oven just until cheese melts and crumbs brown.
  • Serve at once.

I either buy fresh scallops, or the frozen sea scallops from Trader Joe's. They thaw fast enough that I can easily make this on a weeknight. I'm told some folks have problems with the sauce "breaking" if you are not careful whisking in the butter and keeping the sauce from getting too hot, but I have not. I usually serve this dish with rice and steamed spinach; the sauce goes well over just about anything. The chives are good, but I prefer the tarragon. My husband and I find that we can easily eat 1/2 lb of scallops.

16 ounces sea scallops (approx 12 scallops)
1/4 cup dry vermouth
1 1/2 tablespoons minced shallots
1 1/2 tablespoons white wine vinegar
1 1/2 tablespoons dry white wine
1 tablespoon cold water
8 tablespoons cold unsalted butter, cut into slices
2 tablespoons extra virgin olive oil
1 1/2 tablespoons minced fresh tarragon or 1 1/2 tablespoons minced fresh chives
kosher salt
fresh ground pepper

Steps:

  • Marinate scallops in vermouth at least 15 minutes (or up to an hour); In a medium saucepan large enough to hold a small heavy saucepan, boil some water and set aside.
  • In that small heavy saucepan, simmer shallot in vinegar and wine until liquid is reduced to approximately 1T; Remove from heat and add water; Reduce heat to low and cook, adding 6T butter 1T at a time; whisking in each new piece before the previous one has melted completely (occasionally lift pan from heat to cool mixture); Sauce should never liquify, it should be similar to a thin hollandaise; remove from heat and whisk in herbs, and salt and pepper to taste; Cover and keep warm in pan of hot water.
  • Drain scallops and pat dry.
  • Season scallops with salt and pepper; Heat 1 T butter and 1 T olive oil in a large non-stick skillet over moderate heat, until foam subsides; saute half of the scallops, turning once until just cooked through (approx 4 minutes total); wipe out skillet and saute the other half of the scallops in remaining butter/olive oil mixture.
  • Serve scallops with beurre blanc.

8 tablespoons (1 stick) unsalted butter, divided
1/4 cup all-purpose flour
1 1/2 cups seafood stock or clam juice
1 cup heavy cream
1/2 teaspoon curry powder
Kosher salt and freshly ground black pepper
1 cup small-diced shallots (4 large)
12 ounces cremini mushrooms, caps brushed clean, stems discarded
1/4 cup Cognac or brandy
1 1/2 cups fresh bread crumbs
1/4 cup minced fresh flat-leaf parsley
5 ounces grated Gruyère cheese
1/4 cup good olive oil
2 pounds fresh bay scallops, drained, side muscles removed

Steps:

  • Preheat the oven to 400 degrees and place six (1 1/2-cup) gratin dishes on 2 sheet pans.
  • Melt 4 tablespoons of the butter over medium heat in a medium saucepan. Add the flour and cook for 2 minutes, whisking constantly. Add the seafood stock and whisk until it is smooth and thickened. Whisk in the cream, curry powder, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Bring the sauce to a boil, lower the heat, and simmer for 10 minutes, stirring occasionally. Set aside.
  • Heat the remaining 4 tablespoons of butter in a large (12-inch) sauté pan over medium-low heat. Add the shallots and sauté for 2 to 3 minutes, until tender. Slice the mushroom caps 1/2 inch thick, add to the shallots, and cook for 8 minutes, stirring often. Add the Cognac and cook for 1 to 2 minutes, until most of the liquid has evaporated. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper and set aside.
  • Combine the bread crumbs, parsley, Gruyère, and olive oil in a medium bowl and stir to moisten the crumbs. Set aside.
  • Add the mushrooms to the cream sauce. Add the scallops and 1 1/2 teaspoons salt, mix well, and divide among the gratin dishes. Sprinkle the bread crumb mixture evenly on top and bake for 20 minutes, until the scallops are cooked and the sauce is lightly browned and bubbly. Serve hot.

