- Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

- Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
- When the gelatin has thickened, stir in the mayonnaise, and fold in the drained cucumber. Transfer to a mold or serving bowl, and chill for 3 hours, or until set.

MY GRANDMA'S COOL CUCUMBER SALAD
This is a very simple recipe from one of the best cooks ever -- my grandmother. The proportions are a little ambiguous, use your eye -- that's how the best cooks do it! The secret -- be sure and dry the cucumbers well!

- Peel cucumbers, but leave a little on for color and slice by hand as thin as possible. Dry slices with paper towels.
- Place dried cucumber slices in a large bowl with onion slices. Generously season with salt and pepper. Toss well and let sit 10 minuets, drain any excess liquids.
- Toss cucumbers and onions in with enough sour cream to coat. Refrigerate until well chilled. Stir, and season with salt and pepper to taste if needed.

COOL AND CRUNCHY MELON-CUCUMBER SALAD
This summer, add cucumber to a melon salad to make it extra-crisp and cool. We cut watermelon and cantaloupe into cubes and balls for a beautifully geometric presentation that can be eaten with toothpicks. We also tossed them as a salad, dressed with yuzu juice (available at Asian supermarkets and specialty stores), though it's equally out-of-this-world with lime or lemon juice.

COOL CUCUMBER PASTA SALAD
I got this recipe from a good friend of mine several years ago. I always make it when my cucumbers are ready in the summer. It has a sweet & tangy flavor and the longer you leave the onions and cucumber set in the dressing the more they soak up the great taste! As for servings, I've never really measured but it makes a large bowl full. We usually have enough for 2 meals. Try it for yourself!

- Sprinkle the diced cucumber with the 1/2 tsp of salt and let sit in a collander over a bowl for about 20 minutes to draw out the liquid. Shake off any extra liquid.
- Meanwhile, cook the macaroni according to the package. Drain and rinse with icy cold water. Drain well.

- 1. Wash and peel the cucumber. Slice into thin/medium-thin slices. Mix in bowl with vinegar, salt and pepper, and chill in fridge for about 2 hours.
- 2. After chilled, drain the cucumbers, and if you don't like the strong vinegar flavor, give them a rinse, too.
- 3. Mix in the sour cream. Chop dill and add that in. Mix well and enjoy! This tastes very fresh and cold and is a great accompaniment to anything off the grill, and also goes so well with baked or mashed potato!

I put this recipe together from a lot of different sources after trying in vain to find one I really liked. It has a rather delicate flavor, but you can add a little stronger vinegar if you like. I did research to determine if there was a similar one but couldn't find one. My apologies if it is the same as another.

- For dressing, mix first 8 ingredients in a container and shake well.
- Refrigerate for a couple of hours to blend the flavors.
- Slice onion very thin and place in ice water for half hour.
- Dry onion with paper towels before using.
- Peel cucumbers and slice thin.
- Place in a bowl, pour on dressing and mix well.
- Peel and slice avocado.
- Arrange cucumbers (don't pour out the dressing), onion, and avocado individually on a plate (they can be mixed but I like the way they look individually).
- Drizzle the remaining dressing on the onion and avocado.
- Sprinkle with sesame seeds or peanuts.

- Peel the cucumber and slice very thin. Put in a bowl and toss with the salt; chill one hour. Drain (I don't do a lot of salt and in the future will rinse), then pat dry. Return to bowl and stir in the Crema and onion, season with fresh ground pepper. Chill and serve.
- The original recipe called for re-constituted dried onion flakes (ugh) and pickled cherry peppers, which I didn't have. It also called for some sugar, but the Mexican crema was perfectly sweet enough for me. Should I ever find the pickled peppers, though, I'd like to try adding them.

- 1. In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
- 2. In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.

COOL RICE AND CUCUMBER SALAD

- Bring 2 quarts water to a boil in a medium pan. Add the rice and 2 tsp. salt and boil until tender, 12-15 minutes. Meanwhile, put the cucumbers in a large bowl with the herbs. In a small bowl, combine scallions, vinegar, oil, and 1/4 tsp. salt. When the rice is done, pour it into a colander, rinse briefly, then shake off as much water as possible. Put the warm rice into the bowl with the cucumbers, add the dressing and yogurt, and toss gently with a wide rubber spatula. Taste for salt and tartness. Certain types of rice will absorb more vinegar and salt than others. Serve tepid or chilled, mounded on plates and garnished with light green lettuce leaves.
