This is a cool and creamy dressing that is perfect for those hot summers!

1 large vidalia onion
1/4 c vegetable or canola oil
6 Tbsp white vinegar
8 Tbsp sugar
1 1/2 tsp dry mustard
1/4 tsp chopped garlic
1/2 tsp celery seed
1/4 tsp coarse black pepper
1 c mayonnaise
1 Tbsp freshly chopped basil

Steps:

  • 1. Peel the onion and place it in a microwave safe bowl with a 1/4 cup of water. Microwave for four minutes.
  • 2. Discard the water, and allow the onion to cool to room temperature. Add the onion and all other ingredients to a blender. Blend on low until well mixed.
  • 3. Chill for two hours before serving. Keep leftovers refrigerated.

4 ears fresh corn, shucked
Cooking spray, for coating the grill
1 large Vidalia onion, cut into 1/2-inch slices
1 1/4 cups finely chopped fresh cilantro
1 1/4 cups chopped seeded yellow tomato
3 tablespoons rice vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes

Steps:

  • Prepare a charcoal or gas grill for medium-high heat, or preheat the broiler.
  • Place the corn on the grill or in a broiler pan. Cook, turning every 5 minutes, until lightly browned all over, about 20 minutes. Let cool, then cut the kernels from the ears (you should have about 3 cups).
  • Coat the grill or broiler pan with cooking spray. Grill the onion slices for 5 minutes on each side.
  • Combine the corn, onions, cilantro, tomatoes, vinegar, salt, pepper and red pepper flakes in a large bowl. Toss well and serve.

1 cup sugar
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed
1 medium vidalia onion, grated (or other sweet onion)
3/4 cup apple cider vinegar
2 tablespoons olive oil

Steps:

  • In a small saucepan, mix the first four ingredients. Add grated onion (small to medium, depending on your taste), add the olive oil and vinegar. Heat until sugar is melted. Cool and refrigerate.
  • Reheat and use to wilt lettuce or serve cold on salad. Keeps in refrigerator indefinitely. Enjoy!
