COOL AS A CUCUMBER! CHEESE, CUCUMBER AND CHIVE SANDWICH SPREAD
A must for cool people - or those who like cucumbers! This is a very versatile sandwich spread or dip, which is so easy to whip up at the last minute; it makes VERY elegant sandwiches and is a wonderful accompaniment for smoked salmon, prawns (shrimp) or tuna. I have also used it to spread on savoury scones and crackers. If you plan to make this a day before you need to use it, you might like to salt the cucumbers first - as they do release water into the spread.

Steps:
- Allow the cream cheese to come to room temperature for about 10 to 15 minutes, to soften it slightly.
- Add all the ingredients, EXCEPT the cucumber, and mix thoroughly. Season to taste with salt and pepper, then add the diced cucumber and gently fold through the mixture.Check the seasoning once more.
- Serve as a sandwich spread or as a dip for crudites; also wonderful with crackers and scones. This spread is deleicious when served with smoked salmon and blinis.
- Store in an airtight container in the fridge for up to 2 days.

Great for a party or a potluck meal. I usually make my own French Bread but I've also used store bought French Bread before and it works well too.

- Mix all the spread ingredients together.
- Slice a loaf of French bread lengthwise.
- Spread mixture on the inside of both halves.
- Top bottom half with any combination of sandwich meats that you desire.
- Can also be topped with pickles if you wish.
- Place top half of bread on the sandwich and slice into individual servings.

MS. JENNY BENEDICT'S FAMOUS CUCUMBER SPREAD
This cucumber finger sandwich filling was created by Jenny Benedict, a popular caterer in Louisville, KY way back when. Now, it is a Kentucky favorite and dang near a recipe you MUST have on the table for a Derby party. This is pretty for St. Patty's Day and is so much better than a plain ole cucumber slice on a piece of bread. Cook time is chill time.

- Peel and seed the cucumber: put in a food chopper and chop until very VERY VERY fine.
- In a small bowl, combine all the ingredients.
- Add food coloring to desired shade.
