10 tablespoons butter
1/4 cup sugar
1 tablespoon lemon zest
2 teaspoons ground nutmeg
1 teaspoon vanilla extract
1/4 cup honey
1 egg
1 cup shred raw sweet potato
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons butter
4 teaspoons lemon juice
1 1/2 cups powdered sugar
2 tablespoons water

Steps:

  • 1.
  • Cream together butter and sugar in bowl. Blend in lemon zest, nutmeg, honey and egg. Fold in sweet potato.
  • 2.
  • In separate bowl. sift flour, baking powder, baking soda and salt.
  • 3.
  • Add it to the first mixture and blend well.
  • 4.
  • Arrange cookie dough by rounded teaspoons on un-greased or wax-papered cookie sheet.
  • 5.
  • Bake at 350 degrees for 7 minutes.
  • 6.
  • To make glaze: Use wooden spoon or whisk to combine all ingredients in glass container until smooth.
  • 7.
  • Add more water by the drop until glaze is easy to spread on cooled cookies.

1 cup mashed sweet potato
1/4 cup milk
1 egg, slightly beaten
4 tablespoons melted butter
1 1/4 cups sifted flour
2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup raisins

Steps:

  • Preheat oven to 375 degrees. Mix sweet potatoes, milk, and melted butter and beat well. Sift and stir in the remaining ingredients. Drop by spoonfulls onto greased cookie sheet and bake 15 minutes.
  • Or chill 1-2 hour then turn onto a floured board, knead lightly and roll out 1/2 an inch thick. Cut with a cookie cutter. Place cookies on a greased baking sheet, and bake for 15 minutes. Sprinkle some cinnamon/sugar mixture on top.
