Here's a win in the dessert column with a 25-minute prep time: an easy peanut butter cookie pie made with chocolate pudding and a layer of fudge.

1 egg
1 cup crunchy peanut butter
1 cup sugar
5 oz. BAKER'S Semi-Sweet Chocolate, divided
1-1/2 cups JET-PUFFED Miniature Marshmallows
1-1/4 cups milk, divided
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
2 cups thawed COOL WHIP Whipped Topping, divided
1 Tbsp. finely chopped PLANTERS COCKTAIL Peanuts, divided

Steps:

  • Heat oven to 350°F.
  • Spray 9-inch pie plate with cooking spray. Mix first 3 ingredients until blended; press onto bottom and up side of pie plate. Use back of fork to make cross-hatch design around edge. Bake 14 to 15 min. or until golden brown. Cool.
  • Microwave 4 oz. chocolate, marshmallows and 1/4 cup milk in microwaveable bowl on HIGH 1 min. or until chocolate and marshmallows are melted and mixture is well blended when stirred. Pour into crust. Refrigerate 10 min.
  • Beat pudding mix and remaining milk with whisk 2 min. Stir in 1 cup COOL WHIP; spoon into crust. Cover with remaining COOL WHIP. Refrigerate 2 hours or until firm.
  • Meanwhile, grate enough of the remaining chocolate to measure 1 tsp.; reserve for garnish. Draw 8 (2-inch-wide) stars on paper; place under sheet of waxed paper on baking sheet. Melt remaining chocolate as directed on package; spoon into small resealable plastic bag. Press out excess air from bag; seal bag. Cut 1/8-inch-piece from one bottom corner of bag. Use to pipe chocolate around outlines, then onto centers of stars; sprinkle with 2 tsp. nuts. Refrigerate until ready to use.
  • Garnish pie with chocolate stars, grated chocolate and remaining nuts just before serving.

2 cups white sugar
6 fluid ounces evaporated milk
½ cup brown sugar
¼ cup butter
3 ½ ounces marshmallow creme
8 ounces cookie butter

Steps:

  • Grease an 8-inch square baking dish.
  • Mix white sugar, evaporated milk, brown sugar, and butter in a saucepan; bring to a boil. Reduce heat to a simmer and cook, stirring continually, until mixture is smooth and sugar is dissolved, about 8 minutes. Remove saucepan from heat and stir marshmallow creme into sugar mixture until smooth.
  • Stir cookie butter into sugar-marshmallow mixture until evenly combined; pour into the prepared baking dish. Let fudge stand until cooled and solid, at least 30 minutes.

Cooking spray
1 pound white chocolate, chopped
1 1/4 cups creamy cookie butter (speculoos)
1/2 teaspoon salt
2 tablespoons molasses
White nonpareils, for topping

Steps:

  • Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly coat the foil with cooking spray. Bring 1 inch of water to a simmer in a medium saucepan over medium heat.
  • Combine the white chocolate, cookie butter and salt in a large heatproof bowl and set it over the saucepan (do not let the bowl touch the water). Cook, stirring frequently, until the mixture is completely melted and smooth. (Reduce the heat if steam sputters around the bowl - you want to prevent any water from getting in the chocolate and causing it to seize.)
  • Remove the bowl from the pan and stir in the molasses. Wipe the water from the bottom of the bowl, then pour the mixture into the prepared baking dish. Spread evenly with a rubber spatula and top with white nonpareils. Let set at room temperature, 1 to 2 hours. Cover with plastic wrap and refrigerate until chilled but not hard, about 30 minutes.
  • Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife. (If the fudge is too hard or starts to crack when cut, let soften slightly at room temperature, 10 to 20 minutes.)

1/2 cup(s) butter, softened
3/4 cup(s) peanut butter
3/4 - packed brown sugar
1/4 cup(s) granulated sugar
1 - egg
1 tablespoon(s) vanilla
1 tablespoon(s) milk
1/4 teaspoon(s) salt
1 teaspoon(s) baking soda
1 1/2 cup(s) flour
3 cup(s) chocolate chips (semi-sweet or milk)
1 can(s) (14 ounces) sweetened condensed milk

Steps:

  • Preheat oven to 350F. Line a 9x13" pan with foil and spray with cooking spray. Cream butter, peanut butter, and both sugars in the bowl of an electric mixer fitted with the paddle attachment, about 2-3 minutes. Add egg, vanilla, milk, baking soda, and salt and mix until combined. Slowly add flour and mix until dough just comes together.
  • Press the cookie dough into the prepared pan. Bake for 18-24 minutes, until it gets golden on top. Let cool completely before making fudge for the top.
  • Melt chocolate chips with sweetened condensed milk slowly over low heat, stirring often in a saucepan. Once it's smooth, remove from heat and immediately pour and spread over cooled bars. Sprinkle with sprinkles or chopped nuts, if desired. Cool completely before cutting into bars. Store in an airtight container for up to 3 days. You can make the fudge portion in the microwave using a microwave safe bowl and stirring every minute until melted and smooth. It'll take awhile, be careful the bowl is hot!
