The classic peanut butter cookie made even more irresistible with JIF® Peanut Butter!

Number Of Ingredients 9

1 ¼ cups firmly packed light brown sugar
¾ cup JIF® Peanut Butter
½ cup Butter Flavor CRISCO® Stick
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 ¾ cups sifted all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F. Place sheets of foil on countertop for cooling cookies.
  • Combine brown sugar, JIF® peanut butter, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.
  • Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended.
  • Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Flatten slightly in crisscross pattern with tines of fork.
  • Bake one baking sheet at a time for 7-8 minutes or until set and just beginning to brown. Do not over-bake. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.

This is the recipe that is found on the side of the box of Jiffy Baking Mix. These have always been a big hit with my family around Christmas time.

2 cups Jiffy baking mix
2/3 cup sugar
1/3 cup milk
5 tablespoons shortening
1 egg
1 teaspoon vanilla

Steps:

  • Combine all ingredients and mix vigorously until well blended.
  • Drop by tablespoons onto prepared cookie sheets.
  • Bake at 350º F for 8 - 10 minutes.

These are so yummy. My aunt submitted them to our family cookbook her story is as follows; "These cookies were served in the cafeteria when I was in elementary school. My daughter Leeann made these and entered them in the county fair and received a blue ribbon!!! The reason I chose this recipe is because they are my favorites!" I love these as well, and you can leave out the cocoa for a peanut butter jiffy rather than peanut butter and chocolate.

  • Pour in group 2 ingredients stir well.
  • Drop on wax paper and let cool completely.

My son just loves these cookies...when I am pressed for time, I make him a batch of these...cake mix, candies, eggs and butter...20 minutes later...can't beat that...use whatever candies you want...Enjoy!

1 - 16 oz white or yellow cake mix
5 Tbsp melted butter
2 c candies, your choice
2 eggs, beaten

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a 9 x 13 baking pan or dish with non stick cooking spray.
  • 2. In a bowl; mix together cake, eggs, butter until thoroughly blended.
  • 3. Stir in the candies.
  • 4. Spread evenly into baking pan. May need to grease fingers if not using off set knife.
  • 5. Bake for 20 minutes. Enjoy! These are also great served warm, with a scoop of ice cream.

2/3 cup quick-cooking oats
1/2 cup butter, melted
1 large egg
1/2 cup milk chocolate M&M's or butterscotch chips

Steps:

  • In a large bowl, beat the first four ingredients until well blended. Stir in the M&M's or chips. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Immediately remove to wire racks to cool.