Here is an easy version of coquilles St.-Jacques, the classic French preparation of scallops in a creamy sauce, under a crust of bread crumbs and cheese. It comes from Ina Garten, the celebrated cookbook author and television star, who has been cooking it for dinner parties, she told The Times, practically since the start of her marriage to Jeffrey Garten in 1968. It makes for a beautiful entree that matches well with a green salad, flinty white wine and good conversation. It can be made the day before serving and heated through in an oven while guests gather. "A lot of dishes taste better after they sit for a while," Garten said. With its whisper of curry powder in the rich, unctuous sauce, this is one of them. You can make it in a casserole, but little gratin dishes are better and come in handy far more often than you might think. One per guest.

1 cup heavy cream
1/4 teaspoon curry powder

3 large shallots, peeled and diced, approximately 1 cup
12 ounces cremini mushrooms, cleaned, stems discarded, sliced
1/4 cup brandy or Cognac
1 1/2 cups fresh bread crumbs (approximately 6 slices white bread, crusts removed, finely chopped or pulsed in a food processor)
1/4 cup minced flat-leaf parsley
5 ounces Gruyère cheese, grated
1/4 cup extra-virgin olive oil
2 pounds bay scallops, or quartered sea scallops, abductor muscles removed

Steps:

  • Set a saucepan over medium heat, and melt 4 tablespoons of the butter in it. When it foams, add the flour, and cook for approximately 4 minutes, whisking constantly. Add the stock, and whisk again, until it is smooth and thick. Add the cream, curry powder, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Bring the sauce just to a boil, then lower heat and simmer for approximately 10 minutes, stirring occasionally. Set aside.
  • Put 3 tablespoons butter in a large sauté pan set over medium heat. When it melts and foams, add the shallots, and cook, stirring occasionally, until they are clear and tender, approximately 5 minutes. Add the sliced mushroom caps, and cook for 8 to 10 minutes, until they have released their liquid and are just starting to brown. Add the brandy or Cognac, and cook for 1 to 2 minutes, until the alcohol has mostly evaporated. Add a teaspoon of salt to the mixture and 1/2 teaspoon of pepper, and stir again to combine. Add mushroom mixture to the cream sauce, and set aside.
  • Combine the bread crumbs, parsley and Gruyère in a large bowl, stir to combine, then moisten the mixture with the olive oil, stirring again to combine.
  • Use last tablespoon of butter to grease 6 1 1/2-cup gratin dishes. Divide the scallops evenly among them and top with equal amounts of the cream and mushroom sauce. Top each gratin dish with a handful or two of the bread-crumb mixture. Place dishes on a sheet tray, cover gently with foil or plastic wrap and store in the refrigerator for up to a day.
  • When ready to cook, preheat the oven to 400. Remove cover from sheet tray, and place in the oven for approximately 20 minutes, or until the tops are lightly browned and bubbling and the scallops are cooked through.

I don't recall where I got this excellent recipe, but have been making it for special occasions for 25 years! Easy to put together, and very elegant served with rice pilaf and a green salad for company. I like to serve this in prepared scallop shells.

1 teaspoon lemon juice
1 cup water
1/2 teaspoon salt
2 lbs scallops (sea or bay)
4 tablespoons butter
1/4 cup onion, chopped (or shallot)
1/4 lb mushroom, sliced
1/3 cup flour
1 dash pepper
1 cup light cream
1/2 cup milk
1 cup gruyere cheese, shredded
1/2 cup white wine
1 tablespoon lemon juice
1 tablespoon parsley, minced
1/2 cup seasoned dry bread crumb
2 tablespoons butter, melted

Steps:

  • Lightly grease or butter 8 large scallop shells or 8 small ramekins.
  • Combine 1 t. lemon juice, water and salt in a saucepan large enough to hold scallops. Bring to a boil.
  • Add scallops and simmer 6 minutes. Drain. Set aside.
  • Melt 4 T. butter in saute pan. Add onions and mushrooms. Saute until wilted and soft.
  • Whisk in flour and pepper. Cook 30 seconds.
  • Whisk in cream and milk. Bring to boil, whisking constantly, until thickened.
  • Add cheese, wine, 1 T. lemon juice and parsley. Whisk and cook until blended and cheese has melted. Add scallops.
  • Divide mixture into 8 shells or ramekins.
  • Combine bread crumbs and 2 T. melted butter. Sprinkle on scallop mixture.
  • Broil 4" from heat for 2-3 minutes, or until crumbs are brown and sizzling.

