1/2 cup brown sugar
1/2 cup (or 1 stick) butter
1 teaspoon vanilla
2 eggs
2-1/2 cups all-purpose flour
Salt to taste

Steps:

  • In an electric mixer cream the butter with the brown sugar until the mixture is light and fluffy. Add vanilla and eggs one at a time, mix well. Sift together the flour and salt, add it to the wet ingredients beating until just incorporated. Place the dough in a 1 gallon size plastic bag. Chill the dough in the refrigerator for at least 2 hours and up to 8 hours. Preheat oven to 375 degrees. On a lightly floured board roll the dough to approximately 1/4 inch thick. Remove rolled dough to a lightly floured board and using any shape cookie cutter cut the dough into shapes. Place on a cookie sheet and bake for 7 to 10 minutes (depending on the size of the cookies). Remove to a rack and cool before decorating. Place the rack with the cookies over another pan to catch the excess chocolate. Put the chocolate in a quart size plastic bag. Place the bag with the chocolate in a saucepan with hot water. Allow the chocolate to melt, squeezing the bag to mix occasionally. Snip one of the corners off and drizzle chocolate over the cookies. Allow chocolate to set before serving.;
  • To decorate: 4 ounces semi-sweet chocolate, chopped.

These are a must for the holidays Use a good quality white chocolate such a Bakers or Lindt, or decorate with coloured frosting. Plan ahead the dough needs to chill for 2 hours, or freeze for up to 1 month. You can also sprinkle with very finely chopped almonds on top of the chocolate.

1 1/2 cups powdered sugar
1 cup butter (no subs!)
1 large egg
2 1/2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 -5 ounces white chocolate, melted
finely chopped almonds (optional)

Steps:

  • In a large bowl using an electric mixer beat sugar and butter until light (about 5 minutes).
  • Beat in egg and vanilla.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture JUST to combine.
  • Divide the dough in half and gather each pieces into a ball, then flatten into a disc.
  • Wrap in plastic wrap and chill for a minimum of 2 hours or more, or freeze.
  • Set oven to 325°F (second-lowest rack).
  • Roll out one disc on a lightly floured surface to about 1/8-inch thickness.
  • Using assorted cookie cutter cut out cookies and transfer to a ungreased cookie sheet, leaving 1-inch between cookies.
  • Gather dough scraps and re-roll.
  • Repeat with remaining dough disc.
  • Bake cookies until pale golden (about 13 minutes).
  • Transfer to racks and cool.
  • Melt the white chocolate and spoon into a pastry bag (1/16-inch tip size) or just drizzle with a small spoon.
  • Pipe the chocolate onto the cookies in a decorative pattern.
  • Sprinkle lightly with very finely chopped almonds if desired, then let stand until the chocolate sets.

This recipe came from the newspaper in the small Arizona town where I grew up. We use it almost every year to make Christmas cookies. They're not too dry and are good even without any icing or candy decorations.

1 cup butter or 1 cup margarine, softened
1 1/2 cups powdered sugar
1 egg
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
colored sprinkles
candy sprinkles

Steps:

  • Mix thoroughly butter, powdered sugar, egg, and vanilla. Blend in baking soda, cream of tartar, and flour. Cover and chill for 2 to 3 hours.
  • Heat oven to 375 degrees.
  • Divide the dough in half, and roll each half of dough 3/16" inch thick on a lightly floured or cloth-covered board.
  • Cut into desired shapes and place on a lightly greased baking sheet. Decorate with colored sugar or candy sprinkles.
  • Bake 7 to 8 minutes or until light brown on the edges.

2/3 cup butter
1 cup granulated sugar
2 eggs
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
4 cups all-purpose flour
Decorating Frosting, recipe follows
2 cups confectioners sugar, sifted
1 teaspoon butter (melted)
1/2 teaspoon vanilla
Milk or cream to moisten

Steps:

  • Preheat oven to 350 degrees F. Cream butter and sugar. Beat in eggs. Dissolve soda in milk and add. Add vanilla. Fold in flour and salt slowly. Chill dough for half an hour. Roll to around 1/8 to 1/16-inch thick. Dip cookie cutter in flour before each cutting. Bake for 8 minutes. Cool and frost.
  • Blend butter and sugar. Add the vanilla and then the milk a little at a time until you have a stiff mixture to be used for decorating. To use as frosting, add a few more drops of milk and spread over cookie with a knife.
