1 pkg yellow cake mix
8 oz tub of cool whip light
3 Tbsp peanut butter, creamy
2 eggs
1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly grease baking sheets.
  • 2. Beat together the whipped topping and softened peanut butter so that it mixes with the cool whip; beat the eggs and add to the coolwhip. Add the yellow cake mix and continue to mix. Dough will be thick.
  • 3. Drop by teaspoonfuls into a bowl of confectioners' sugar and roll to coat. Place cookies on the prepared baking sheets. Bake at 350 degrees F for 8 minutes

2 cups Cool Whip, thawed
1 egg
1/2 cup powdered sugar

Steps:

  • In a large bowl, add the cake mix, Cool Whip and egg. Beat with a mixer until smooth and combined. Note: it will be very sticky. Cover bowl and chill in the fridge for 30 minutes.
  • Place powdered sugar in a bowl. Using a cookie scoop, drop the chilled dough into the powdered sugar. Roll with your hands to make a ball. Place balls on a greased cookie sheet about 2 inches apart.
  • Bake for 12 minutes or until bottoms are golden brown at 350F. Let cool 5 minutes on the cookie sheet before transferring to a cooling rack.