1 lb large scallop (sliced 2 cups)
3/4 cup dry white wine or 3/4 cup vermouth
2 cups fresh mushrooms (sliced)
1/2 teaspoon salt
1/2 teaspoon white pepper
1 bay leaf
2 tablespoons shallots (minced) or 2 tablespoons scallions (minced)
3 tablespoons unsalted butter
4 tablespoons flour
3/4 cup milk
1/2 cup heavy whipping cream
2 egg yolks
1/2 teaspoon lemon juice
3 tablespoons grated swiss cheese
1 cup plain breadcrumbs
1 tablespoon granulated sugar

Steps:

  • Place scallops in saucepan with wine or vermouth, mushrooms, seasonings & herbs.
  • Add water, if necessary, to almost cover ingredients.
  • Bring to simmer & then cover pan & simmer slowly for 5 minutes.
  • Remove scallops & mushrooms & place into a bowl.
  • Rapidly boil down the cooking liquid until reduced to the amount of 1 cup.
  • Melt 3 tbsp of butter in a new pan& stir in the flour until smooth.
  • Cook slowly for 2 minutes without browning.
  • Remove from heat & beat in the scallop cooking liquid.
  • Stir with whip over medium heat until sauce thickens.
  • Thin out with milk.
  • Blend egg yolks in a bowl with half of the heavy cream.
  • Beat in the hot sauce driblets.
  • Return to the pan & stir over medium heat until sauce comes to a slight boil.
  • Thin out, as necessary, with more cream or milk.
  • Carefully correct seasoning & add lemon juice & sugar if needed.
  • Fold 2/3 of sauce into the scallops & mushrooms & spoon into lightly buttered large shells or individual ramekins (round baking bowls).
  • Spoon on the remaining sauce & sprinkle with the cheese.
  • Top with bread crumbs & place little dabs of butter on top.
  • Then sprinkle with paprika.
  • Place into broiler until lightly browned & serve with crusty bread if desired.

2 garlic cloves, smashed
4 ounces butter
3 tablespoons chopped parsley
salt and black pepper

Steps:

  • Wash and dry the scallops and separate the coral from the white flesh.
  • Peel and smash the garlic.
  • Melt half the butter in a saucepan and cook the white flesh very gently for 10 minutes, until tender.
  • Season to taste.
  • Place on paper towel and keep hot between two plates over a pan of hot water.
  • Pour out the butter from the pan, wipe it out with paper and add the remaining butter and the coral, cook for 1 minute only on each side.
  • Add the white flesh and the herbs and garlic, leave over the heat just long enough to mix thoroughly and divide between the heated shells, (plates).
  • Serve immediately with a dry rose wine.

1 1/2 tablespoons minced shallot
1 1/2 tablespoons white-wine vinegar
1 1/2 tablespoons dry white wine
1 tablespoon cold water
9 tablespoons cold unsalted butter, cut into tablespoon pieces
1 1/2 teaspoons finely chopped fresh tarragon

Steps:

  • Marinate scallops in vermouth 15 minutes.
  • Make beurre blanc:
  • Simmer shallot in vinegar and wine in a small heavy saucepan until liquid is reduced to about 1 tablespoon. Remove from heat and add water. Reduce heat to low and cook, whisking in 6 tablespoons butter 1 tablespoon at a time, adding each new piece before previous one has melted completely and occasionally lifting pan from heat to cool mixture. (Sauce must not get hot enough to liquefy; it should be the consistency of a thin hollandaise.) Remove from heat and whisk in tarragon and salt and pepper to taste. Keep warm off heat, covered.
  • Cook scallops:
  • Drain scallops and pat dry between paper towels. Heat 1 1/2 tablespoons of remaining butter in a 12-inch nonstick skillet over moderately high heat until foam subsides. While butter is heating, season half of scallops with salt and pepper. Sauté scallops, turning once, until just cooked through, about 4 minutes total. Wipe out skillet and sauté remaining scallops in remaining 1 1/2 tablespoons butter in same manner.
  • Serve scallops with beurre blanc.
